Steps:
- Boil the first 3 ingredients together. The add maizena and vinegar and cook until thick . Add methi masala to pineapples and mix well. Add syrup to pineapples and mix. Fry vagaar and pour over pineapples and mix well together

- Combine 1 tablespoon each fish sauce, lime juice, and sugar in an attractive bowl and whisk until the sugar dissolves. Stir in the pineapple and chile. Taste for seasoning, adding more fish sauce, lime juice, or sugar as necessary the mixture should be sweet, fruity, tart, and a little salty. Serve immediately.Makes about 3 cups enough to serve 6

- Heat the oil in a large heavy-based pan. Tip in the onions and spices and cook for 5 mins until fragrant. add the rest of the ingredients plus 1 tsp salt and simmer for 1 hr until dark golden and thick. Pour into sterilised jars and allow to cool before covering.

This looked too interesting to pass up! It's not too pickly, with just a tablespoon of vinegar, but deliciously sweet and spicy. From a cookbook, "Nonya Favourites," which I picked up in Singapore. The book suggests serving this with rice and a coconut curry, or fried fish.

Steps:
- Cut pineapple into 1-cm-thick wedges.
- Heat oil in a wok, add ginger and chili, saute about 2 minutes until fragrant.
- Add remaining ingredients and cook, stirring constantly, for 10 minutes.
- The pickle is finished when the oil rises to the top and the pineapple is glossy. The pineapple should still be juicy.
