1 (7 1/2 ounce) package biscuits (in a tube near the crescent rolls)
20 teaspoons basil pesto
1 large tomatoes (thinly sliced)
parmesan cheese

Steps:

  • Biscuits should be individually sliced. Squish each one flat to look like a mini pizza.
  • Add two tsp of pesto on top of each biscuit.
  • Add one slice of tomato on top of each.
  • Sprinkle parmasan cheese on each.
  • Bake 400 degrees for 8 minutes
  • Serve warm.

SHAMROCK PESTO SNACKS

  • You only need three ingredients to make this St. Paddy's app: puff pastry, pesto and an egg. Roll out a sheet of thawed puff pastry into a 12-by-14-inch rectangle on a floured surface and cut a 1/2-inch-thick strip from one long side (for the stems). Spread pesto on the rectangle, then roll both long sides toward the middle until they meet (see below). Cut the log into 1/2-inch-thick slices and pinch the bottom of each slice to form a heart shape. Arrange three hearts together on a parchment-lined baking sheet to create a shamrock shape, using beaten egg to "glue" the sides together. Cut the reserved strip of dough into stems; lightly press onto the shamrocks and brush the stems with more beaten egg. Bake at 400 degrees F, about 15 minutes.

50g parmesan or vegetarian alternative
1 garlic clove, chopped
100ml olive oil

Steps:

  • Toast the nuts in a pan over a low heat. Tip into a mini chopper with the remaining ingredients, or use a large pestle and mortar, then blitz or pound into a rough sauce. Will keep for three days in the fridge.

Steps:

  • Heat a small frying pan over a low heat. Cook the pine nuts until golden, shaking occasionally. Put into a food processor with the basil, parmesan, olive oil and garlic cloves. Whizz until smooth, then season to taste.

  • Tomato-Basil Puree 1 heaping cup cherry tomatoes, 1 cup each fresh basil and parsley, 1/3 cup toasted slivered almonds, 1 garlic clove and 1/2 teaspoon kosher salt.
  • Sun-Dried Tomato Puree 2 cups each fresh basil and parsley, 1/3 cup each toasted pine nuts and chopped sun-dried tomatoes (not oil-packed), 1 garlic clove and 1/2 teaspoon each grated lemon zest, red pepper flakes and kosher salt.
