Time 2h23m

Yield 12

Number Of Ingredients 15

9 tablespoons unsalted butter, room temperature
¾ cup white sugar
1 teaspoon vanilla extract
2 eggs
1 ½ cups sifted self-rising flour
½ cup milk
1 cup confectioners' sugar
1 tablespoon unsalted butter, room temperature
1 tablespoon milk
1 drop brown food coloring
6 vanilla wafer cookies (such as Nilla®)
12 red jelly beans
24 candy eyeballs
24 chewy chocolate-flavored candy (such as Tootsie Roll®)
24 pretzels

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  • Combine 9 tablespoons butter, white sugar, and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add eggs one at a time and beat until well combined. Fold in half the flour and 1/4 cup milk and stir to combine. Repeat with remaining flour and milk. Spoon batter into the prepared muffin cups, filling each 3/4 full.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 18 minutes.
  • Remove tin from oven and cool on a wire rack for 5 minutes. Remove cupcakes from the tin and cool completely on a wire rack before decorating, about 1 hour.
  • Combine confections' sugar, 1 tablespoon butter, and 1 tablespoon milk in a large bowl; beat with an electric mixer until smooth and creamy. Thin frosting with a little milk or water, if necessary. Add food coloring and stir until frosting is uniformly brown. Add more food coloring, 1 drop at a time, until frosting is the color you like.
  • Spread a thin layer of frosting on top of each cupcake. Break vanilla cookies in half. Place a cookie half on each cupcake as a mouth. Use a bit of frosting to "glue" a jelly bean onto the cookie for Rudolph's red nose. Stick 2 candy eyeballs into each cupcake. Break off a piece from each pretzel so they look like antlers and stick 2 into the top of each cupcakes. Shape chewy candies into ears and stick 2 into the sides of each cupcake.

Time 55m

Yield 12 cupcakes

Number Of Ingredients 20

1 box white cake mix
1/2 teaspoon peppermint extract
White cranberry juice
1 container white icing
4 cupcakes
Royal icing, recipe follows
4 blue colored candy canes, "U" shape broken off to make a "cup handle" and straight part broken into small pieces
1/2 container white icing
6 large marshmallows
4 small thin pretzel sticks or tooth picks
Cake decorating dots
Orange slice jelly candy, cut into ting wedges for the nose
4 large yogurt covered pretzels
8 blue candy covered chocolates or blue jelly beans
Fruit roll-up (recommended: Fruit by the Foot)
4 red gum drops
2 large egg whites or 5 tablespoons meringue powder
2 teaspoons fresh lemon juice or 1 teaspoon vanilla extract
3 cups confectioners' sugar, sifted
Food coloring, if desired

Steps:

  • For the cupcakes:
  • Bake according to package instructions for cupcakes, adding 1/2 teaspoon peppermint extract to batter and substituting white cranberry juice for water.
  • For the Peppermint White Hot Chocolate "CUP" cakes:
  • Fill a zip top bag with icing. Snip a small corner of the bag and pipe icing onto each cupcake to look like whipped cream on top of the "cup".
  • To add peppermint "handle" for the "cup":
  • Poke a small hole in the side of each cupcake using a chopstick or tooth pick and fill the hole with royal icing. Insert one end of the "U" shape candy cane piece into hole and the other end into the icing to make your "cup" cake. Sprinkle with crushed candy cane pieces.
  • For the Snowman Cupcakes:
  • Using a butter knife or spatula, lightly frost the cupcakes.
  • Flatten a large marshmallow on waxed paper with the palm of your hand. Cut a second marshmallow in half horizontally, then stack the first half flat on the first marshmallow to form a torso then the second on it's side for a head. Thread a pretzel stick or toothpick through the bottom to secure marshmallows and stick into cupcake top.
  • Use royal icing to attach cake decorating dots as eyes and buttons. Add a wedge cut from an orange slice candy for a nose.
  • For the Reindeer Cupcakes:
  • Using a butter knife or spatula, lightly frost each cupcake.
  • Break the pretzels in half, and insert into the top of each cupcake for antlers. Use blue candy covered chocolates to make eyes. Cut fruit by the foot to make a mouth and place the red gumdrop in the center for the nose.
  • With a hand mixer, beat the egg whites with the lemon juice or extract until frothy. Add the sifted powdered sugar and beat on low speed until combined, smooth, and shiny. Turn to high and beat approximately 5 minutes until stiff and glossy. Add food coloring, if desired, and transfer to a pastry bag to pipe onto cookies or cakes.;

Get the kids into the kitchen to decorate these individual Christmas chocolate cupcakes with frosting and sweets

Categories     Dessert

Time 1h5m

Yield Makes 12

Number Of Ingredients 14

200g butter , cubed
200g plain chocolate , broken into squares
200g light soft brown sugar
2 large eggs , beaten
1 tsp vanilla extract
250g self-raising flour
200g plain chocolate , broken into squares
100ml double cream , not fridge-cold
50g icing sugar
12 large milk chocolate buttons (we used Cadbury Dairy Milk Giant Buttons)
24 white chocolate buttons
12 red Smarties
black icing pens
mini pretzels , carefully cut in half horizontally

Steps:

  • Get started: Heat oven to 160C/140C fan/gas 3. Line a 12-hole muffin tin with paper cases. Gently melt the butter, chocolate, sugar and 100ml hot water together in a large saucepan, stirring occasionally. Set aside to cool a little while you weigh the other ingredients.
  • Make your cakes: Stir the eggs and vanilla into the chocolate mixture. Put the flour in a large mixing bowl, and stir in the chocolate mixture until smooth. Spoon into the cases until just over three-quarters full. Bake on a low shelf in the oven for 20-22 mins. Leave to cool.
  • Ice the tops: To make the icing, melt the chocolate in a heatproof bowl over a pan of barely simmering water. Once melted, turn off the heat, stir in the double cream, sift in the icing sugar and mix well. When spreadable, top each cake with some icing.
  • Have fun decorating: Position a milk chocolate button on top of each cake, then 2 white chocolate buttons above it. Use a little icing as glue to stick a red Smartie onto the milk chocolate button for a nose. Then use your icing pens to draw black dots on the white buttons for eyes. Stick 2 pretzel top halves into the top of each cake for antlers, and stick the bottom half of a pretzel under the Smartie for a mouth. These cakes will keep in a sealed container for up to 3 days, but we doubt they'll last that long!

  • Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 2 liners – this recipe makes about 14 cupcakes. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy, about 1 minute. Add the sugar and beat on high speed for 2 minutes until creamed together. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the egg whites, vanilla extract, and peppermint extract. Beat on medium-high speed until combined, then beat in the sour cream. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, slowly pour in the milk until combined. Do not overmix. You may need to whisk it all by hand to make sure there are no lumps at the bottom of the bowl. The batter will be slightly thick.
  • Pour/spoon the batter into the liners – fill only 2/3 full to avoid spilling over the sides. Bake for 19-22 minutes, or until a toothpick inserted in the center comes out clean. For around 30 mini cupcakes, bake for about 11-13 minutes, same oven temperature. Allow the cupcakes to cool completely before frosting.
