As an avid baker, I wanted to create something that was mine and from my heart. I wanted to make a cake that tasted like the perfect pina colada drink, and I feel like I accomplished just that with this recipe. -Stephanie McShan, Apopka, Florida

1 cup butter, softened
2 cups sugar
6 large eggs, room temperature
1 teaspoon coconut extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sour cream
1 can (8 ounces) crushed pineapple, undrained
FROSTING:
1 cup butter, softened
4 cups confectioners' sugar
2 teaspoons coconut extract
3 to 4 tablespoons water
FILLING:
1 jar (18 ounces) pineapple preserves
Dried pineapple slices and toasted sweetened shredded coconut, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extract. Combine the flour, baking powder and baking soda; add to the creamed mixture alternately with sour cream, beating well after each addition., In a food processor, cover and pulse pineapple until almost smooth. Stir into batter. Transfer to 3 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 20-25 minutes., Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, beat butter until fluffy. Beat in the confectioners' sugar, extract and enough water to achieve a spreading consistency., To assemble, place 1 cake layer on a serving plate; spread with half of the preserves. Repeat layers. Top with remaining cake layer. Frost top and sides. Garnish with pineapple slices and coconut if desired.

1 package white cake mix (regular size)
1 package (3.4 ounces) instant coconut cream pudding mix
1 cup canola oil
3/4 cup water
2 large eggs, room temperature
1/4 cup rum
1 cup drained crushed pineapple
GLAZE:
2 cups confectioners' sugar, divided
2 tablespoons unsweetened pineapple juice
1/4 cup cream of coconut
1 tablespoon rum
1/4 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, combine cake mix, pudding mix, oil, water, eggs and rum; beat on low speed 30 seconds. Beat on medium 2 minutes. Stir in pineapple. Transfer batter to prepared pan. Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool in pan 15 minutes before removing to a wire rack., In a small bowl, mix 1 cup confectioners' sugar and pineapple juice; brush over warm cake. Cool cake completely. , In another bowl, mix cream of coconut, rum and remaining confectioners' sugar; drizzle over cake. Sprinkle with coconut.

Nonstick cooking spray, for greasing the pan
1 cup all-purpose flour, plus more for flouring the pan
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
5 large eggs, separated
1 cup sugar
1/3 cup milk
1 teaspoon vanilla extract
One 14-ounce can sweetened condensed milk
One 12-ounce can evaporated milk
3/4 cup heavy cream
3/4 cup cream of coconut
1/4 cup coconut-flavored rum, optional
1 pint (2 cups) heavy cream
3 tablespoons sugar
One 15-ounce can crushed pineapple, chilled
1/2 cup toasted flaked coconut

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease (with cooking spray) and flour a 12-cup muffin pan.
  • Sift the flour, baking powder and salt into a large bowl.
  • Beat the egg yolks with 3/4 cup of the sugar in a medium bowl with an electric mixer on high until the yolks are pale yellow. Stir in the milk and vanilla. Pour the egg yolk mixture over the flour mixture and stir very gently until combined.
  • Beat the egg whites in a separate bowl with the mixer on high until soft peaks form. With the mixer on, pour in the remaining 1/4 cup sugar and beat until the egg whites are stiff but not dry. Fold the egg white mixture into the batter very gently until just combined. Spoon the batter into the cups of the muffin pan using a 1/3-cup measure.
  • Bake the cakes until risen and lightly golden, 13 to 14 minutes. Allow to cool in the pan.
  • For the tres leches mixture: Combine the sweetened condensed milk, evaporated milk, heavy cream, cream of coconut and rum if using in a small pitcher.
  • For the whipped cream: Whip the cream with the sugar until soft peaks form.
  • To assemble: Use a serrated knife to slice each cake in half across the middle. Place a cake half in the bottom of each 8-ounce mason jar. Spoon over 2 tablespoons of the tres leches mixture and 2 tablespoons crushed pineapple. Put the other half of each cake on top, and spoon over 2 to 3 more tablespoons of the tres leches mixture. Top each cake with lots of whipped cream and toasted coconut.
  • Refrigerate until ready to serve. Several hours is fine. The cooler the cakes, the better.

1 (20 ounce) can unsweetened crushed canned pineapple
4 ounces unsalted butter, plus
3 tablespoons unsalted butter, softened
3 1/2 cups packed light brown sugar
4 eggs
1/2 cup dark rum
3 1/3 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 cup sweetened flaked coconut

Steps:

  • Preheat oven to 325 degrees F.
  • Before starting batter, wash 8 (1-pint) wide-mouth canning jars with lids in hot, soapy water and let them drain, dry, and cool to room temperature.
  • Generously grease insides of jars.
  • Drain crushed pineapple for about 10 minutes in a colander, reserving juice.
  • Purée drained pineapple in a food processor.
  • Measure out 1-1/2 cups purée, adding a little juice if necessary to make 1-1/2 cups.
  • Set purée aside.
  • Discard remaining juice or reserve for another use.
  • With an electric mixer, beat together butter and half of brown sugar until light and fluffy.
  • Beat in eggs, then remaining sugar.
  • Beat in pineapple purée and rum and set aside.
  • Sift together flour, baking powder and baking soda.
  • Gradually add to pineapple mixture in thirds, beating well after each addition to make a thick batter.
  • Stir in coconut.
  • Spoon 1 level cupful of batter into each jar.
  • Carefully wipe rims clean, then place jars in center of preheated oven.
  • Bake 40 minutes.
  • About 10 minutes before cakes are done, bring a medium saucepan of water to a boil.
  • Put in jar lids, cover, and remove from heat.
  • Keep lids in hot water until they're used.
  • When cakes are done, remove jars from oven.
  • If jar rims need cleaning, use a moistened paper towel.
  • Carefully put lids and rings in place, then screw tops tightly shut.
  • Place jars on a wire rack; they will seal as they cool.

1 ¼ cups water
⅓ cup vegetable oil

1 cup milk
1 cup heavy whipping cream
¼ cup white sugar
1 tablespoon toasted flaked coconut, or as desired

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch cake pan.
  • Stir yellow cake mix, eggs, water, and vegetable oil in a bowl until moistened; beat with an electric mixer on medium speed for 2 minutes. Stir in crushed pineapple. Pour batter into the prepared cake pan.
  • Bake in the preheated oven until the cake is lightly browned and a toothpick inserted into the center of the cake comes out clean or with moist crumbs, 30 to 40 minutes. Remove cake from oven.

1 cup all-purpose flour (see Cook's Note)
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine salt
1/3 cup packed light brown sugar
2 tablespoons dark rum
7 tablespoons unrefined coconut oil, melted
8 canned pineapple rings, drained
6 maraschino cherries in light syrup, drained and stems removed
1 teaspoon finely grated lime zest, plus 1 tablespoon fresh lime juice
1/2 cup well-shaken coconut milk
1/2 cup granulated sugar
One 13.5-ounce can heavy coconut cream, such as Let's Do Organic, chilled overnight
2 tablespoons confectioners' sugar

Steps:

  • Position a rack in the bottom shelf of the oven and preheat to 375 degrees F. If using a muffin pan that's not nonstick, spray with nonstick cooking spray.
  • Whisk together the flour, baking powder, baking soda and salt in a medium bowl.
  • Stir together the brown sugar, rum and 3 tablespoons of the coconut oil in a small bowl. Pour about 1 tablespoon into each cup of a 6-cup nonstick jumbo muffin pan.
  • Place 1 pineapple ring in each muffin cup, then put 1 cherry in the center of each pineapple ring.
  • Finely mince the remaining 2 pineapple rings until the texture resembles crushed pineapple; transfer to a large bowl. Add the lime juice, coconut milk and granulated sugar and the remaining 4 tablespoons coconut oil. Whisk to combine. Add the flour mixture and stir with a rubber spatula until just combined.
  • Divide the batter among the muffin cups (about a heaping 1/4 cup in each). Use the back of a small spoon to smooth the tops. Transfer the muffin pan to a rimmed baking sheet. Bake until the center springs back when you lightly press the top a cake, about 20 minutes, rotating the pan halfway through baking.
  • Remove from the oven and let cool for 10 minutes. Set a wire rack inside another rimmed baking sheet and spray the rack with nonstick cooking spray. Run a small offset spatula around the edge of each cake, then carefully invert the cakes onto the prepared rack. Let cool for 20 minutes more.
  • Meanwhile, remove the chilled heavy coconut cream from the refrigerator. Scoop the solid coconut cream from the top of the can (about 1 cup), leaving behind the coconut water and reserving it. Whip the coconut cream with a handheld mixer on high speed in a large bowl until smooth, creamy and very soft peaks form. If the cream is too thick, whip in 1 teaspoon of the reserved coconut water at a time until you reach the desired consistency. Add the lime zest and confectioners' sugar and mix on low speed until just combined.
  • Top the cakes with large dollops of the whipped coconut cream. Serve immediately.
