4 cups half-and-half cream
7 ounces white baking chocolate, chopped
2 ounces milk chocolate, chopped
1/4 to 1/2 teaspoon red food coloring
1/4 to 1/2 teaspoon peppermint extract
Dash salt
Optional: Sweetened whipped cream, candy canes and marshmallows

Steps:

  • In a large saucepan, heat cream over medium heat until bubbles form around sides of pan (do not boil). Remove from the heat; whisk in the chocolates, food coloring, extract and salt until smooth. Return to the heat; cook and stir until heated through. Pour into mugs; top with whipped cream, candy canes and marshmallows.

3 drops peppermint oil
Sweetened whipped cream, for garnish
Chocolate shavings, for garnish

Steps:

  • In a saucepan, combine the cream, milk, sugar, and salt and heat over medium-low heat. When the cream mixture just begins to steam, add the chopped chocolate, and stir, until melted. Stir in the peppermint oil. Divide the hot chocolate among mugs and top with whipped cream and chocolate shavings.

1 cup sugar
1 large egg, room temperature
4 teaspoons red food coloring
1 teaspoon peppermint extract
2-1/2 cups all-purpose flour
3 tablespoons baking cocoa
1 teaspoon baking powder
1/4 teaspoon salt
2 cups white baking chips
2 teaspoons canola oil
1/4 cup crushed peppermint candies

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg, food coloring and extract. In another bowl, whisk flour, cocoa, baking powder and salt; gradually beat into creamed mixture., Shape dough into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle., Bake 9-11 minutes or until set. Remove from pans to wire racks to cool completely., In a microwave, melt baking chips with oil; stir until smooth. Spoon a scant teaspoon filling into each cookie. Drizzle tops with remaining mixture. Sprinkle with peppermint candies. Let stand until set.

1/2 cup marshmallow creme
1 teaspoon pure vanilla extract
2 cups whole, 2-percent or skim milk
1 cup chopped best-quality semisweet chocolate
2 tablespoons best-quality Dutched cocoa powder, such as Valhrona
1 teaspoon red food coloring
1 teaspoon pure vanilla extract

Steps:

  • For the whipped cream: Whip the cream and cream cheese until soft peaks form. Fold in the marshmallow creme and vanilla.
  • For the hot chocolate: Bring the milk to a simmer in a small pot. Add the chocolate and cocoa powder and cook, stirring, until smooth. Add the food coloring and vanilla and mix until combined. Whisk the mixture until very frothy. Pour into cups and top with large dollops of marshmallow whipped cream.

1 teaspoon baking soda
1 package (11-1/2 ounces) milk chocolate chips
1 cup marshmallow creme
1 cup finely crushed peppermint candies

Steps:

  • Cream butter and sugar in a large bowl until light and fluffy. Beat in egg and extract. Combine the flour, cocoa powder, salt and baking soda; gradually add to creamed mixture and mix well., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until tops are cracked. Remove to wire racks to cool completely., In a microwave, melt chocolate chips; stir until smooth. Drop a teaspoonful of marshmallow creme into the center of each cookie. Dip half of each cookie into melted chocolate; allow excess to drip off. Immediately sprinkle with candies. Place on waxed paper and let stand until set. Store in an airtight container.
