DAYTON STEAKHOUSE-STYLE STEWED TOMATOES



Dayton Steakhouse-Style Stewed Tomatoes image

I love tomatoes and this dish sounds absolutely wonderful to me. It is taken from the Junior League of Dayton cookbook, "Causing A Stir". The recipe states that it is inspired by Dayton's favorite steakhouses and that it is terrific served with Filet Mignon, baked potatoes and a salad. I have a couple of T-bones in the freezer that are calling out for this recipe!

1 onion, small chopped
4 tablespoons butter
1 1/2 cups bread cubes (dry, plain)
1/2 cup brown sugar (light brown)
5 cups tomatoes, canned
1 teaspoon salt (to taste)
1/2 teaspoon pepper, freshly ground

Steps:

  • Preheat oven to 350 degrees. Saute onion in butter until soft, but not browned. Add bread cubes and brown sugar. Cook and stir over low heat for 3 to 5 minutes. Stir in tomatoes and season with salt and pepper. Transfer to a greased shallow casserole dish.
  • Bake 30 to 40 minutes or until bubbly. If desired, top each serving with homemade croutons or drizzle plain bread cubes with melted butter, season as desired and bake 5 to 10 minutes.

1 1/2 c bread cubes (dry, plain)
1/2 c light brown sugar
5 c canned tomatoes (crushed, diced or fire-roasted)
1 tsp salt (or to taste)
1/2 tsp freshly ground black pepper

Steps:

  • 1. Preheat oven to 350 degrees. Saute onion in butter until soft, but not browned. Add bread cubes and brown sugar. Cook and stir over low heat for 3-5 minutes. Stir in tomatoes and season with salt and pepper.
  • 2. Transfer mixture to a greased shallow casserole dish. Bake 30-40 minutes or until bubbly.

10 tomatoes (beef or roma variety)
2 teaspoons salt
1/2 teaspoon sugar
1 teaspoon dried parsley
1/4 cup chopped green pepper

Steps:

  • Bring a large pot of water to boil, plunge tomatoes in for 30 seconds. Remove, put immediately in a ice bath.
  • Peel the tomatoes. Discard the skins.
  • Dice the tomatoes up to desired size.
  • In a large pot on medium heat, combine all ingredients.
  • Simmer for 30 minutes.
  • Then serve fresh or you can freeze them.

¾ cup chopped green bell pepper
½ cup chopped sweet onion
½ cup chopped celery
1 teaspoon white sugar
½ teaspoon salt
¼ teaspoon dried oregano
¼ teaspoon dried basil
⅛ teaspoon black pepper
1 tablespoon water
1 ½ teaspoons cornstarch

Steps:

  • Combine tomatoes, green bell pepper, onion, and celery in a large skillet over medium heat; cook and stir until fragrant, about 10 minutes. Reduce heat and cook until green bell pepper and onion are soft, about 5 minutes more. Stir in sugar, salt, oregano, basil, and pepper.
  • Whisk water and cornstarch together in a small bowl. Stir into the skillet. Simmer tomato mixture until thickened, about 5 minutes.

4 large tomatoes
1/8 tsp pepper
1 tsp sugar
1 tsp salt
1 Tbsp butter

Steps:

  • 1. Peel tomatoes and cut them into chunks.
  • 2. In a saucepan, heat tomatoes, stirring constantly, until the juice comes out.About 10 minutes.
  • 3. Cook over low heat until desired consistency is reached.
  • 4. Add salt, pepper, butter and sugar.
  • 5. You can add breadcrumbs to the top if you like. And can substitute 6 small tomatoes for the large.
