This is a recipe I created Easter 2013 which was the highlight of our camping weekend. Absolutely delicious with a cold beer or light Savignon Blanc. I think the non negotiable ingredient is the red onion. I ran out of red onions and used 1/2 a brown onion and the result was not quite so impressive. Quantities are approximate, but the aim is to have a slightly thick, pourable batter consistency.

Number Of Ingredients 9

3/4 cup pipis, minced
1 egg
1 red onion, finely chopped
2 tablespoons plain flour, approximately
1/2 teaspoon baking powder
salt and pepper
1 tablespoon milk, as required to reach desired consistency
lime, wedges for squeezing over fritters when cooked
olive oil or similar good quality oil

Steps:

  • Put first 6 ingredients into a bowl.
  • Stir to mix well.
  • Add the milk to achieve desired consistency.
  • Add heaped tablespoon lots into frying pan and fry until golden brown. Flip and cook until golden on both sides.
  • Serve with a squeeze of lime juice.
  • Finger licked good.
  • NB: You could use any similar shellfish but the beach we camped at only had pipis.

Found this recipe online and I'm posting so I don't lose it before I get a chance to try it out. There are variations for ham, banana, and apple fritters here. Serving size is an estimate as none was given with the original recipe.

Number Of Ingredients 9

1 cup flour
1 teaspoon baking powder
1 tablespoon melted margarine
1 egg
1/2 cup milk (depending on which type of fritter you choose, see below) or 1/2 cup fruit juice (depending on which type of fritter you choose, see below)
1 dash salt
1 cup minced ham
6 bananas
2 cups diced apples

Steps:

  • For basic fritter batter: Combine flour, baking powder and salt; stir to blend. Add egg and melted margarine; stir until well blended. Add milk (or fruit juice), mix well. Let stand 30 minutes.
  • Ham Fritters: Add minced ham to basic batter. Drop by spoonfuls into hot oil and deep fry.
  • Banana Fritters: Peel and quarter bananas. Dip bananas in batter and saute in margarine until golden brown on all sides.
  • Apple Fritters: Stir apples into basic batter. Drop by spoonfuls into hot oil and deep fry.
  • *Note* You can make peach or apricot fritters by using canned fruit. Use the fruit syrup for the liquid in the basic batter. Dice fruit and mix with batter. Deep fry as for the apple fritters.

  • Immerse pipi in fresh water and leave overnight. Drain off water and make sure sand is rinsed off. Place pipi in a saucepan with ¼ cup water. Cover and place over a medium-high heat for 3 to 4 minutes, shaking the pan at times, until pipi have opened.
  • Remove meat from shells and roughly chop. Place flour in a bowl and add chopped onion, lemon rind, chopped parsley and season with salt and pepper. Mix in the sweet chili sauce, soda water and pipi meat.
  • Heat butter and oil together in a large frying pan and cook heaped teaspoonfuls of batter over a medium heat until golden on both sides.
