Steps:
- To a large pitcher, add the strawberries, cucumbers, mint and lemon, lime and orange slices. Pour in the prosecco, Pimm's, Simple Syrup and lemon juice and stir to combine. Let stand at least 30 minutes for the fruit to impart its flavor to the drink.
- Stir in some ice to chill down the cocktail, then serve in glasses over ice, adding some fruit and cucumber to each glass.
- Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

PIMM'S COMMON CUP
This is Common Cup (a name I've made up) because apparently the true traditional pimm's should be topped with champagne. In reality, this is what you're much more likely to find in pubs in the summer.

TRADITIONAL PIMM'S CUP (A.K.A.) PIMM'S AND GINGER
A favorite warm-weather drink, this is light, crisp, and refreshing. Excellent for guests as it's not too alcoholic. The story of Pimm's: Created by James Pimm in his 1820's Oyster Bar. Pimm began to market it ready-mixed in 1859, such was its popularity. It was taken as a digestive tonic, due to the high level of quinine and the mash of herbs involved in its production. Fashionable society began to drink Pimm's as a cocktail during the later part of the 19th century, partially for the alcoholic lift and partially because it was weak enough to be drunk all afternoon. Try serving it as a punch, with lemon and lime slices floating in the punch bowl.

- Pimm’s Cup. Our recipe makes one perfect Pimm’s Cup, but you can scale it up to make a pitcher for a party. We go a little lighter on the garnishes (just lemon and cucumber, to really let the liqueur shine), but if that seems too restrained, by all means, add more!
- Virgin Pimm’s Cup. If you don’t drink alcohol, you don’t have to miss out on one of summer’s most thirst-quenching quaffs. Admittedly, recreating the flavors of Pimm’s No. 1 without alcohol is a bit of a process, but a fun and fascinating project involving black tea, juniper berries, allspice, coriander, grapefruit, nonalcoholic wine, and more.
- Ruby on Rails Cocktail. If you get tired of drinking Pimm’s Cups before your bottle of Pimm’s No. 1 is empty (not likely, but anything’s possible), you can use it in other cocktails too, like this one with fresh strawberries, strawberry syrup, and rosé.
- No-Bake Pimm’s Strawberry Cheesecake Tarts. Speaking of strawberries, since it’s easy to end up with a surplus when they’re in season, it’s a good thing you can work Pimm’s No. 1 into desserts too.
- The Salty Miami. This ingeniously American cocktail blends Pimm’s No. 1 with tequila—plus celery juice, lime juice, simple syrup, and club soda, with a spark of salt around the rim of the glass.
- Pimm’s Popsicles. We’re big fans of frozen cocktails in all forms, from sangria slushies to wine pops (and the classic frozen margaritas and daiquiris, of course), so Pimm’s ice pops are highly enticing, and just the thing to make when the temperature climbs.
- Frozen Pimm’s Cup Slushies. Or just do the slushy drink thing and make frozen Pimm’s Cups for the ultimate warm weather drink/dessert hybrid. Get the Frozen Pimm’s Cup Slushies recipe.
- Pimm’s and Blood Orange Fizz. This sweet-tart take marries Pimm’s with kumquats and fizzy blood orange soda in addition to lime, lemon, and orange slices.
- Peach Pimm’s. A super-simple Pimm’s cocktail, this one is great for highlighting juicy summer peaches at their peak of ripeness, and it comes together in an instant, so you can go find a nice shady spot to sip posthaste.
