- Preheat oven to 350˚F. In a medium size bowl, combine sugar, flour, and reserved pineapple juice. Add pineapple chunks and toss well to combine. Spoon pineapple mixture into 8x8-inch casserole dish and top with shredded cheese.
- Combine crushed Ritz crackers and melted butter. Spread Ritz cracker topping evenly on top of pineapple mixture.
- Bake at 350˚F for 30 minutes, or until bubbly.

- MAKE SPREAD:.
- Beat cream cheese and sour cream on medium speed until smooth, 2-3 minutes.
- Squeeze and discard juice from pineapple.
- Mix pineapple and next 7 ingredients in cheese mixture on low speed until blended.
- SHAPE SPREAD:.
- Turn cheese mixture onto serving platter; shape into oval, making sure to leave room for pineapple top.
- Cover; refrigerate overnight.

- 1. preheat oven to 375°. Grease and flour a 2 quart rectangle or other baking dish. Set aside. In a medium bowl, mix flour, cornmeal, sugar, baking powder, and salt. Set aside.
- 2. In a large mixing bowl beat butter with mixer on medium speed for 30 seconds. Add eggs, one at a time. Beat well after each addition. Beat in flour mixture on low speed just until mixed. Stir in corn, pineapple, and cheese. Spoon batter into prepared dish.
- 3. Bake about 35 minutes or until toothpick inserted near center comes out clean. Cut into squares. Serve warm. Makes 12 servings.
