HOMEMADE PIZZA POCKETS
Homemade Pizza Pockets are made from a simple homemade pizza dough recipe filled with sauce, pepperoni, sausage and cheese. So good!

Steps:
- Preheat oven to 450F degrees. Spray two baking sheets with nonstick cooking spray (or line with parchment paper.)
- In a small bowl, whisk together eggs, milk and garlic.
- In a separate larger bowl, combine flour, parmesan cheese, salt, baking powder and Italian seasoning.
- Using a fork or a pastry blender, begin cutting in the cubed butter into the flour mixture until no large clumps remain.
- Stir the egg mixture into the flour mixture.
- Mix until dough comes together into a loose ball. Note: to make this easier, you could use an electric mixture with a dough attachment.
- Dump the dough ball onto a large, floured countertop.
- Knead the dough ten times (turning it over onto itself and turning 90 degrees each time). Add additional flour as necessary to keep it from sticking.
- Using a rolling pin, roll out dough to about ½-inch thickness.
- Take a 3-inch biscuit cutter (or similar size glass or bowl), cut out all the dough into circles.
- After cutting out the circles, press them down or roll them out some more to make them large enough to hold the all the fillings. Note: this dough does stretch pretty easily too which you may need to do to close it up over the fillings.
- Place the crust circles on prepared baking sheets.
- Spoon a tablespoon of pizza sauce onto the middle of the dough circles.
- Then add a tablespoon of shredded cheese, a slice of pepperoni and a tablespoon of crumbled sausage.
- Carefully fold the crust in half and press together the edges.
- Take a fork and go around the edges to make sure they seal closed. If necessary, add a bit of water to the seals with your finger to help them stay sealed.
- Bake at 450f degrees for 13-15 minutes until crust is lightly browned. Continue until all pizza pockets are made.
- Optional: Brush tops of warm pizza pockets with melted butter and sprinkle with dried parsley.

SUPREME PIZZA PIE POCKETS

- Heat oven to 425°F. In 10-inch nonstick skillet, heat oil over medium heat. Add sausage; cook 5 to 7 minutes, stirring occasionally, until no longer pink. Using slotted spoon, transfer to small bowl.
- Add bell pepper, onion and mushrooms to drippings in skillet; cook 3 to 5 minutes, stirring frequently, until softened and browned. Stir in garlic and pepper flakes; remove from heat. Stir in sauce and sausage.
- Unroll crusts on work surface. Cut each crust into 4 wedge-shaped pieces, making 8 wedges.
- Spread 2 rounded tablespoons sausage mixture on half of each crust wedge in triangle shape, leaving 1/2-inch border. Sprinkle 2 tablespoons mozzarella cheese over filling in each pocket. Fold unfilled sides of wedges over filling. With fork, press edges to seal. Carefully transfer to large ungreased cookie sheet. Brush with melted butter. Sprinkle with grated Parmesan cheese and Italian seasoning.
- Bake 13 to 15 minutes or until crust is golden brown.

RANCH PIZZA PIE

- Line 2 baking sheets with parchment. Heat 3 tablespoons of the olive oil in a large cast-iron skillet over medium-high heat; add the onions and cook until softened and slightly browned, about 20 minutes. Stir in the oregano, garlic and red and yellow peppers and cook for another 5 minutes. Set aside to cool for 20 minutes.
- Heat the remaining 1 tablespoon olive oil in another large cast-iron skillet over medium-high heat. Add the sausage and cook, using the back of a wooden spoon to break up the sausage meat into small bits, until browned, 10 to 15 minutes. Set aside to cool for 20 minutes.
- On a lightly floured surface, roll out each puff pastry sheet to about 13 inches long and 10 inches wide. Place one of the puff pastry pieces on each lined baking sheet; set aside the other two. Whisk the egg in a small bowl with 1 tablespoon water.
- Sprinkle 2 cups of the Monterey Jack cheese over one of the puff pastry sheets on a baking sheet, leaving a 1/2-inch border around the edges of the pastry. Continue layering with half the caramelized onions and peppers, sausage and pepperoni; finish with half the mozzarella slices. Brush the border of the puff pastry with the egg wash, lay one of the remaining puff pastry pieces over top and use a fork to crimp the edges. Using a sharp paring knife, cut three 1 1/2-inch vents in the top. Put the pie into the fridge to chill for 30 minutes before cooking. Repeat with the other puff pastry pieces and layering ingredients.
- Preheat the oven to 425 degrees F.
- Brush one of the pies with the egg wash. Bake on the bottom rack until the pastry is nicely browned, about 20 minutes.
- Wrap the second pie in plastic wrap on the baking sheet, then in aluminum foil; freeze. When ready to bake, preheat the oven to 425 degrees F. Unwrap the pie and brush it with egg wash. Bake from frozen on the bottom rack until the pastry is nicely browned, about 30 minutes.
CRESCENT PIZZA POCKETS
Make perfect pizza pockets by wrapping pizza sauce, mozzarella, and pepperoni in crescent dough and baking until golden brown.

- Heat oven to 375 degrees F. Unroll dough on cookie sheet and separate into 4 rectangles; press each into 6x4-inch rectangle, firmly pressing perforations to seal.
- Spread 1 tablespoon pizza sauce on half of each rectangle to within 1 inch of edge. Sprinkle each with 3 tablespoons cheese; top with 6 slices pepperoni. PIE CRUST PIZZA POCKETS
This is not a terribly cheap recipe or a terribly healthy one so it seems a bit out of character for me! But it was created when I needed something for dinner immediately and this is what I had on hand. The kids loved it!

- Preheat the oven to 425.
- Unroll one of the pizza crusts onto a cutting board.
- Cut it in half.
- On one part of the crust put enough sauce to your liking and to cover most of the crust, leaving a ring around the sides uncovered.
- Add cheese to taste and toppings, but not so much that you cannot close the crust.
- Fold the crust in half and seal with a fork.
- Repeat with the other 3 halves of crust.
- Bake at 425 for 10-15 minutes or until the crust is flaky and done.
- Let cool a bit and serve.

Steps:
- Mix 1 1/4 cups flour, yeast and salt in bowl.
- Stir in warm water.
- Beat on low speed for 1/2 minute. Scrape bowl constantly.
- Beat 3 minutes on high speed.
- Stir in remaining flour with a spoon.
- Turn dough out on floured surface. Knead 6 to 8 minutes.
- Cover dough; let rest for 10 minutes.
- Divide into 6 parts.
- (Dough is also excellent pizza dough.) Filling instructions: Brown and drain sausage, green pepper and onion.
- Add chopped tomatoes and tomato paste, spices and water.
- Cook 5 minutes.
- Roll each portion of pizza pocket dough into rounds.
- Spoon 1/6 of filling and 1/6 of cheese onto each pizza pocket round.
- Fold dough in half and close with fork tines.
- Brush with beaten egg.
- Bake at 375 degrees for 30 to 35 minutes.

- Make the dough (can be done ahead of time!): In a mixing bowl, stir together the flour, yeast, and salt. Add the oil and water. Using a spoon or fork, mix the ingredients until a dough forms. Add additional flour if it seems too wet, then knead until a ball forms. Cover and let rise 20 minutes. *Alternatively, use pre-made dough.
