This is probably the easiest chili cheese dip that I've ever come across, but it's one of my best-tasting recipes, too! It's very important that you keep the dip warm while serving, you can also heat it in a microwave oven. -Jerrie West, Oakhurst, California

Ingredients

1 pound Velveeta, cubed
1 can (15 ounces) chili con carne without beans
1 can (4 ounces) chopped green chiles
Tortilla chips

Steps:

Combine cheese, chili and chiles in a saucepan or fondue pot. Heat over medium-low, stirring frequently, until the cheese melts. Serve warm with tortilla chips.

1 (2 pound) loaf processed cheese (such as Velveeta®), cubed
2 (15 ounce) cans chili without beans (such as Hormel®)
2 (8 ounce) packages cream cheese, cubed
1 (16 ounce) jar picante sauce (such as Pace®)

Steps:

Place processed cheese, chili, cream cheese, and picante sauce into a slow cooker, set on Low, and let processed cheese melt, about 30 minutes. Stir until thoroughly combined; serve warm.

1/2 c shredded cheddar cheese
2 Tbsp chopped cilantro

Steps:

1. Spread cream cheese onto bottom of microwaveable pie plate, top with chili and cheddar cheese.
2. Microwave on high 45 sec. to 1 min. or until cheddar cheese is melted. Sprinkle with cilantro. Serve with crackers.

Heat 1 tablespoon olive oil over medium heat in a large nonstick saucepan. Brown the meat with onions until meat is almost cooked through, then add chili powder, cumin, paprika, salt and pepper. Add red bell pepper, garlic and sprinkle in flour and cook, stirring constantly for 3 minutes.
Stir in kidney beans, black beans, green chilies, salsa, enchilada sauce and 2 cups chicken broth mixed with 1 tablespoon cornstarch. Bring to boil then cover, and reduce to a gentle simmer, stirring occasionally, for 10-15 minutes or until the consistency resembles thick chili
Turn heat to low and stir in cream cheese until melted, followed by pepper jack and cheddar cheese until melted.
