FRESH SOUTHERN PEACH COBBLER
I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

PERFECT INDIVIDUAL PEACH COBBLERS
This yummy peach cobbler was developed by my mom and me one night after dinner. It hits the spot if you are having a sweet craving, but it isn't super high in calories. This recipe will work in a 9x11-inch glass baking dish as well. Add a bit of ice cream if desired and enjoy!

- Preheat oven to 375 degrees F (190 degrees C).
- Place 1 cup peaches into 8 individual ramekins. Mix 1/2 cup water and white sugar together in a bowl; stir until sugar is dissolved. Evenly divide sugar mixture over peaches. Sprinkle peaches with cinnamon and nutmeg. Dot about 3/4 teaspoon butter onto each serving of peaches.
- Unroll and separate crescent roll dough; completely cover peaches in each ramekin with 1 piece of dough. Cut small slits into each roll for ventilation during baking. Lightly brush each roll with water and sprinkle each with about 1/8 teaspoon brown sugar. Arrange ramekins onto a baking sheet.
- Bake in the preheated oven until cobblers are browned, 11 to 13 minutes. Allow cobblers to cool for 20 minutes before serving.

THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.
PERFECT PEACH COBBLER
Peach is my mom's original cobbler recipe which was passed down to me and it's perfect just the way it is so I didn't even have to tweak it! It can be made with different fruits to suit your taste, blackberries, blueberries, and even apple or sweetened cherry pie filling.

- 1. Preheat oven to 350* F. Place a stick of butter in a 9 x 11 baking pan, (glass, stainless or disposable aluminum), and put in the oven to melt the butter. Remove from oven as soon as butter is melted and starts to foam, about 5-7 minutes.
- 2. In a mixing bowl mix flour, 1 cup sugar, egg, milk and vanilla by hand until about smooth. There will be some lumps, that's okay. Remove pan with butter from the oven and pour batter into the hot butter - it will spread out on its own.
- 3. Using a slotted spoon, scoop out peach slices and place into batter, spreading all around the pan. After all of the peaches have been added drizzle about half of the remaining peach juice over the top of the batter then sprinkle the top with cinnamon. Bake at 350* for 1 hour.
- 4. The batter will rise up and surround the peaches during the baking process. Serve warm with ice cream or whipped cream if desired. Enjoy!

- Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
- Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
- Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.

This is the BEST peach cobbler EVER! It's my MomMom's recipe that I adapted. To me, the ideal peach cobbler has lots of lightly sweet biscuit topping & plenty of peaches. This is perfect! The brown sugar, butter, & vanilla give the peaches a delightful & sweet flavor, while the lemon juice provides the perfect balance. It's the only cobbler I've ever had that's so good alone it doesn't even need ice cream. (Not that it's not AMAZING with ice cream or whipped cream!) - Let's get this party started! Preheat oven to 400 degrees.
- For Peaches: Whisk in a medium bowl, 1/2 stick melted butter, brown sugar, lemon juice, vanilla, flour, and a dash of cinnamon. Then stir in the 2 cans of peaches (drain the syrup from 1 can only), mixing well & tossing to coat peaches evenly. Spread in bottom of lightly greased 9x13 pan or large casserole dish. Sprinkle a dash of cinnamon on top.
- For Topping: Mix in medium bowl, Bisquick, sugar, remaining 1/2 stick melted butter, & milk. Dough will be sticky. Drop by rounded Tbsp. over top peach mixture. Generously sprinkle brown sugar + a dash of cinnamon on top.
- Bake in 400 degree oven for 40-45 min. (Time really just depends on your oven, could be longer or shorter). You will probably need to cover with foil halfway or three quarters through baking time so top doesn't burn. Cobbler is done when top is golden brown & toothpick inserted all the way through topping in the center of cobbler comes out clean with just a few crumbs. I always check with the toothpick in a few different spots just to be sure biscuit topping is done. Check on cobbler periodically. If you find that your topping is nicely browned, but is still partially raw in the middle, just cover top with foil and bake until middle is done. This will stop the top from browning too much. Definitely keep an eye on it because I do usually have to cover mine with foil as the top does get done before the center. Sprinkle white granulated sugar on top when it first comes out of oven if desired.
- FOR FRESH or FROZEN PEACHES (I highly recommend using FRESH peaches if u can; it's delicious!): You'll need 7 & 1/4 cups of peeled, pitted, & sliced peaches. That's about 10 medium sized peaches. Place peaches in a saucepan on stovetop on medium heat & add the brown sugar, flour, lemon juice, vanilla, cinnamon, 1/2 stick butter, & 1/4 cup water. Bring to a boil, stirring often, then lower heat to a simmer. This step brings out & thickens their juices. I usually add some extra brown sugar in with fresh peaches too; use your judgement depending on how sweet they are. Simmer for about 5-10 min until juices thicken into a nice syrup. Then spread peaches in bottom of baking dish & continue with topping part of recipe. I've even used a combination of fresh & canned peaches when I didn't have quite enough fresh ones with fabulous results.
