Orange Creamsicle® Fluff Salad image

This is a take on the classic Watergate salad, but tastes like an orange Creamsicle®!

1 (20 ounce) can crushed pineapple, undrained
1 (3.4 ounce) package instant vanilla pudding mix
½ teaspoon orange extract, or more to taste
2 drops red food coloring
1 (8 ounce) tub frozen whipped topping (such as Cool Whip®), thawed
1 cup miniature marshmallows (such as Kraft® Jet-Puffed)
½ cup chopped pecans, divided

Steps:

  • Stir pineapple, pudding mix, and orange extract together in a bowl. Add food coloring and stir. Fold in whipped topping and mini marshmallows. Reserve 2 to 3 tablespoons of chopped pecans for topping; stir in remaining pecans.
  • Top with reserved chopped pecans and chill for at least 1 hour in the refrigerator.

Blend of pineapple juice, orange sherbet and sparkling Moscato. Only 3 ingredients transforms the basic mimosas into a creamy, dreamy combination that will wow your guests at your next brunch. Blending the ingredients together ensures the perfect flavor combination in each sip and tastes just like a classic dreamy creamsicle. Even though the recipe states, at wine to blender -I was concerned I'd loose the fizz so added it after blending and stirred, worked well

3 cups sparkling wine (moscato)
2 cups pineapple juice
1 1/2 cups sherbet (Orange)

Steps:

  • Add ice cream, pineapple juice, and wine to blender.
  • Blend until smooth and serve in champagne flutes.
  • Top flutes with a slice of orange or pineapple.
