How to Make and Freeze Pizza Dough image

There's something wonderfully easy about making pizza at home, especially when all you have to do is roll out some pizza dough, throw some toppings on

4 1/2 tsp. quick-rise yeast
2 c. warm water (115˚)
2 tsp. sugar
5 c. bread flour
1/4 c. olive oil
1 tsp. salt

Steps:

  • In the bowl of a stand mixer, combine yeast, warm water, and sugar, and let sit for 10 minutes. The liquid should be foamy and bubbly, indicating that the yeast is alive.
  • Add the bread flour, olive oil, and salt. Stir using the dough hook or a wooden spoon, until roughly combined. Fit the bowl and the dough hook onto the stand mixer and knead on medium-low speed for 10 minutes, until smooth. Cover the bowl with plastic wrap and let rise for about 30 minutes, until the dough has doubled in size.
  • Remove the dough to a lightly floured surface and divide into four even pieces. Shape each piece of dough into a ball.
  • The dough is now ready to be rolled out and baked, or ready to be frozen.
  • To freeze the pizza dough: place the pizza dough balls into resealable plastic bags. Make sure that if you put multiple balls of dough in one bag, you use parchment paper or wax paper to keep them separated.
  • To thaw: place the pizza dough in the refrigerator the morning before you want to make dinner, then roll and bake as usual.
  • To bake: preheat the oven to 500˚. Roll the thawed (or freshly made) dough and bake each pizza about 10 to 15 minutes.

1 cup small yellow and red cherry tomatoes, halved
1 tablespoon olive oil, plus additional for brushing
1/2 teaspoon kosher salt
Pinch freshly ground black pepper
1/2 recipe Foolproof Pizza Dough, recipe follows
3 tablespoons basil pesto
2 ounces goat cheese
1 ounce fresh mozzarella, torn
3 ounces shredded mozzarella
1 ounce shredded provolone
1 teaspoon Garlic Butter, recipe follows
8 basil leaves, chiffonade
Drizzle balsamic glaze
1 teaspoon instant or active dry yeast
4 cups all-purpose flour
1 teaspoon kosher salt
1/3 cup olive oil, plus additional for drizzling
3 1/2 sticks salted butter
16 cloves garlic, finely pressed
Coarse sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the halved cherry tomatoes on a sheet pan, drizzle over the olive oil, sprinkle over the salt and pepper and toss. Roast about 15 minutes.
  • Meanwhile, brush a sheet pan with olive oil. Roll out the pizza ball and put it on the oiled sheet pan.
  • Spoon on the pesto and spread out. Crumble over half of the goat cheese and scatter the fresh mozzarella.
  • Mix together the shredded mozzarella and provolone in a bowl, then sprinkle over the pizza.
  • Bake until cooked through, 11 to 12 minutes.
  • Remove the pizza and brush the crust with garlic butter.
  • Pile the roasted tomatoes on the pizza.
  • Crumble over the remaining goat cheese, sprinkle over the basil and drizzle over the balsamic glaze.
  • Sprinkle the yeast over 1 1/2 cups of warm (not lukewarm) water. Let stand for a few minutes.
  • Combine the flour and salt in a stand mixer fitted with the paddle attachment. Turn the mixer on low speed and drizzle in the oil until combined with the flour. Next, pour in the yeast mixture and mix until just combined and the dough comes together in a sticky mass.
  • Coat a separate mixing bowl with a light drizzle of olive oil and form the dough into a ball. Toss to coat the dough in the oil, then cover the bowl tightly with plastic wrap and set it aside for at least 1 or up to 2 hours at room temperature, or store in the fridge until you need it, up to 4 days ahead. Bring the refrigerated dough to room temperature before using.
  • Melt the butter in a skillet over medium-low heat, then add the garlic and salt. Cook for a couple of minutes to release the flavor, but don't let the garlic brown.

TRIPLE PEPPERONI PIZZA

4 tablespoons Pizza Sauce, recipe follows
1 ounce fresh mozzarella, torn
3 ounces mozzarella, shredded
1 ounce provolone, shredded
10 to 15 pepperoni slices
1 teaspoon Garlic Butter, recipe follows
1 teaspoon instant or active dry yeast
4 cups all-purpose flour
1 teaspoon kosher salt
1/3 cup olive oil, plus additional for drizzling
One 15-ounce can crushed Italian plum tomatoes in thick puree
One 15-ounce can plum tomato strips
1/2 cup basil chiffonade
1/2 cup extra-virgin olive oil
1/2 tablespoon Calabrian chile paste
1 teaspoon flaky sea salt, such as Maldon
1 teaspoon sugar
4 cloves garlic, peeled and roughly chopped
3 1/2 sticks salted butter
16 cloves garlic, finely pressed
Coarse sea salt

Steps:

  • Preheat the oven to 500 degrees F. Brush a sheet pan with olive oil.
  • Roll out the dough ball, then transfer to the sheet pan. Spoon on the pizza sauce and spread it around, then top with the fresh mozzarella.
  • Mix together the shredded mozzarella and provolone in a bowl, then sprinkle over the pizza.
  • Place the pepperoni all over the top. Bake until done, 10 to 12 minutes. Brush the crust with garlic butter, then serve.

  • Sprinkle the yeast over the warm water in the bowl of a stand mixer. Whisk to combine and then let sit until bubbles have formed on the top, about 10 minutes. Increase the speed to medium-high and knead until the dough is shiny and elastic, about 10 minutes.

3 1/2 to 4 cups bread flour, plus more for rolling
1 teaspoon sugar
1 envelope instant dry yeast
2 teaspoons kosher salt
1 1/2 cups water, 110 degrees F
2 tablespoons olive oil, plus 2 teaspoons

Steps:

  • Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
  • Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

2 teaspoons instant or active dry yeast
8 cups all-purpose flour
2 teaspoons kosher salt
2/3 cup olive oil, plus more for coating the bowl
1 tablespoon olive oil
2 cloves garlic, minced
1/2 onion, diced
8 ounces white button mushrooms, sliced
8 ounces brown button mushrooms, sliced
1 tablespoon chopped fresh thyme
1/4 cup white wine
Salt and freshly ground black pepper

8 ounces fresh mozzarella, thinly sliced
4 ounces goat cheese, crumbled
8 ounces Italian sausage
Olive oil, for browning sausage
1 jar marinara sauce

1 egg, beaten

Steps:

  • For the dough: Sprinkle the yeast over 3 cups warm (not lukewarm) water. Let stand for a few minutes.
  • In a mixer, combine the flour and salt. With the mixer running on low speed (with a paddle attachment), drizzle in the olive oil until combined with the flour. Next, pour in the yeast/water mixture and mix until just combined and the dough comes together. (The dough will be sticky.) Form the dough into a ball.
  • Coat a separate mixing bowl with a light drizzle of olive oil and toss the dough in the olive oil to coat. Cover the bowl tightly with plastic wrap and set it aside for 1 hour to rise. Then put it in the fridge to chill for 2 hours or longer. (The dough is much easier to work with when very cold.)
  • For the mushroom version: Add the olive oil to a pan with the heat on medium and saute the garlic and onions for about a minute. Add the mushrooms and thyme and saute for 3 minutes. Add the white wine and reduce for a couple of minutes until most of the liquid is gone. Season with salt and pepper. Let cool to room temperature.
  • For the meat version: Crumble the Italian sausage into a skillet with some olive oil and brown until cooked through, 5 minutes. Let cool.
  • When you are ready to make the pizza pockets, take half the dough and roll it out into a large rectangle. Cut into 18 rectangles with a rectangular cutter. Put 9 of the rectangles onto a baking sheet and top them with the fillings for the meat version: some marinara sauce, mozzarella, sausage, pepperoni and Canadian bacon. Lay the other 9 rectangles on top and crimp the edges with a fork. Brush with the beaten egg. Put into the freezer to flash-freeze for 30 minutes.
  • Repeat with the other half of the dough and the fillings for the mushroom version: some mozzarella, goat cheese and the sauteed mushrooms.
  • When the pockets have been flash-frozen, transfer to ziptop bags and store in the freezer.
  • When ready to cook, place on a baking sheet and bake at 450 degrees F for 10 to 12 minutes.

PIZZA SAUCE

3 cloves garlic, minced
1 medium onion, chopped finely
1/2 cup chicken broth
Three 15-ounce cans crushed tomatoes

8 to 10 fresh basil leaves, chopped

Steps:

  • Add a tablespoon or so of olive oil into a hot pan over medium-high heat. Throw in the garlic and chopped onions and give them a stir. Cook until the onions are soft, 4 to 5 minutes. Add the chicken broth, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Add the dried oregano and basil. Reduce the heat to low and simmer for 30 minutes.
