4 cups all-purpose flour
1 teaspoon salt
2 teaspoons vegetable oil
¼ teaspoon baking powder
1 cup warm water
1 egg, beaten

Steps:

  • In a large bowl mix together the flour, salt, and baking powder. Make a well in the center.
  • In a separate bowl mix together the vegetable oil, warm water, and beaten egg. Pour into the well of the dry ingredients. Knead dough for 8 to 10 minutes.
  • Cover dough and let rest for 2 hours. Roll out and fill as desired.

PIEROGI CASSEROLE

Full of flavor, this pierogi casserole is nothing short of rich and hearty. It's a wonderful change from the usual humdrum casserole.

5 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and cubed
½ cup milk
½ cup butter, melted
½ pound bacon, diced
1 onion, chopped
6 cloves garlic, minced
½ (16 ounce) package lasagna noodles
2 cups shredded Cheddar cheese
salt and pepper to taste
1 (8 ounce) container sour cream
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes in a large pot with water to cover over high heat. Bring to a boil and cook until the potatoes are tender. Remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.
  • Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat. Saute the bacon, onion and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
  • Cook the lasagna noodles according to package directions and cool under running water.
  • Place 1/2 of the mashed potatoes into the bottom of a 9x13 inch baking dish. Top this with 1/3 of the cheese, followed by a layer of lasagna noodles. Repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles. Then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese. Season with salt and pepper to taste.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 30 to 45 minutes, or until the cheese is melted and bubbly. Serve with sour cream and chopped fresh chives.

1 cup finely chopped onion
1/4 cup butter, cubed
2 cups 4% cottage cheese, drained
1 large egg
1/4 teaspoon onion salt
2 cups mashed potatoes (with added milk and butter)
1 cup shredded cheddar cheese, divided
1/4 teaspoon salt
1/8 teaspoon pepper
9 lasagna noodles, cooked and drained

Steps:

  • In a skillet, saute onion in butter until tender; set aside. In a bowl, combine cottage cheese, egg and onion salt. In another bowl, combine potatoes, 2/3 cup cheddar cheese, salt and pepper. Place 3 noodles in a greased 13x9-in. baking dish. Top with cottage cheese mixture and 3 more noodles. Top with potato mixture, remaining noodles and sauteed onion. Top with remaining 1/3 cup cheese. Cover and bake at 350° until heated through, 25-30 minutes. Let stand 10 minutes before serving.

5 cups all-purpose flour
1 teaspoon salt
1 cup water
3 large eggs
1/2 cup butter, softened
FILLING:
4 medium potatoes, peeled and cubed
2 medium onions, chopped
2 tablespoons butter
5 ounces cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon pepper
ADDITIONAL INGREDIENTS (for each serving):
1/4 cup chopped onion
1 tablespoon butter
Minced fresh parsley

Steps:

  • In a food processor, combine flour and salt; cover and pulse to blend. Add water, eggs and butter; cover and pulse until dough forms a ball, adding an additional 1 to 2 tablespoons of water or flour if needed. Let rest, covered, 15 to 30 minutes., Place potatoes in a large saucepan and cover with water. Bring to a boil over high heat. Reduce heat; cover and simmer until tender, 10-15 minutes. Meanwhile, in a large skillet over medium-high heat, saute onions in butter until tender; set aside., Drain potatoes. Over very low heat, stir potatoes until steam has evaporated, 1-2 minutes. Press through a potato ricer or strainer into a large bowl. Stir in cream cheese, salt, pepper and onion mixture; set aside., Divide dough into 4 parts. On a lightly floured surface, roll 1 portion of dough to 1/8-in. thickness; cut with a floured 3-in. biscuit cutter. Place 2 teaspoons of filling in center of each circle. Moisten edges with water; fold in half and press edges to seal. Repeat with remaining dough and filling., Bring a Dutch oven of water to a boil over high heat; add pierogi in batches. Reduce heat to a gentle simmer; cook until pierogi float to the top and are tender, 1-2 minutes. Remove with a slotted spoon. In a large skillet, saute 4 pierogi and onion in butter until pierogi are lightly browned and heated through; sprinkle with parsley. Repeat with remaining pierogi. Freeze option: Place cooled pierogi on waxed paper-lined 15x10x1-in. baking pans; freeze until firm. Transfer to an airtight freezer container; freeze up to 3 months. To use, for each serving, in a large skillet, saute 4 pierogi and 1/4 cup chopped onion in 1 tablespoon butter until pierogi are lightly browned and heated through; sprinkle with minced fresh parsley.

This is, well, easy as pie! Crunchy, chewy, cheesy, buttery... All the things that us comfort-food addicts love!

1 (1 lb) box frozen potato & cheese pierogi
3 tablespoons grated parmesan cheese
3 tablespoons butter

Steps:

  • Preheat oven to 425.
  • Boil pierogies for 3-4 minutes, or until they float to the water's surface.
  • Drain well.
  • Place in an 8-inch pie plate (glass, preferably).
  • Put the 3 inividual tablespoons of butter on the top of the pierogies.
  • Sprinkle the cheese over all.
  • Bake for 15-20 minutes, until edges brown and the cheese and pierogi edges are crispy.
  • If you did it right, the bottoms of the pierogies should be crispy, too.
  • Serve hot.

This recipe was submitted by Nancy Steinke, Fairview Alta. in a recipe book called "Country Cooking". I have not made it but plan to. It would be good served with cabbage rolls, ham and a salad. You could use sour cream and/or bacon bits when served.

1 10-inch unbaked pastry shell
2 cups dry curd cottage cheese
2 cups mashed potatoes, unseasoned
1/2 cup sour cream
2 teaspoons salt
1/2 cup green onion top, chopped
2 eggs
1/4 teaspoon cayenne pepper (optional)
1/2 cup grated cheddar cheese, to taste

Steps:

  • Beat together all the ingredients except the onions and grated cheddar cheese: mix until well blended.
  • Stir in the chopped onions and pour into unbaked pie crust.
  • Sprinkle with grated cheese.
  • Bake for 50 minutes at 425 degF or until golden brown.
  • Serve hot.

  • In a large deep oven-safe nonstick skillet, heat oil over medium-high heat. Cook beef, onion, garlic, thyme and sage for about 5 minutes or until beef is no longer pink. Stir in mixed vegetables to coat.
  • In a small bowl, whisk together broth, flour, salt and pepper until smooth. Pour into skillet and stir to coat. Bring to a simmer, stirring. Place perogies into beef mixture in a concentric circle over top. Cover skillet with lid and simmer gently for about 12 minutes or until perogies are tender and puffed. Uncover and sprinkle cheese over perogies.
  • Place skillet about 6 inches (15 cm) under preheated broiler for about 4 minutes until cheese is melted and top is light golden. Let cool slightly before serving dolloped with sour cream and green onions, if desired.
