BACON PIEROGI BAKE
Pierogi baked in a creamy sauce, then topped with cheese, bacon and green onions.

Steps:
- Preheat oven to 400 degrees. Arrange the pierogies in a lightly greased, 9x9 inch baking dish.
- In a medium skillet, cook the bacon until crispy. Remove to a paper towel lined plate.
- Add garlic to drippings in pan and cook for 30 seconds. Add cream cheese to pan and cook until cream cheese begins to melt, stirring frequently.
- Gradually whisk in the chicken broth until smooth. Season sauce with salt and pepper to taste.
- Pour the cream cheese mixture evenly over pierogies. Bake for 15 minutes or until bubbly and heated through.
- Remove from oven and top with cheese. Bake for an additional 5 minutes or until cheese is melted.
- Top with cooked bacon, green onions and tomato before serving.

Steps:
- Boil Pierogies as instructed on package. Meanwhile in a large skillet cook bacon until crispy, crumble and set aside discard all but two tablespoons drippings. Add onion and cook in drippings, add mushrooms and 1 tablespoon water cook until mushrooms are softened, add diced tomatoes and bring to a boil.
- Add Perogies and bacon to skillet and heat through,.

This is a recipe I found in one of my recipe magazines (I think Cook's Country). It is a really nice side dish with grilled meat or fish and, it is a nice alternative to your everyday potatoes.

- Cook the pierogies according to package directions.
- Cook bacon in a large nonstick skillet until crisp. Remove bacon; crumble.
- Increase heat to medium-high. Add onion, sugar, and thyme to drippings in pan; saute 5 minutes. Stir in peas; saute for 1 minutes. Add pierogies, salt, and pepper; cook 30 seconds. sprinkle with crumbled bacon. Serve with sour cream.

PIEROGIES WITH TOMATOES, BROWNED ONIONS, AND DILL

- Bring 4 quarts water to a boil in a large pot, then reduce heat and keep at a bare simmer, covered, until ready to use.
- While water comes to a boil, thinly slice onions in a food processor fitted with slicing disk. Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then cook caraway seeds and bay leaf, stirring, until fragrant, about 30 seconds. Add onions and cook, stirring occasionally, until golden, 8 to 10 minutes. Increase heat to high and cook, stirring frequently, until onions are dark brown and just beginning to char, about 2 minutes. Carefully stir in tomatoes with their juice, broth, sugar, 3/4 teaspoon salt, and 1/2 teaspoon pepper (juices may spatter) and simmer 3 minutes. Stir in dill and discard bay leaf.
- Boil pierogies according to package directions (5 to 7 minutes), then drain. Serve topped with tomato sauce.
SPICY PASTA WITH TOMATO & BACON SAUCE
This is my Dad's recipe - boy is it terrific! Careful with the red pepper flakes though - first time he made it - Wowzers!! It was a little too spicy! In my opinion this sauce tastes even better the second day!

Steps:
- Fry bacon until crisp and drain (reserve 1 tablespoons in skillet).
- Set bacon aside to cool.
- Add olive oil and onions to skillet.
- Saute onions until wilted, about 5 minutes.
- Stir in garlic, tomatoes, salt, sugar and pepper flakes.
- Cook your choice of pasta in the meantime.
- Simmer 30 minutes to reduce liquid.
- Crumble bacon and add to sauce along with parsley if desired.
- Remove sauce from heat.
- Toss cooked pasta with sauce and top with parmesan cheese if desired.
- ENJOY!
