Bourbon BBQ Spritz image

This is a great bourbon barbecue spritz that will keep low and slow cooked meats from drying out. Use this spritz on brisket, pork roasts, and ribs. The bourbon adds a nice liveliness but will not overpower the flavor of the meat. Please note that we developed this recipe using Four Roses Bourbon.

Number Of Ingredients 6

1/2 cup apple juice
1/4 cup maple syrup (the real stuff)
1/4 cup bourbon (Four Roses)
2 teaspoons soy sauce
1/4 teaspoon onion powder
1/4 teaspoon allspice

Steps:

  • In a medium saucepan, bring all ingredients to a low simmer until the brown sugar has melted through; 2-3 minutes stirring often. Remove mixture from heat and let the mixture cool for 20 minutes.
  • Pour spritz mixture into a clean spray bottle.
  • To use: spray meats during the latter stages of the cooking process and right before wrapping meats.
  • You can make this spritz up to 5 days ahead of time. Simply bring it to room temperature before using it.

An aperitif like this Pernod-Bourbon Spritz (pictured on the right) helps to stimulate the appetite, just the thing for before a celebratory feast like Thanksgiving. The two powerful ingredients, anise-flavored Pernod and caramely bourbon, are tempered by the addition of club soda and plenty of ice. A few drops of Angostura bitters brings it all together.

Ice
1/2 ounce Pernod liqueur
1/2 ounce Bourbon whiskey
2 to 3 dashes Angostura bitters
3 ounces club soda, chilled
Lemon twist, for serving

Steps:

  • Place 1 large ice cube in a rocks glass or fill halfway with ice. Add Pernod, bourbon, bitters, and soda. Stir once and garnish with lemon twist; serve immediately.

ELDERFLOWER SPRITZ



Elderflower Spritz image

The Elderflower Spritz is EO's version of the St-Germain cocktail invented by Robert Cooper, the creator of St-Germain liqueur. The difference is that we add lemon slices for citrus in the middle. Our recipe was developed as a French version of the Italian Spritz, to offer to guests who dislike the bitterness of Aperol. Its flowery essence is calming and soothing, with a welcome simplicity.

Number Of Ingredients 4

4 ounces Perrier-Jouët Grand Brut champagne
2 ounces St-Germain elderflower liqueur
2 ounces club soda
3 thinly sliced lemon wheels

Steps:

  • Fill a large wine goblet with ice. Carefully pour the champagne over the large cold ice cubes, followed by the St-Germain, and finish with the club soda. Add the lemon wheels and stir slightly.
  • Dominant Flavors: floral with pear and grapefruit
  • Body: light, effervescent
  • Dryness: medium to off-dry
  • Complexity: low
  • Accentuating or Contrasting Flavors: summer fruits like apricot from the champagne against citrus
  • Finish: short, sweet
  • Glass: large wine goblet
