This came via the internet. I made it exactly like it stated and the flavor was outstanding, but the meat just fell apart, plus not being enough. So I tweaked it a little....

2 sweet potatoes, peeled and shredded (one med.,one large)
1 1/2 lbs flank steaks, well trimmed, cut into chunks
1 small onion, finely chopped (I used red)
1 (8 ounce) can crushed pineapple in juice
1/2 cup reduced-sodium chicken broth
1 1/4 teaspoons ground ginger (fresh is too strong)
1/2 cup barbecue sauce, sodium reduced
1/4 cup filtered water
1/4 tablespoon honey
2 1/2 teaspoons Dijon mustard (must be Dijon)
salt & pepper

Steps:

  • Place shredded potato over bottom of cooker.
  • Arrange meat on top.
  • Combine rest of ingredients and pour over meat.
  • Cover and cook on high 6-7 hours.

1 beef flank steak (1-1/2 pounds)
1 tablespoon canola oil
1 large onion, sliced
1/3 cup water
1 can (4 ounces) chopped green chiles
2 tablespoons vinegar
1-1/4 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a skillet, brown steak in oil; transfer to a 5-qt. slow cooker. In the same skillet, saute onion for 1 minute. Gradually add water, stirring to loosen browned bits from pan. Add remaining ingredients; bring to a boil. Pour over the flank steak. Cover and cook on low until the meat is tender, 4-5 hours. Slice the meat; serve with onion and pan juices.

1 1/2 lbs boneless beef chuck steaks, 1 1/2-inch thick
1 garlic clove, minced
1/4 cup wine vinegar
1 tablespoon brown sugar
1 teaspoon paprika
2 tablespoons Worcestershire sauce
1/2 cup ketchup
1 teaspoon salt
1 teaspoon prepared mustard
1/4 teaspoon black pepper

Steps:

  • Cut the beef on a diagonal, across the grain into slices 1" wide and place in the crock pot.
  • In a small bowl, combine the remaining ingredients.
  • Pour over the meat, and mix.
  • Cover and cook on Low for 3 to 5 hours.

salt and ground black pepper to taste
1 large carrot, chopped
1 large onion, chopped
¼ teaspoon ground dried thyme
1 bay leaf
½ cup water

Steps:

  • Season the flank steak with salt and pepper and place into a slow cooker. Add the carrot and onion; season with thyme and bay. Pour in the water.
  • Cook on High for 4 hours; turn the steak over and press down into the liquid. Continue cooking until a fork easily passes through the meat, about 4 hours more.

  • Combine all the marinade ingredients in a small bowl. Place flank steak in a zipper bag and pour the marinade on top, ensuring it is thoroughly covered. Marinate for at least 4 hours or overnight.
  • 30 minutes before grilling, place flank steak on counter (it does not need to be room temperature, but it shouldn't be straight from the fridge).
  • Bring grill to medium heat for at least 10 minutes. Once the grill is hot place the flank steak directly over the flame. Allow to cook for 10 minutes before flipping. After flipping allow to cook for approximately 10 more minutes. If at any point it begins to burn move to a cooler spot on the grill, close the lid, and allow to finish cooking. Pull meat off the grill once the internal temperature of the meat has reached your preferred doneness level.
  • Allow the meat to rest for 10 minutes. Thinly slice the meat across the grain. See picture in post for details.
