Pineapple Fried Rice image

This Thai-inspired pineapple fried rice is the perfect balance of sweet and salty flavors.

8 ounces shrimp ((225g, peeled, deveined, rinsed, and pat dry))
1 cup onion ((150g, diced))
1/2 cup carrot ((75g, diced))
4 ounces ham ((or Chinese sausage; 115g, finely diced))
6 cups cooked rice ((about 900g))
2/3 cup peas ((100g))
1 cup pineapple ((diced into 1/2-inch pieces))
1 scallion ((chopped))
2 eggs ((beaten))
1/4 teaspoon salt ((more to taste))
1/2 teaspoon Shaoxing wine ((plus 1 tablespoon, divided))
4 tablespoons vegetable oil ((divided))
1 tablespoon fish sauce
1 tablespoon light soy sauce ((or Thai thin soy sauce))
1/2 teaspoon ground white pepper
1 1/2 teaspoons sesame oil

Steps:

  • First, prepare the shrimp, onion, carrot, ham/Chinese sausage, rice, peas, pineapple, and scallions. If using fresh pineapple, remember to trim away the pineapple core. If using canned pineapple, rinse away any syrup and pat dry with a clean kitchen towel.
  • Beat 2 eggs with ¼ teaspoon salt and ½ teaspoon Shaoxing wine. Heat your wok over medium heat until lightly smoking. Add 1 tablespoon oil, and scramble the eggs for 1 minute-until just cooked. Turn off the heat, break the egg into small pieces, transfer to a dish, and set aside.
  • Heat another 1 tablespoon of oil over medium heat. Cook the shrimp until they turn pink, about 1 minute. Remove from the wok and set aside.
  • Heat the last 2 tablespoons of oil over medium heat. Cook the onion until translucent. Add the diced carrots and ham, and cook until the carrots are no longer crunchy. Add the rice and 1 tablespoon Shaoxing wine. The steam from the wine will loosen the rice chunks!
  • Stir-fry everything together well, and add in the peas, 1 tablespoon fish sauce, 1 tablespoon light soy sauce, ½ teaspoon ground white pepper, 1 teaspoon sesame oil, the scrambled egg, and the cooked shrimp. Stir-fry everything together for a few minutes.
  • Finally, add the pineapple and scallions. Mix everything again for a minute or two. To crisp and warm the rice through, you can use your wok spatula to spread the rice in a single layer around the surface area of the wok, making use of all the heat and letting any excess liquid evaporate.
  • Salt to taste, and serve immediately!

1 lb smoked sausage, sliced
2 Tbsp of vegetable oil
1 large onion, chopped in 3/4 inch chuncks
1 green pepper, cut in 3/4 inch chuncks
1 cup of celery, sliced
1 (14.5 oz.) can of diced tomatoes
1 c of beef broth
1 (14.5 oz.) can of pineapple chuncks
1/4 tsp of garlic powder
pepper to taste
1 Tbsp of brown sugar
2 Tbsp of cornstarch
cooked rice

Steps:

  • 1. Heat oil in large skillet.
  • 2. Combine sausage, onion, green pepper and celery in the large skillet.
  • 3. Cook until veggies are tender crisp.
  • 4. Add tomatoes, broth and seasonings.
  • 5. Cover and simmer for 5 minutes.
  • 6. Blend cornstarch with pineapple juice.
  • 7. Pour into meat and veggie mixture.
  • 8. Cook, stirring until thickened. About 2 minutes.
  • 9. Serve over rice.

2 tablespoons vegetable oil
½ cup diced sweet onion
1 tablespoon grated ginger root
1 clove garlic, minced
1 ½ cups fresh pineapple chunks
½ diced red bell pepper
⅓ cup thawed frozen peas
2 cups cold, cooked white rice
2 tablespoons low-sodium soy sauce, or to taste
1 teaspoon sesame oil
2 tablespoons sliced green onion
1 teaspoon toasted sesame seeds

Steps:

  • Heat a large skillet over medium heat and add oil. Add diced onion and cook for about 1 minute. Add ginger and garlic, and cook, stirring constantly, for 1 minute.
  • Increase heat to medium-high; add pineapple, red bell pepper, and peas. Cook, stirring constantly, for 3 to 4 minutes. Stir in rice and soy sauce, and cook until sauce is well incorporated, 1 to 2 minutes. Stir in sesame oil and remove from heat.
  • Garnish with sliced green onion and sesame seeds before serving.

Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.

I would start the rice about 20 minutes before lunch and cook the rest in the frying pan while everyone else was uncovering and setting out their dishes. My copy of the recipe is getting so tattered I felt I better archive it. I would sorely miss it if lost.

4 cups water
12 ounces country-style smoked link sausage
½ cup water
1 large onion, sliced

  • Stir tomatoes, beef broth, pineapple, garlic powder, black pepper, and brown sugar into sausage mixture. Cook and stir until brown sugar has dissolved and mixture comes to a simmer. 1½ tbsp sunflower or vegetable oil
2 eggs , beaten
2 garlic cloves , crushed
small bunch of spring onions , chopped
1⁄2 tsp Chinese five-spice powder
400g cooked long-grain rice
85g frozen peas
2 tsp sesame oil
2 tbsp low-salt soy sauce
400g fresh pineapple , roughly chopped into chunks (about 1⁄2 medium pineapple)

Steps:

  • 1 Heat 1 tbsp oil in a wok. Add the eggs, swirling them up the sides, to make a thin omelette. Once cooked through, roll the omelette onto a chopping board and cut into ribbons.
