SOFT PINEAPPLE COOKIES
My family goes crazy over these soft, fruity cookies. They are easy and quick to make too!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
- In a large bowl, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, then stir in the vanilla and pineapple. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Drop by rounded spoonfuls onto the prepared cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- Preheat the oven to 325 degrees F (165 degrees C). Grease 2 cookie sheets.
- In a large bowl, using a hand-held electric beater, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, and then stir in the vanilla and pineapple. Combine the flour, baking powder, baking soda and salt in a medium bowl, then gradually stir into the creamed mixture. Drop rounded spoonfuls, 2 inches apart, onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
PINEAPPLE DROP COOKIES
Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Toldeda Shutt

- Gradually add sugar and beat well.
- Beat in egg and vanilla.
- Stir in pineapple, sifted dry ingredients and raisins.
- Drop by teaspoon onto greased cookie sheet.
- Bake at 375 degrees for 12 minutes or until brown.
MOTHER IN LAW COOKIES
This is a recipe I came up with because I dreamed up my mother in law asking for oatmeal cookies with no cinnamon and almond extract. I made the cookies and they taste great, even if it was a request I had imagined up lol

- 1. Preheat oven to 350.
- 2. Cream butter, sugar, eggs, almond extract together until creamy.
- 3. Whisk together flour and soda, stir into butter mixture
- 4. Stir in oats.
- 5. Drop by tablespoon onto cookie sheet.I use a small ice cream scopp because I am OCD and like them to all be exactly the same size and shape. :)
- 6. Bake for about 10-12 minutes. I like mine chewey, so I underbake slightly.
- 7. Let cool for a few minutes and then place on rack to cool. Let cookie sheet cool for 10-15 minutes between batches, or the cookies get flat and thin.
EMPANADAS DE PINA (PINEAPPLE PASTRY COOKIES)

- Preheat oven to 325 degrees F (165 degrees C). Place sugar in a bowl.
- Place flour in a large mixing bowl. Begin working butter into flour slowly until fully incorporated. Repeat process gradually with cream cheese, kneading dough until uniform and no longer crumbly. Form into 1 inch balls, then flatten with a rolling pin to a thickness of 1/8 inch. (This may also be done by rolling out the entire amount of dough and cutting rounds with a biscuit cutter.)
- Place 1 tablespoon preserves on each dough center. Fold over, and seal with fingers or press to seal with a fork. Place cookies on a parchment paper-lined cookie sheet.
- Bake in the preheated oven for approximately 12 to 15 minutes. Cookie will remain white and should not be browned, and it is normal for some filling to leak from the cookie. When cookies are cool enough to handle, roll in sugar until evenly coated. Transfer to a platter to cool completely.

- FOR FILLING -drain the pineable well and place in pot on stove. Add sugar and cornstarch stirring constantly. Filling should not be wet must be dry and sticky -remove from pot and let cool completely DOUGH -after dough has been prepared cut into crescents and fill with pineapple filling and role into crescents. -place on baking sheet lined with parchment paper and bake at 325 degrees for 10-15 minutes
