1 cup sugar, divided
1 sheet frozen puff pastry, thawed

Steps:

  • Preheat oven to 425°. Sprinkle a surface with 1/4 cup sugar; unfold puff pastry sheet on surface. Sprinkle with 2 tablespoons sugar. Roll into a 14x10-in. rectangle. Sprinkle with 1/2 cup sugar to within 1/2 in. of edges. Lightly press into pastry., With a knife, very lightly score a line crosswise across the middle of the pastry. Starting at a short side, roll up jelly-roll style, stopping at the score mark in the middle. Starting at the other side, roll up pastry jelly-roll style to score mark. Freeze until firm, 20-30 minutes. Cut into 3/8-in. slices., Place cut side up 2 in. apart on parchment-lined baking sheets; sprinkle lightly with 1 tablespoon sugar. Bake for 8 minutes. Turn pastries over and sprinkle with remaining sugar. Bake until golden brown and glazed, about 3 minutes longer. Remove to wire racks to cool completely. Store in airtight containers.

1 sheet frozen puff pastry, thawed
1-1/2 cups crushed peppermint candies
10 ounces milk chocolate candy coating, coarsely chopped

Steps:

  • Preheat oven to 400°. Unfold pastry sheet. Cut in half to form 2 rectangles. Cut each rectangle crosswise into 18 strips, about 1/2 in. wide. Place on ungreased baking sheets. Bake until golden brown, 12-15 minutes. Remove from pans to wire racks to cool completely., Place crushed candies in a shallow bowl. In a microwave, melt candy coating; stir until smooth. Dip each cookie halfway in coating; allow excess to drip off. Sprinkle with peppermint candies. Place on waxed paper; let stand until set. Store in an airtight container.

3-3/4 cups confectioners' sugar
3 tablespoons butter, softened
2 to 3 teaspoons peppermint extract
1/2 teaspoon vanilla extract
1/4 cup evaporated milk
2 cups semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In a large bowl, combine the first 4 ingredients. Add milk and mix well. Roll into 1-in. balls and place on a waxed paper-lined baking sheet. Flatten with a glass to 1/4-in. thickness. Cover and freeze for 30 minutes. , Microwave chocolate chips and shortening on high until melted; stir until smooth. Dip patties, allowing excess to drip off. Place on waxed paper; let stand until set.

Beat until combined, scraping sides of bowl occasionally. Beat in egg, the 2 tablespoons crème de menthe, milk, and vanilla. Beat in as much of the 2-3/4 cups flour as you can with the mixer. Using a wooden spoon, stir in any of the remaining 2-3/4 cups flour. Divide dough in half. Cover and chill about 3 hours or until dough is easy to handle.
  • Meanwhile, for filling, in a medium mixing bowl beat cream cheese, powdered sugar, the 1/4 cup flour, and the 1 tablespoon crème de menthe on low to medium speed until smooth. Stir in enough red food coloring to tint filling pale pink. Gently fold in crushed candies. Cover and chill for up to 2 hours. (Be sure not to chill longer than 2 hours or the candies will bleed into the filling and the filling will become too soft and sticky.)
  • On a lightly floured surface, roll half of the dough into a 12x8-inch rectangle. Spread half of the filling over rolled dough rectangle to within 1/2 inch each long edge. Roll up both long edges, scroll fashion, to meet in the center. Brush seam where dough spirals meet with water; lightly press together. Repeat with the remaining dough and filling. Wrap each roll in plastic wrap; place on a tray or cookie sheet. Freeze 4 to 24 hours or until firm.
  • Preheat oven to 350°F. Line a cookie sheet with parchment paper; set aside. Using a serrated knife, cut rolls into 1/4-inch slices. Place slices 2 inches apart on the prepared cookie sheet. Bake about 10 minutes or until edges are firm and bottoms are light brown. Transfer cookies to a wire rack; cool.
