3 cups chopped fresh or frozen rhubarb, thawed
2 cans (8 ounces each) crushed pineapple, drained
1-1/2 cups sugar
3 tablespoons quick-cooking tapioca
1 tablespoon lemon juice
1/2 teaspoon grated lemon zest
2 sheets refrigerated pie crust

Steps:

  • In a large bowl, combine the rhubarb, pineapple, sugar, tapioca, lemon juice and lemon zest. Let stand for 15 minutes. Line a 9-in. pie plate with bottom crust. Add the filling., Roll out remaining crust to fit top of pie; cut slits or make decorative cutouts in crust. Place over filling; trim, seal and flute edges., Bake at 350° for 45-50 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack. Refrigerate leftovers.

2 cups sliced fresh or frozen rhubarb, thawed and drained
1 can (20 ounces) unsweetened pineapple tidbits, drained
1/2 cup sugar, divided
2 tablespoons plus 1/3 cup all-purpose flour, divided
1/3 cup quick-cooking oats
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup cold butter
Whipped cream, optional

Steps:

  • In a large bowl, combine the rhubarb, pineapple, 1/4 cup sugar and 2 tablespoons flour. Transfer to a 9-in. deep-dish pie plate coated with cooking spray., In a small bowl, combine the oats, cinnamon, salt and remaining sugar and flour. Cut in butter until crumbly. Sprinkle over fruit. Bake, uncovered, at 350° for 30-35 minutes or until filling is bubbly and topping is golden brown. Cool for 5 minutes; serve with whipped cream if desired.

1/4 cup all-purpose flour
3 1/4 cups thinly sliced rhubarb
14 ounces crushed drained pineapple
pastry for double-crust pie

Steps:

  • In large bowl measure 1st amount of sugar and flour, stir.
  • Add rhubarb and pineapple, stir.
  • Pour fruit mixture into unbaked pie shell.
  • Moisten pastry rim and cover with top crust.
  • Cut slits in top crust to let steam escape.
  • Sprinkle with remaining sugar.
  • Bake in 350° oven on bottom rack for 50- 60 minutes until browned and rhubarb is cooked.

1 pound fresh rhubarb, cut into 1 inch pieces
2 (8 ounce) cans pineapple chunks, drained
1 ⅛ cups white sugar
2 tablespoons tapioca

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). On a lightly floured surface, roll out one crust, and place in a 9 inch pie plate. Roll out top crust, and set aside.
  • In a large bowl, mix together rhubarb, pineapple chunks, sugar, and tapioca. Place in pie crust. Cover with top crust; seal and crimp edge. Brush with milk, and cut a few slits in the top to allow steam to vent.
  • Bake in preheated oven for 45 minutes, or until crust is golden and liquid bubbles in the center.

1 unbaked pie shell
4 cups rhubarb, chopped
2 tablespoons cornstarch
1/2 cup sugar
1/2 cup Splenda granular
2 (8 ounce) cans crushed pineapple, drained
1/2 cup brown sugar
1/4 cup Splenda granular
1/2 cup flour
1/4 cup old fashioned oats
3 tablespoons butter, cold

Steps:

  • Preheat oven to 350.
  • Combine rhubarb and cornstarch, set aside.
  • Roll out pie crust into 8 inch pie plate.
  • Pour rhubarb and cornstarch mixture into prepared crust.
  • Combine sugar and Splenda; sprinkle over rhubarb mixture.
  • Top evenly with drained pineapple.
  • Prepare Topping: combine sugars, flour and oats, then cut in butter using a pastry cutter until mixture resembles coarse crumbs.
  • Sprinkle topping over pineapple.
  • Cover edges of pie with foil and bake at 350 for 25 minutes.
  • Remove foil and continue baking for an additional 25-30 minutes until topping is golden.
  • Cool completely on wire rack. Store leftovers in fridge.

1-1/2 teaspoons salt
1 cup shortening
1 large egg, room temperature
5 tablespoons cold water
1 teaspoon white vinegar
FILLING:
3 cups sliced fresh or frozen rhubarb (1/2-inch pieces)
2 cups sliced peeled tart apples
1 can (8 ounces) crushed pineapple, drained
1/4 cup honey
1 tablespoon lemon juice
1 cup sugar
3 tablespoons all-purpose flour
1 tablespoon butter

Steps:

  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Combine the egg, water and vinegar; stir into flour mixture until a ball forms. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight., Preheat oven to 350°. For filling, in a large bowl, combine rhubarb, apples, pineapple, honey and lemon juice. Combine sugar and flour; add to rhubarb mixture. , On a lightly floured surface, roll 1 disk of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust even with rim. Add filling; dot with butter. Roll out remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. This rhubarb pie contains no distractions, like strawberries. The crust is made with shortening. (Butter is fine if you want a French tart, but it's not American pie unless it's made with shortening, the author Anne Dimock said.) The top is marked with 8 razor-thin vents.

2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons sugar
2/3 cup vegetable shortening, plus 2 tablespoons
6 tablespoons ice water
5 cups sliced rhubarb
1 1/4 cups sugar
5 tablespoons flour
1/4 teaspoon cinnamon
1 1/2 tablespoons butter

Steps:

  • Preheat the oven to 425 degrees. Make the crust: before measuring the flour, stir it to leaven with air and then measure out 2 cups. Combine the flour, salt and sugar in a large bowl and fluff with a fork. Cut the shortening into the flour with a fork or pastry blender. Stop as soon as the sheen of the butter disappears and the mixture is a bunch of coarse pieces. Sprinkle a tablespoon of water at a time over the dough, lifting and tossing it with the fork. When it begins to come together, gather the dough, press it into a ball and then pull it apart; if it crumbles in your hands, it needs more water. (It's better to err on the side of too wet than too dry.) Add a teaspoon or two more water, as needed.
  • Gather the dough into two slightly unequal balls, the larger one for the bottom crust and the smaller one for the top. Flatten the larger ball, reforming any frayed edges with the sides of your hand. Dust with flour and roll the dough, starting from the center and moving toward the edges. Take a knife or thin spatula and quickly work its edge between the crust and the counter top. Lift the dough to the side; dust the dough and counter top with flour. Roll again until the diameter is an inch or 2 larger than that of the pie pan. Lay the rolling pin a third of the way from one of the edges. Roll the crust onto the pin and then unroll the crust into a 9-inch pie pan and press it into place. Place in the freezer.
  • Make the filling: in a large bowl, blend the rhubarb, sugar, flour and cinnamon. Pour into the crust-lined pie pan. Dot with butter.
  • Roll out the top crust. Dab the rim of the bottom crust with water to create a glue. Then place the top crust over the rhubarb; trim, seal and cut several vents. Bake for 15 minutes; reduce the temperature to 350 degrees and bake 25 to 30 minutes more, or until a bit of pink juice bubbles from the vents in the crust.

2 cups of fresh or frozen rhubarb
1 20-ounce can pineapple chunks, drained, save liquid
3 tablespoons cornstarch
3/4 cup granulated sugar
1 recipe oil pastry

Steps:

  • Oil pastry Sift 2 cups flour, 3 teaspoons sugar, and 1 and one half teaspoons salt in a medium size bowl. Mix together,in a small bowl, 1 cup oil(I use vegetable) and 4 and one half tablespoons milk. Mix with a fork. Pour oil mixture over flour mixture until all mixture is moistened. Reserve one-third for the top of the pie. Press remaining dough against the bottom and sides of a 9 or 10 inch pie pan. Flute edges. Fill with fruit filling. For top "crust" crumle remaining dough over filling. Bake as directed in fruit recipe. Drain the liquid from the rhubarb and pineapple. Pour liquid in to a 2-cup measure. Fill to 1 cup, if it doesn't add more water. Put liquid into a 2-quart pot add the sugar and cornstarch. Use a whisk to mix together. Put on burner and cook slowly on medium till it thickens. Put chunks of pineapple and rhubarb in the thickened liquid and mix thoroughly. Pour this into the prepared pie pan line with dough. Top with rest of dough by crumbling it evenly over the top. Put a strip of aluminum around the edges to preventing the edges from darkening. Remove the last 15 minutes of baking. Bake for 1 hour at 425 degrees.

I love rhubarb, and this is one pie I enjoy making every Summer! Serve as is, or with whipped cream or vanilla ice cream. (Before making the pie, be sure to read the "Note" following the instructions.)

1 (15 oz.) pkg. refrigerated pie crusts
1-1/4 cups granulated sugar
1/3 cup all-purpose flour
3-1/4 cups thinly sliced rhubarb
1 can (15.25 oz.) crushed pineapple, drained well
1 tsp. all-purpose flour
1-1/2 tsp. granulated sugar

Steps:

  • 1. Remove both pie crusts from the package. Leave pie crusts in plastic wrap, and let sit on your kitchen counter for 15-20 minutes before using.
  • 2. Meanwhile, in a large bowl, combine the flour and the 1-1/4 cups granulated sugar.
  • 3. Add the rhubarb and crushed pineapple; stir until the rhubarb and pineapple is thoroughly mixed into the flour/sugar mixture. Set bowl aside.
  • 4. Remove one of the pie crusts from the plastic wrap. Unroll the pie crust, and place it on a sheet of wax paper. Sprinkle the teaspoon of flour over the crust. Using your hand, lightly spread the flour over the entire crust. Place the pie crust, floured side down, inside a 9-inch pie pan.
  • 5. Pour the rhubarb and pineapple mixture into the pie crust.
  • 6. Remove the other pie crust from the plastic wrap. Unroll, then place over the pie filling. (I rolled out the pie crust on to the sheet of wax paper. I then took a mini cookie cutter, a star shaped cookie cutter, then cut-out and removed some of the dough near the center of the pie crust.)
  • 7. Trim crust (if need be), seal and flute the edges.
  • 8. Cut slits in the top of the pastry crust.
  • 9. Sprinkle the top of crust with the 1-1/2 teaspoons of sugar.
  • 10. (Before I bake the pie in the oven, I place (and bake) the pie pan on a 14-inch pizza tin, then place a pie shield on top the pie. I keep the pie shield on the entire time the pie is baking. This helps to prevent the edges of the crust from becoming too brown, or perhaps burnt.)
  • 11. Bake the pie in a preheated 350º oven for about 55 minutes, or until the pie crust is brown on top, and the fruit juices begin to bubble out of the slits in the pie crust.
  • 12. Note: I wanted to let members of this site know... that I have also made this pie using 2 (8 ounce) cans of crushed pineapple (drained well), and in place of the 15.25 ounce can, plus I also stirred 4 level tablespoons of ground flaxseed into the flour/sugar mixture before adding the rhubarb and pineapple. The pie tasted great, and I think the flaxseed helped to thicken the filling within the pie. Also, after the pie is made and cooled, I don't refrigerate it or any of the leftovers. I leave the pie set at room temperature, and cover it with paper towels. It keeps well on the kitchen counter for up to 2 days.
