SPICY GARLIC EDAMAME
This spicy garlic edamame is ready like a flash perfect for your spicy cravings. It's a delectable munching, very addictive, vegan appetizer or snack.

Steps:
- In a pan add water and bring it to boil.
- Add edamame and cook for about 2 minutes or it cooked completely.
- Strain and discard the water.
- In the same pan, add the vegetable oil and the minced garlic.
- Saute until the garlic changes its color slightly.
- Add chili garlic sauce, sesame seeds, and the steamed edamame.
- Toss well and serve immediately.

SPICY EDAMAME (SOY BEANS)
Steps:
- Gather the ingredients.
- Cook frozen edamame (in their shells) in boiling water for 5 minutes.
- Rinse quickly with cold water. Drain completely. Set aside, and allow edamame to dry off slightly. Use a paper towel if necessary to remove excess water.
- In a large pan, heat sesame oil and chopped garlic over medium heat until fragrant.
- Add Japanese rayu (chili oil) and cooked edamame (in their shells). Quickly stir-fry, then turn off heat.
- Add shichimi togarashi (7-spice chili peppers) and salt. Gently toss.
- Serve spicy edamame on a platter and garnish with red chili pepper flakes.

Edamame are fun to eat, the slightly fuzzy bright-green pods tickle your lips as you gently suck the beans into your mouth. Provide bowls for the empty pods.

- Toast salt in a dry, small, heavy skillet over moderate heat, stirring, until salt turns light tan, about 7 minutes. Transfer salt to a bowl. Toast Sichuan peppercorns in skillet over moderate heat, stirring, until fragrant, about 2 minutes. Transfer toasted peppercorns to a sheet of wax paper to cool. Using paper as a funnel, pour toasted peppercorns into an electric coffee/spice grinder or a mortar. Add pink peppercorns and pulse or pound with a pestle until finely ground. Pour through a coarse sieve into bowl of salt and stir together.
- Cook edamame in 4 batches in salted boiling water until tender, about 4 minutes, and immediately transfer with a slotted spoon to a bowl of ice and cold water to stop cooking. Return water to a boil between batches. Drain in a colander and pat dry.
- Toss edamame with some peppered salt to taste and serve with remainder on the side.
CURRIED PEPPERS AND EDAMAME
Serve this elegant skillet dinner made using jasmine rice, assorted bell peppers, soybeans, cashews and coconut milk - ready in just 20 minutes! Perfect if you love Indian cuisine.

- In a 2-quart saucepan, heat the rice and 1 cup water to boiling over high heat. Reduce heat to medium. Cover with lid; simmer 15 to 20 minutes or until the water has been absorbed and the rice is tender. (Keep the lid on the pan until the rice has cooked 15 minutes before checking if the water has been absorbed. The steam of the simmering water is necessary for the rice to cook.)
- Meanwhile, peel and finely chop the garlic. Cut each bell pepper in half lengthwise, and cut out seeds and membrane. Cut each half into 1/2-inch strips, then cut the strips crosswise in half to measure 3 cups.
- Peel the onion, and cut in half lengthwise. Place each half, cut side down, on cutting board; cut lengthwise into thirds, then cut crosswise into thirds to make about 1-inch chunks.
- In a 12-inch nonstick skillet, heat the oil over medium-high heat. Add the curry powder; cook 1 minute, stirring constantly to prevent scorching and to develop the flavor. Stir in the garlic, bell peppers, onion, edamame, salt and 1/4 cup water (add water last so it doesn't spatter). Cook 2 minutes, stirring frequently and scraping bottom of skillet to mix curry powder with vegetables. Cover with lid; cook about 4 minutes longer or until vegetables are tender.
- Open the can of coconut milk, and stir the milk with a fork or wire whisk until it is smooth and creamy. Measure 1 cup coconut milk, and stir into vegetable mixture. Reduce heat to medium-low. Simmer uncovered about 2 minutes, stirring occasionally, until hot. Pour remaining coconut milk into storage container; cover and refrigerate for another use.
- Serve over rice and sprinkle with cilantro and cashews.
