Steps:
- Line 2 baking sheets with foil, and set wire racks inside each. Spray racks with nonstick cooking spray.
- Cut the bacon strips in half crosswise. Tightly wrap a strip of bacon around each piece of pineapple and transfer to prepared racks seam-side down. Continue with remaining bacon and pineapple. Place in refrigerator for 20 minutes to chill.
- Preheat grill for cooking over indirect heat or an oven to 450 degrees F.
- Whisk together the honey, mustard, hot sauce and liquid smoke in a medium bowl. Set aside.
- Put the baking sheets on the grill over indirect heat or in the oven (in batches if necessary) and cook until bacon starts to get crispy, carefully flipping bites once midway through cooking, 30 minutes per batch. Brush each bite with the honey mustard and let cook until bacon is crispy and glaze has caramelized, an additional 10 minutes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Wrap each chunk of pineapple with a piece of bacon and secure with toothpicks. Place in a shallow baking dish. In a small bowl, stir together the brown sugar, mayonnaise and chili sauce; pour over the bacon wrapped pineapple.
- Bake uncovered for 25 minutes in the preheated oven, until bacon is crispy on the edges and the sauce is bubbly. Serve warm.

BACON WRAPPED STEAK SKEWERS WITH JALAPENO & PINEAPPLE
These grilled skewers are easy to made and delicious. Serve with rice, sweet potatoes, or grilled carrots (as pictured) for a complete meal. I use deer steak in this recipe, but of course you can use beef or even chicken. Amounts are approximate because how many jalapenos, pineapples, and bacon you need depends on how many chunks of meat you end up with after cutting.

Steps:
- If using wooden skewers, soak in water for 30-60 minutes. This will help prevent the skewers from burning and splintering.
- Preheat your grill to medium heat or 350°F Once pre-heated, clean and oil the grill.
- While the grill is heating, prepare your skewers. Place half a jalapeno, a chunk of meat, and a pineapple chunk and wrap in a half-slice of bacon. This is the trickiest part and I find it easiest to lay the items on top of the bacon and then wrap. Poke through the skewer and repeat. Load 4 or 5 wrapped pieces on each skewer.
- Place on grilled for 20 minutes or until cooked to an internal temperature of 145°F Depending on your grill, you may wish to rotate and/or flip the skewers half-way through cooking for a move even cook.

PINEAPPLE CHUTNEY

- In saucepan over medium heat, saute onions, ginger, jalapenos, and ground cumin for 6 minutes. Then add rum. Cook until almost all of the liquid has evaporated then add pineapple, lime juice and sugar. Bring to a simmer and turn off the heat. Add fresh cilantro, salt and freshly ground pepper to taste.

- In a medium saucepan, combine pineapple, onion, pineapple juice, raisins, brown sugar, vinegar, and cumin. Set pan over medium-high heat and bring to a simmer. Simmer 15 minutes, until mixture thickens and reduces. Remove from heat and stir in cilantro.
- Meanwhile, heat oil in a large skillet over medium heat. Add ham slices and cook 2 minutes per side, until golden brown. Serve ham slices with pineapple chutney spooned over top.

- Put the shallots and pineapple and ginger in the pan and cook it for 4 mins at medium Temp.
- Once it has cooked for the 4 Mins pour in the white wine to deglaze it (continuously stirring).
- Then cook it until all the white wine is absorbed on med temp.
- Once that's done turn off the heat and put the sugar, salt, and pepper in it.
- Then stir it around to get all the stuff coated evenly.

Steps:
- Preheat oven to 375 degrees.
- Core/Slice pineapple into bite sized chunks.
- Cut bacon into thirds.
- Line the bottom of a broiler pan with foil (very important!).
- Spray the broiler rack with non-stick spray.
- Wrap bacon around pineapple and place the bites on the rack/broiler pan.
- Bake around 20 minutes and check.
- Continue baking, checking every 5 minutes, until the bacon is cripsy.
- Let cool slightly and remove to a serving dish.
- If you don't have a rack/broiler pan, just use a regular baking dish lined in foil. You may have to drain the grease 1/2 way through cooking.

- Set each bacon wrapped pineapple piece onto a parchment lined baking sheet. Make sure the pineapple chunk is on top of the ends of the bacon so the bacon doesn't come undone while it bakes.
