Here's how to make the classic French Pastis drink! It's a refreshing mix of the anise-flavored liqueur and water.

1 1/2 ounces Pastis or Pernod
6 ounces ice cold mineral water
Ice, optional

Steps:

  • Add the Pastis to a small highball glass. Add ice, if desired (it's not traditional, but you can do so if desired).
  • Top with the water and enjoy. You can dilute with more or less water as desired.

Pastis is an anise-flavored aperitif that's one of life's little luxuries, and you can make a richly flavored homemade version by steeping some spices and bark in a jar for just a few days.

10 star anise pods
1 tablespoon licorice root
1/2 teaspoon fennel seeds
1/4 teaspoon whole coriander seeds
1/2 teaspoon anise seeds
1 1/2 cups vodka
1/3 cup sugar
1/2 cup water

Steps:

  • With a mortar and pestle, roughly break up anise, licorice root, fennel, coriander, and anise. Add them to a sealable glass jar along with vodka. Seal and shake, then let steep for 5 days at room temperature away from direct sunlight, shaking occasionally.
  • Boil sugar and water together until integrated into a light syrup, about 7 minutes. While the syrup is cooling, strain the spices out of the vodka mixture through a cheesecloth lining a fine-mesh strainer. Strain twice if necessary to remove all sediment.
  • Once syrup is cool add it to the strained vodka infusion and shake. Let rest for 4 days or more before use. Store at room temperature for up to 4 months.

SCALLOPS IN PERNOD AND CREAM



Scallops in Pernod and Cream image

This is a delicious dish. My father made it for me and gave me the recipe several years ago. I'm afraid I'm not sure where he got the recipe, but I believe it was from a chef at an inn in Maine. Like most absolutely fabulous dishes, this is not low fat but definitely worth the indulgence! This is really nice with a long grain rice and wild rice mixture or with nice crusty bread to sop up the sauce. Can be served as an appetizer or a main course.

12 large sea scallops
salt and pepper
1/4 cup flour
1/4 cup clarified butter
1/4 cup Pernod
1 cup whipping cream
1/4 cup fresh chives, chopped

Steps:

  • Season scallops with salt and pepper. Flour them heavily, patting away the excess.
  • Saute scallops in clarified butter until golden brown.
  • Add pernod carefully and flambe. Once flame has gone out add cream.
  • Reduce heat and cook until cream thickens and bubbles glisten.
  • Stir in chives and serve immediately.
  • Note: You may have to remove smaller/thinner scallops to a warm plate while cream sauce thickens, then return them to the pan once sauce has reached desired consistency.

MUSSELS WITH PERNOD AND CREAM

1 1/3 cups sliced leeks (white and pale green parts only)
1 1/4 cups dry white wine
1/4 cup diced red bell pepper
2 pounds mussels, scrubbed, debearded
1/2 cup whipping cream
3 tablespoons Pernod or other anise liqueur
3 tablespoons chopped fresh parsley

Steps:

  • Combine sliced leeks, dry white wine and red bell pepper in large pot. Add mussels. Bring to boil over high heat. Cover pot and cook until mussels open, about 5 minutes. Using tongs, transfer mussels to medium bowl (discard any mussels that do not open). Add whipping cream and Pernod to pot; boil until liquid is slightly reduced, about 4 minutes. Mix in chopped parsley. Return mussels and any accumulated juices to pot. Simmer until mussels are warmed through, about 1 minute; season with salt and pepper. Serve mussels with broth.

1 dash sugar syrup
1 dash Angostura bitters
3 or 4 ice cubes

  • Combine all ingredients in a cocktail shaker and shake vigorously. Strain into a cocktail glass.

1 cube sugar
1 teaspoon cold water
2 ounces rye whiskey
Dash Pernod
Dash Peychaud's bitters
3 or 4 ice cubes
Twist lemon peel

Steps:

  • Dissolve the sugar in cold water in a mixing glass. Add the whiskey, Pernod, bitters and ice cubes and stir well. Strain into a well-chilled glass, twist the lemon peel over the drink to release the oil, then drop it in.

FRESH SPINACH WITH LEEKS IN PERNOD



Fresh Spinach With Leeks in Pernod image

Pernod is the brand name of the licorice- flavored French liqueur pastis. You will find it under either of these names, as well as Ricard. It has been used as an ingredient in aperitiefs and in cooking for over 200 years! This is a fantastically easy as well as attractive dish we really enjoy - the Pernod tempers the bitterness you sometimes have with fresh spinach. I've put in a minimal prepartion time as this will really depend on how gritty your spinach and leek are. If you've never drunk Pernod before, consider giving it a try-- I'm also posting the recipe for the drink Pernod Classique (Pastis), which is a really refreshing summer drink. Millions of Frenchman can't all be wrong . . .

2 tablespoons olive oil
1 large leek
10 ounces fresh spinach
1 large tomatoes, diced
1/4 cup Pernod
salt and pepper, to taste

Steps:

  • Clean your spinach really well in a sink full of water, and remove any tough veins and stems.
  • You may have to repeat the cleaning process several times to remove all the grit from the spinach.
  • Remove from water, but do not dry.
  • Clean the leek well in water, then chop all of the white part and any of the green part that is tender.
  • This should yield between 1 1/2 to 2 cups of leek.
  • Heat oil in a wok over medium heat.
  • Add the spinach, leeks, and tomato.
  • Cover, and cook 12 minutes, stirring occasionally.
  • Leeks should be crisp-tender at this point, and spinach wilted.
  • Drain the vegetables in a colander and immediately return to the wok.
  • Stir in the pernod and salt and pepper to taste.
  • Cook uncovered approximately 5 minutes or until the liquid has nearly all evaporated.
  • Serve.
