PINEAPPLE CAKE FILLING

I got this recipe from my cake decorating instructor. It's very simple, but absolutely delicious. We also like to spoon it over ice cream. This recipe will fill a 9", 10" or 9x13 cake.

PINEAPPLE FILLING FOR CAKES

Pineapple Filling for Cakes image

I got this recipe from my Great Aunt Julia. It tastes great and is so easy to make. The coconut is optional and since we don't like coconut, I leave it out. Be sure to sift the flour or corn starch, and stir after each addition so it doesn't get lumpy. I use a small hand strainer, hold it over the pot, shake a little at a time, and stir after each shake. It takes a little longer but works out better. I also use Splenda, actually the Walmart brand because it's cheaper, instead of the sugar, because my husband is diabetic.

Time 20m

Yield 3 layers

Number Of Ingredients 6

2 (20 ounce) cans crushed pineapple (In its own Juice)
1/2 cup sugar
2 egg yolks
2 tablespoons flour (your choice, I use corn starch) or 2 tablespoons cornstarch (your choice, I use corn starch)
1/2 cup butter
1 cup coconut (optional)

Steps:

  • Open cans of crushed pineapple, take the lids and press down hard to remove as much juice as possible.
  • Put pineapple in saucepan, add stick of butter, sugar, (I use a sugar alternative), egg yolks, and stir together until the butter melts.
  • Sift the cornstarch(or flour) over the saucepan - slowly.
  • Bring to a rolling boil over low heat, stirring continously, to prevent burning,.
  • Then add the coconut.
  • You can use a small can or as much as you think your family will like. Aunt Julia didn't specify how much coconut to use, she just said to add the coconut. Go figure, I don't think she ever measured anything.
  • It takes about 20 to 25 minutes depending on how long it takes to thicken, for instance electric stoves take longer than gas stoves.

Categories     Desserts     Fruit Dessert Recipes     Pineapple Dessert Recipes

Time 1h30m

Yield 10

Number Of Ingredients 14

1 cup white sugar
½ cup unsalted butter, softened
2 large eggs
2 teaspoons clear vanilla extract
1 ½ cups all-purpose flour
1 ¾ teaspoons baking powder
½ cup coconut milk
¾ cup crushed pineapple with juice
2 tablespoons cornstarch
3 ¾ cups confectioners' sugar
¾ cup shortening
1 teaspoon clear vanilla extract
⅓ cup coconut milk, or as needed
1 ½ cups flaked coconut, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
  • Cream butter and sugar together in a large bowl. Beat in eggs, one at a time; stir in vanilla extract.
  • Combine flour and baking powder in a separate bowl; add to the creamed mixture and mix well. Mix in the coconut milk until batter is smooth. Scrape into the prepared pan and smooth the top flat.
  • Bake in the preheated oven until the top springs back when lightly touched, 30 to 40 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a cooling rack. Let cool, about 30 minutes.
  • Meanwhile, combine crushed pineapple, juice, and cornstarch in a saucepan. Whisk until cornstarch is smooth. Heat over medium heat, stirring constantly, until filling has thickened and just barely starts to boil. Remove and set aside to cool.
  • Cream confectioners' sugar and shortening together in a large bowl until light and fluffy. Beat in vanilla extract. Gradually add coconut milk, beating until smooth; you may need to use more or less milk depending on the desired thickness of the icing.
  • Cut the cooled cake in half to form two 4 1/2x9-inch pieces. Spread pineapple filling on top of one half. Place the other half, top-side down, on top of the filling. Frost the sides and top with icing, then sprinkle coconut all over icing, pressing gently so it sticks.

PINEAPPLE FILLING FOR CAKES (LOW FAT)

Pineapple Filling for Cakes (Low Fat) image

I have used this many times to fill my cakes, it's a very simple recipe, and makes enough to fill two layers, if you want to fill three layers, I suggest to double the recipe or use a smaller amount in between the layers. It's really a nice change from your regular frosting and gives the cake so much more flavor. If you prefer a sweeter filling, just add in more sugar. You will love this filling!
