  • Fill a large saucepan with 4 litres water and 1½ tbsp salt. Bring to the boil, add pasta and cook until al dente (5-7 minutes), then drain.
  • Meanwhile, cook pipis in a large frying pan over medium heat with the lid on, shaking pan frequently and transferring pipis to a bowl just as they open (4-6 minutes). Pour juices on top.
  • Wipe out frying pan and return to medium-high heat. Add oil, garlic and chilli and stir until garlic is golden (1 minute). Add tomato, stir for 1 minute, then add wine and cook until reduced a little and sauce has thickened (2 minutes). Add pipis and 125ml juices, bring to a simmer, then remove from heat. Add spaghettini and toss it through the sauce, then let it sit for a minute or two to soak it up. Serve drizzled with oil and topped with parsley.

  • In a large pot with a lid, lightly fry 3 minced garlic cloves in 2 tbsp of extra virgin olive oil for 30 seconds, making sure it doesn't brown. Add 1kg of well-washed pipis, 2 chopped ripe tomatoes, a 1/2 cup of chopped flat-leaf parsley and 2-3 chopped red chillies (optional). Turn the heat right up, season with a little salt and pepper and give the pipis a good stir for a few seconds.
  • Add 1 cup of dry white wine and place the lid on the pot. They should all open in 3-4 min. Check that they have; sometimes it's just a matter of giving the pot a good shake or stirring the pipis so they have room to open.

  • Meanwhile, heat the oil in a wide shallow saucepan or deep frying pan and add the onion and garlic. Cook over medium heat for 5 minutes, or until the onion is soft, then add the mushrooms and cook for a further 5 minutes, stirring now and then until they are cooked through. Pour the wine into the pan and allow to bubble for a couple of minutes. Add the tomatoes and any tomato juices, tomato paste, sugar and the cooking juices from the pipis. Bring to the boil, reduce the heat to medium and cook at a steady simmer, without a lid, for 20 minutes to allow the excess liquid to evaporate and the sauce to thicken. Place a large saucepan of salted water on to boil for the pasta.
  • Add the pipis to the sauce and gently heat through. Cook the pasta for 4–5 minutes, or until al dente, drain and return to the pan. Stir the parsley into the tomato sauce, season and pour over the pasta. Toss together and serve in large warm bowls.
