PFIRSICHBOWLE (GERMAN SPARKLING PEACH WINE PUNCH)
May marks the beginning of Bowle season in Germany, and is heralded in with a holiday (May Day). During May, and throughout the summer, you will start to see Bowle served in the restaurants and at fairs. Bowle is a strong wine & fruit punch that comes in many varieties. Use the best quality wines you can afford (as long as you think they taste good is all that matters - not the price tag). In Germany, you can buy Bowle sets - decorative glass pitchers or punch bowls with small cups and picks (the picks are for spearing the fruit). Watch out - this punch packs a wallop - and the fruit is always the best part. Plan ahead - the sugared fruit needs to macerate overnight in the fridge. The serving size is really a guess.

Steps:
- Sliced peaches and drop into a pot of boiling water for a few seconds- just to blanch them so the skins will come off easily, not to cook them.
- Pull off the skins and set them in the bottom of your bowle pitcher in a layers, sprinkling with sugar for each layer (one peach per layer)-amount is to taste, but probably 1 rounded Tbsp per peach is a good guess.
- Cover and chill bowle pitcher 24 hours.
- Have a decorative bowl filled with ice that your bowle pitcher will sit in to keep cool.
- Nestle the bowle pitcher in the ice bed and pour in the chilled wine and the champagne.
- Stir gently with a ladle and serve.

- In large saucepan combine water, sugar, and gelatin. Bring to boiling, stirring to dissolve.
- Place undrained peach slices in blender. Cover; blend until smooth. In extra-large bowl combine gelatin mixture, pureed peaches, peach nectar, and lemon juice. Divide peach mixture among four 1-quart containers. Cover and freeze overnight or until firm.
- Note: Mixture can be frozen up to 3 months. Use as many containers as needed to continue with Step 3. (Each quart makes 6 servings).
- To serve, place one or more containers at room temperature for 1 hour. Break in chunks with large fork. Place in punch bowl or jug. Stir in 2 bottles of ginger ale per container of peach mixture until slushy.
WHITE WINE PEACH SANGRIA
One of many variations of this famous Spanish style wine punch. Clipped several years ago from Bon Appetit magazine. I haven't tried this yet. Cook time is actually chilling time.

GLUEHWEIN (GERMAN HOT WINE PUNCH)
This hot spiced wine punch is a staple at the Christmas festivites in Germany. Everywhere you go during the month of December, you will most likely find someone selling mugs of hot, steaming Gluehwein. - Wash strawberries, remove stems and cut in half. Put in a bowl and sprinkle with the sugar. Wash the lemon in warm water and peel off thin strips of rind with a sharp knife. Finely chop one peeled lemon rind strip and add the lemon juice and chopped rind to the strawberries. Refrigerate. After two hours (the sugar should be dissolved) pour off the resulting strawberry juice and put to one side. Pour wine on the strawberries until covered and refrigerate further for 2 hours. Shortly before serving add the strawberry juice, remaining wine, and sparkling wine and decorate the bowl with remaining lemon strips.
EASY PEACH PUNCH
You will find an alcohol version and a non-alcohol version here. This is really refreshing and especially fun for kids with the ice cream floating on top. If you want to get really creative, using extra juice, freeze it and float it on top in the punchbowl. A bundt pan or pretty much any round mold works well. Prep time does not include refrigeration time. Cheers!

- Non-Alcohol Version: omit schnapps and vodka. Replace with 1 1/2 cups peach nectar.

- Peel peaches, leave whole and place in acid solution, while you finish peeling all the peaches.
- In a large pot, cook wine, white & brown sugars, lemon juice and one cinnamon stick.
- Stir until all sugar is dissolved and mixture begins to boil.
- Remove the cinnamon stick and reserve the syrup.
- Rinse the peaches.
- Stick two cloves into each peach and add the peaches to the reserved syrup, heating the peaches until slightly softened.
- Remove from heat and allow peaches to sit in syrup overnight at room temperature.
- Next day, remove the cinnamon and cloves from the peaches.
- Slice the peaches into thick wedges and place back into the syrup.
- Next add the shredded candied ginger into the peach mixture and reheat the peaches.
- Once the peaches are hot, pack tightly into hot sterilized jars, make sure to add 1 stick of cinnamon to each jar.
- Cover the peaches completely with hot syrup, make sure to release any air bubbles, adding more syrup if necessary.
- Clean the rims and seal the jars.
- Process quart jars for 25 minutes in a water bath canner.

- Holiday Spice Syrup: Combine the water, sugar, star anise pods, allspice berries, cinnamon sticks and vanilla bean and seeds in a large saucepan and simmer over moderately low heat for 30 minutes. Remove from the heat and let steep for 10 minutes. Strain the syrup and chill.
