SOUTHERN-STYLE INDIVIDUAL PEACH COBBLERS
For a ten-inch cake, melt two teaspoons butter in the skillet before adding batter; bake for thirty-five minutes.

Steps:
- Preheat oven to 400 degrees. In a large bowl, toss peaches with 1/4 cup sugar and 1/2 teaspoon cinnamon; set aside. In a medium bowl, whisk together flour, baking powder, salt, remaining 3/4 cup sugar, and remaining 1/2 teaspoon cinnamon. In another bowl, whisk 4 tablespoons melted butter with milk and egg. Whisk butter mixture into flour mixture.
- Melt 1 teaspoon butter in a 6-inch ovenproof skillet over medium heat. Once skillet is hot, remove from heat. Pour one-quarter of batter into skillet. Spread batter evenly over bottom. Spoon one-quarter of peach mixture over batter. Repeat with remaining three skillets. Transfer to oven, and bake until cobblers set, 25 to 30 minutes. Remove from oven; let cool slightly. Serve warm in skillets.
FRESH SOUTHERN PEACH COBBLER
I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

- In a small saucepan, combine cornstarch and water until smooth; stir in peaches. Bring to a boil; cook and stir for 1 minute or until thickened. Pour into two greased 8-oz. custard cups., In a small bowl, combine biscuit mix and sugar; stir in milk and oil just until moistened. Drop by teaspoonfuls over hot peach mixture. Bake, uncovered, at 400° for 18-22 minutes or until topping is golden brown. Serve warm with ice cream.

I have not tried this recipe. I got this recipe from Spark People's recipe section the recipe was submitted by HOOTOWLRN. Makes 4 servings at less than 100 calories each even with the whip topping! I'm posting this for future use.

- Drain and seperate peaches into 4 individual dessert cups that are oven safe. Mix egg, bisquick, skim milk and Splenda together in a small bowl until well mixed then pour 1/4 of mixture over top of each cup of peaches.
- Bake at 400 degrees for approx 15 minutes or until the topping is brown.
- Can be served cool or hot. If desired, cool and top with a tsp of fat free cool whip.
- This is so easy to make and I do it in stemmed clear dessert cups, cool and top with the cool whip. Not only does it taste wonderful but it looks like you spent a long time making it!

- Heat oven to 400 degrees Fahrenheit. Butter four 6-ounce custard cups.
- Prepare filling: Combine peaches, sugar, almond extract, ginger, cinnamon, and salt in a large bowl. Spoon mixture into custard cups.
- Prepare topping: Stir together flour, baking powder and salt in a medium-size bowl. Cut in shortening with a pastry blender or 2 knives used scissor fashion until mixture resembles coarse crumbs. Stir in milk until mixture comes together, adding more milk, a tablespoon at a time, if necessary. Spoon topping evenly over peach filling. Sprinkle tops with sugar. Place custard cups on a baking sheet.
- Bake in a 400 degree oven 20 minutes or until filling is bubbly and crust is golden. Tent with foil if tops begin to brown to quickly. Serve warm or at room temperature.
