BAKED BEANS WITH PINEAPPLE

- In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 2 tablespoons drippings. Saute onion in drippings until tender. , In a very large bowl, combine the beans, pineapple, bacon and onion. Combine brown sugar and ketchup; stir into the bean mixture., Transfer to two greased 3-qt. or 13-in. x 9-in. baking dishes. Cover and bake at 350° for 20 minutes. Uncover; bake 25-35 minutes longer or until bubbly and beans reach desired thickness.

PINEAPPLE BAKED BEANS
These beans are super easy to make and delicious. The added pineapple gives it a nice sweet and sour taste, making it hard to resist a second plate. I can't wait to serve these at my next BBQ.

Steps:
- 1. Drain pineapple and reconstitute the onions in the pineapple juice.
- 2. Mix together the beans (do not drain) and sauce with pineapple, bacon bits, brown sugar, Worcestershire sauce, and mustard. Drain the juice off the onions and add them to the beans, mix well.
- 3. Bake in 325 oven for 90 minutes.

- In a 3-qt. slow cooker, combine the first six ingredients. Cover and cook on low for 6-8 hours or until vegetables are tender. Just before serving, stir in bacon.

SUE AND GLORIA'S BAKED BEANS
Steps:
- Preheat oven to 350 degrees F.
- In large bowl, mix together beans, pineapple, molasses, BBQ sauce, mustard, 1/4 of the bacon, and 1/4 of the onions. Add some salt and pepper, to taste. Pour beans in 9- by 13-inch casserole dish and sprinkle remaining crushed onions and bacon on top. Cook in oven for 1 hour or until beans brown and bubble. Serve warm.

- Spray a medium sized pot with no stick spray.
- Add oil enough to barely cover and add onions- sauté slowly until just soft Place in medium sized casserole.
- Add remaining ingredients- stir to mix.
- Bake uncovered in 350°F oven for 1 1/2 hours or until bubbly, stirring once or twice.

- Preheat oven to 375°F. In a large skillet, cook diced bacon over medium heat until crispy. Remove bacon using a slotted spoon and drain on a paper towel lined plate.
- Add pineapple and chili powder to skillet and stir, cooking for about 4-5 minutes, until golden and slightly caramelized. Remove using a slottted spoon and drain on a paper towel lined plate.
- Pour off all but 1 tablespoon of bacon fat from the skillet. Add onion, season generously with Kosher salt, and cook, stirring occasionally, for about 4 minutes. Add garlic and cook for 1 minute, stirring to avoid burning.
- Add beans, water, diced tomatoes, tomato paste, molasses, brown sugar, maple syrup, red wine vinegar, ground dry mustard, and cooked bacon. Stir to combine. Season to taste with Kosher salt.
