PERFECT PINA

Number Of Ingredients 7

16 ounces pineapple juice
12 ounces bourbon
3 ounces Simple Syrup, recipe follows
1 1/2 ounces fresh lime juice
4 ounces prosecco
Fresh basil sprigs, for garnish
1 cup sugar

Steps:

  • In a large pitcher with ice, stir together the pineapple juice, bourbon, Simple Syrup and lime juice. Pour into ice-filled highball glasses, top with a splash of prosecco, garnish with a sprig of basil and serve.
  • Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

1 1/2 ounces blanco tequila
1 ounce fresh pineapple juice, plus 1 fresh pineapple chunk, for garnish
1/2 ounce fresh lime juice
1/4 ounce agave nectar
2 fresh rosemary sprigs
1 ounce prosecco

Steps:

  • Put the tequila, pineapple juice, lime juice, agave and rosemary leaves from 1 sprig (no stem) in a mixing glass and lightly muddle the leaves. Add large ice and shake vigorously with a cocktail shaker. Add the prosecco, tumble-roll back and forth 1 time and double-strain over fresh ice into a highball glass. Spear the pineapple chunk with the remaining rosemary sprig for a garnish.

This cake is so light & moist and has so much flavor. It's really delightful. I got it from a cookbook back in 1985 that was comprised of everybodies favorites. This was my mom's all time favorite cake. You may have trouble finding coconut cream pudding, so you can sub with vanilla pudding.

1 package white cake mix
1 (3 1/2 ounce) package instant coconut cream pudding mix
4 eggs
1/2 cup water
1/3 cup rum
1/4 cup oil
1 (8 ounce) can crushed pineapple, drained
1 (3 1/2 ounce) package instant vanilla flavor pudding and pie filling
1/3 cup rum
1 (9 ounce) container Cool Whip
1 cup flaked coconut

Steps:

  • Preheat oven to 350 Degrees.
  • Blend all cake ingredients in large bowl.
  • Beat 4 minutes at med.
  • speed of electric mixer.
  • Pour into two greased 9" layer pans.
  • Bake for 25 to 30 minutes.
  • Remove and cool.
  • Frosting: Combine all ingredients except whipped topping and coconut in a bowl.
  • Beat until well blended.
  • Fold in whipped topping.
  • Sprinkle coconut on cake after frosting.
