PICKLED ASPARAGUS

Use the freshest asparagus for best color. These make great appetizers or garnishes. They look so pretty all 'canned up'!

30 asparagus spears
⅓ cup coarse salt
2 quarts cold water
1 ⅔ cups distilled white vinegar
⅔ cup sugar
1 teaspoon coarse salt
1 teaspoon mustard seed
1 ½ teaspoons dill seed
1 white onion, sliced into rings
½ teaspoon chili pepper flakes
2 sprigs fresh dill

Steps:

  • Trim the cut end of the asparagus spears, and cut them into 3 inch lengths. Place them in a large bowl with 1/3 cup salt, and cover with water. Let stand for 2 hours. Drain and rinse under cool water, and pat dry.
  • Sterilize two pint size wide mouth jars in simmering water for 5 minutes.
  • In a saucepan over medium heat, combine the vinegar, sugar, 1 teaspoon of salt, mustard seed, dill seed and onion rings. Bring to a boil, and boil for one minute.
  • Pack the asparagus spears, tips up, in the hot jars leaving 1/2 of space from the rim. Tuck one dill sprig into each jar, and sprinkle in 1/4 teaspoon of red pepper flakes. Pour hot pickling liquid into the jars, filling to within 1/4 inch of the rim. Wipe rims with a clean damp cloth, and seal with lids. Process in a boiling water bath for 10 minutes.
  • Cool to room temperature. Check seals when cool by pressing the center of the lid. It should not move. Label and date; store in a cool dark place. If any jars have not sealed properly, refrigerate and eat within two weeks.

1 cup lightly packed unsprayed rugosa rose petals (about 1/2 ounce), picked over, gently submerged in water, and drained on paper towels
1 cup white-wine vinegar
3 tablespoons honey
2 teaspoons coarse salt

Steps:

  • Place rose petals in a nonreactive bowl. Bring vinegar, honey, and salt to a simmer in a small saucepan, stirring until salt and honey dissolve. Remove from heat and let cool 5 minutes; pour over rose petals and let cool, about 15 minutes.

4 chive blossoms
3/4 cup white wine
1/4 cup water
1/3 cup sugar

Steps:

  • Add asparagus, to boiling water and cook uncovered until barely tender (5 to 7) minutes.
  • Drain.
  • Pack flowers with vegetables in a glass container that has a lid.
  • Combine white wine, water and sugar or honey in a pot and bring to a boil, stirring until sugar is dissolved.
  • Pour hot liquid over asparagus and chive blossoms to cover them.
  • Cover the jar and shake to release any trapped bubbles.
  • Chill at least overnight and up to 2 weeks.

1 cup powdered sugar, sifted
1 1/2 teaspoons meringue powder
3 tablespoons water
1/2 cup superfine sugar

Steps:

  • Rinse the rose petals very well and lay them out to dry on paper towels.
  • Combine the powdered sugar, meringue powder and water in a mixing bowl.
  • Beat on low speed until blended, then beat on high speed 4-5 minutes or until fluffy.
  • Brush this mixture on all sides of the dry rose petals and then dust them with the superfine sugar.
  • Let stands on wire rack for 24 hours to dry.

2 lbs white asparagus
1/4 cup olive oil
1/2 lb porcini mushroom, stemmed and sliced
1 teaspoon garlic, chopped
1 teaspoon fresh tarragon leaves, chopped
salt & freshly ground black pepper
sherry wine vinegar
1 lb baby arugula
3 beefsteak tomatoes, thinly sliced

Steps:

  • In a medium saucepan, bring 2 quarts of salted water to a boil.
  • Set up a bowl with ice water and place near the sink.
  • Place asparagus in boiling water and leave in for 2 to 3 minutes or until barely limp. Immediately transfer asparagus to ice bath for 5 minutes to stop the cooking process.
  • Meanwhile, in a medium saute pan over medium-high heat, add olive oil, mushrooms and garlic. Cook about 2 minutes or until mushrooms are beginning to brown. Add tarragon and salt, pepper and a splash of vinegar. Set aside.
  • On 6 salad plates, plate 4 or 5 spears of asparagus. Top with a mound of arugula and arrange 2 or 3 slices of tomato on each mound. Drizzle porcini dressing over each salad and serve.

2 cups sugar
1/4 cup water
1 teaspoon glycerin (optional)

Steps:

  • In a quart jar, add petals, 1 cup sugar, and vodka.
  • Seal jar tightly, and place in a dry, dark place for about 2 weeks.
  • After two weeks, strain the liquid using a double layer of cheese cloth. Gently squeeze the petals, getting as much juice as possible.
  • In a fresh quart jar, add the second cup of sugar, glycerin, coloring, water to top and the strained liquid. Seal and store again in a dark place until sugar is dissolved.
  • Once the sugar has all dissolved, bottle the resulting liqueur in a fresh bottle and let age for roughly 3 months.
