This easy pico de gallo recipe is a classic for good reason. It pairs with just about everything! My tip is to let it chill for an hour or two before serving to help the flavors blend. Also, it's best to serve it the same day that it's made. -Jeannie Trudell, Del Norte, Colorado

6 plum tomatoes, chopped
1 small onion, finely chopped
1/2 cup chopped fresh cilantro
1 to 2 jalapeno pepper, seeded and finely chopped
3 tablespoons lime juice (about 1 lime)
1 tablespoon cilantro stems, finely chopped
1 garlic clove, minced
1/4 teaspoon salt

Steps:

  • In a medium bowl, combine all ingredients. Cover and refrigerate for 1-2 hours before servings.

6 roma (plum) tomatoes, diced
½ red onion, minced
3 tablespoons chopped fresh cilantro
½ jalapeno pepper, seeded and minced
½ lime, juiced
1 clove garlic, minced
1 pinch garlic powder
1 pinch ground cumin, or to taste
salt and ground black pepper to taste

Steps:

  • Stir the tomatoes, onion, cilantro, jalapeno pepper, lime juice, garlic, garlic powder, cumin, salt, and pepper together in a bowl. Refrigerate at least 3 hours before serving.

a salsa made with cooked cactus and other fresh ingredients and mexican cheese. This can be used as a dip or over foods as a salsa. My mother fixed this when we we were growing up, I guess because we had cactus growing in our yard and she had to find ways to use the cactus. Cactus is very delicious and can be used in several dishes

1 (24 ounce) jar cactus pieces
2 large tomatoes
1 medium yellow onion
2 jalapenos (depends on your taste)
2 tablespoons fresh cilantro
1/4 lb queso fresco (mexican cheese)
1/4 cup lemon juice
1/4 teaspoon salt
1 teaspoon fresh garlic

Steps:

  • Rinse cactus well under cold water. Cut the already sliced cactus into small pieces. The cactus also has a serrano in the jar, mince that also.
  • Dice tomatoes, onion, jalapenos (I leave the seeds in, but you can take seeds out) and cilantro. In a large bowl mix all ingredients together, add minced garlic and salt to taste. Crumble Queso Fresco into the mix and add lemon juice. You may want to add a little lemon juice at a time and mix and taste until it is to your liking.

This is a recipe from my grandmother. There isn't much difference in pico de gallo recipes but this one adds a great flavor when you add the cactus. The cactus can be located in the mexican food isle. My friends really enjoy the recipe. I hope you enjoy.

1/2 small white onion, finely chopped
1/2 cup cilantro leaf, chopped (or more to taste!)

  • Stir all the ingredients together in a medium bowl with some seasoning then put it into the fridge to chill. You could do this the day before. About 20 mins before you are ready to eat, take the salad out and bring it back to room temperature.

4 small tomatoes, chopped
1/2 medium red onion, chopped
1 jalapeno pepper, minced
1/4 cup chopped fresh cilantro
1 garlic clove, minced
1/3 cup extra virgin olive oil, divided
4 medium nopales
salt
pepper
1/4 cup red wine vinegar or 1/4 cup rice vinegar

Steps:

  • Combine the tomatoes, onions, japaenos, cilantro [note I use parsley. I don't have the genes to like Cilantro. It tastes like soap to me].
  • Prepare a BBQ with med high heat.
  • Combine garlic and half the oil in bowl. Brush nopales with it. Season with salt and pepper. Grill until limp. About 3 minutes each side.
  • Cut into thick strips and toss into tomatoes. Pour on oil and vinegar. Season. Mix Serve.
