SUPER MOIST PEAR CAKE

2¼ cups cake or all purpose flour (sifted)
1½ cup sugar (fine granulated white sugar)
½ cup butter (soft, unsalted)
⅓ cup canola oil (or vegetable oil)
2 tsps. baking powder
2 tbsps. vanilla extract
4 whole eggs
½ cup milk
3 whole ripe pears (peeled and thinly sliced)
⅛ tsp. salt (Just a pinch)
1 tsp. lemon zest ((optional))
2 tbsps. confectioner suger (for dusting after baking)
1/4 cup brown sugar (or less as desired)
¾ tsp. cinnamon

Steps:

  • Preheat oven to 350 F.
  • Peel and slice the Pears.
  • In an electric mixer bowl, whip up the sugar and butter until well combined for about 1 minute.
  • Add in the vanilla, lemon zest and eggs. Continue mixing on high speed for 1-2 minutes until they are well combined.
  • Add in the baking powder, sifted flour and a pinch of salt. Mix again for about 1 minute. Gradually add ½ cup of milk and ⅓ cup oil while mixing on low speed. Mix for another minute or two on low speed.
  • Line the bottom of the pan with parchment paper and grease or spray a round spring foam baking pan then pour the batter in. Ideally, a 10 x 3 inch deep pan is the best size.
  • After placing the batter in your pan, spread a layer of the sliced pears to cover the whole batter. Sprinkle some cinnamon and the brown sugar on top of the pears.
  • Bake in a pre-heated 350 F oven for 40 minutes then lay over an aluminum foil wrap on top to cover the cake and bake for another 10-15 minutes depending on your oven. Insert a wooden skewer to make sure it's completely clean before removing the cake. It may take less or a bit more time depending on your oven.
  • Remove the cake from the oven and cover with a kitchen towel to let it cool down. It may take up to 1 hour to completely cool down. Dust with some confectioner sugar right before serving.

2/3 cup (100 g) cornflour
2/3 cup (150 g) granulated sugar
3 large eggs
1 1/3 teaspoons (6 g) baking powder
2/3 cup (150 g) heavy cream
2.7 oz (75 g) butter, softened
1/3 teaspoon cherry brandy essence
1.6 fl oz (50 ml) canned pear syrup
5 canned pear halves

Steps:

  • Preheat oven to 395 degrees F/200 C.
  • Drain pear halves on a paper towel to absorb the syrup. Cut them into small slices or cubes. Flour pear pieces and put aside.
  • , place softened butter and sugar in a large bowl and mix with a hand whisk. Add eggs, one at a time, incorporating them into the mixture. Add heavy cream, canned pear syrup, cherry brandy essence, and flour mixed with baking powder and cornflour. Combine everything with the whisk. Add 1/3 of pear pieces to the batter and gently mix with a rubber spatula.
  • Butter and flour a silicone loaf pan and pour the cake batter into the mold. Place the remaining pear pieces on top of the preparation.
  • Bake the cake for 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool slightly in the pan before turning onto a wire rack to cool completely.

1 cup milk
1 tbsp. white vinegar
2 3/4 cups Pillsbury BEST® All Purpose Flour
1 tsp. baking soda
1/2 tsp. salt
1 cup butter, softened
2 cups sugar
1 tbsp. vanilla extract
3 large eggs
3/4 cup Jif® Mocha Cappuccino Flavored Hazelnut Spread, divided

Steps:

  • HEAT oven to 350 degrees F. Coat 12-cup fluted tube pan with no-stick baking spray.
  • MIX milk and vinegar together in medium bowl. Combine flour, baking soda and salt in separate medium bowl. Beat butter, sugar and vanilla in large bowl with electric mixer on medium speed, until fluffy. Add eggs, one at a time, beating well after each addition. Alternately add flour mixture and milk mixture to butter mixture, beating until blended.
  • PLACE 1 cup batter in small bowl. Blend in 1/2 cup mocha cappuccino spread. Pour remaining vanilla batter into prepared pan. Top evenly with chocolate batter. Do not stir.
  • BAKE 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan to wire rack to cool completely. Heat remaining 1/4 cup mocha cappuccino spread in microwave on HIGH for 30 to 45 seconds. Stir. Drizzle evenly over cake, allowing spread to run down sides of cake.

6 to 8 tablespoons unsalted butter, at room temperature
1 cup sugar
1 teaspoon vanilla
1 1/3 cups all-purpose flour
Pinch of salt
1 teaspoon baking powder
Pinch of ground nutmeg
1 large egg
1/2 cup buttermilk
2 small pears, peeled, cored, and coarsely chopped
1/4 cup coarsely chopped pecans

Steps:

  • Preheat the oven to 350 degrees. Butter an 8 x 5inch loaf pan. In a mixing bowl, cream 6 tablespoons of the butter with the sugar and the vanilla until light and smooth. Sift together the flour, salt, baking powder, and nutmeg and toss together until evenly mixed. Add half of the flour mixture and the egg to the butter mixture and mix well. Add the rest of the flour mixture and the buttermilk, beating them in well. Fold in the pears and the pecans. Scoop the batter into the prepared pan and bake for about 45 minutes, or until the center is firm and golden and a skewer inserted into the center comes out clean. Cool on a rack for 10 minutes, then turn out of the pan and finish cooling. When cool, invert onto a serving plate and cut into slices.

1 1/2 cups canned pure pumpkin (not pumpkin pie filling)
1 1/2 teaspoons vanilla extract (no sugar added, imitation is usually best)

Steps:

  • Preheat oven to 300 degrees F.
  • Spray the loaf pan heavily with vegetable spray and sprinkle with the wheat bran, shaking the pan to coat on all sides--this will prevent sticking.
  • In a bowl whisk together the almond flour, sugar substitute, baking powder, pie spice, and salt. In another bowl, beat the eggs and then whisk in the pumpkin and vanilla. Combine the dry and wet ingredients and stir until combined. Pour the batter into the prepared pan and stir to combine.
  • Bake until golden brown and a toothpick comes out clean when stuck in the center, about 1 1/2 hours. Cool completely before removing from the pan. Slice into 12 portions.

Steps:

  • Butter a 10-inch fluted tube pan.
  • Coat lightly with flour, shaking out excess; set pan aside.
  • In a medium bowl stir together flour, baking powder, and salt; set aside.
  • In a very large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.
  • Add brown sugar and vanilla; beat on high speed until mixture is smooth and light, about 3 minutes.
  • Add eggs, 1 at a time, beating just until combined.
  • Alternately add milk and the 1/4 cup brandy to flour mixture, beating just until combined after each addition and stopping occasionally to scrape the bowl.
  • Fold in pears and orange peel.

  • Cool cake in pan on a wire rack for 10 minutes.
  • For glaze, combine granulated sugar and the 1/3 cup brandy in a small saucepan.
  • Cook and stir over medium heat until mixture just boils and sugar is dissolved.
  • Remove cake from pan and place on wire rack.
  • Place a piece of waxed paper under the wire rack.
  • With a pastry brush, brush the warm glaze over the entire surface of the cake.
  • Cool cake completely.
  • Serve with Pear Sauce.
  • To make Pear Sauce: In a medium saucepan combine pears, lemon juice, pear nectar, sugar, and vitamin C tablet.
  • Bring to boiling over medium heat; reduce heat.
  • Simmer, covered, about 15 minutes or until pears are soft.
  • If mixture seems dry and in danger of scorching, add a bit more nectar to pan.
  • Remove from heat.
  • Cool slightly.
  • Puree mixture in a food processor or blender; strain through a fine-mesh sieve.
  • Stir in vanilla.
  • Taste sauce and adjust sugar if necessary.
  • Cool and refrigerate in an airtight container for up to 72 hours.
  • Makes about 2 cups.
  • Make-Ahead Tip: Store cooled cake tightly wrapped at room temperature up to 2 days.
