CHICKEN CHILES RELLENOS ALFREDO
This recipe combines my daughter's love of chiles rellenos and my love of chicken Alfredo! To cut down on the spice level you could substitute Monterey Jack cheese for the pepper jack. —Jennifer Stowell, Smithville, Missouri

- Cook angel hair according to package directions. Drain., Meanwhile, sprinkle chicken with garlic powder, cilantro and cumin. In a large nonstick skillet, cook and stir chicken over medium heat until no longer pink, 6-8 minutes. Remove., In same skillet, melt butter. Stir in heavy cream, cream cheese and lime zest until combined, 4-6 minutes. Stir in pepper jack until melted. Add chiles and lime juice. Return chicken to skillet; heat through. Toss chicken mixture with pasta.

- In a medium saucepan, melt butter on medium heat. Be sure not to let it get brown! Shred your Pepperjack cheese while you're waiting for it to melt (if applicable).
- Once butter is mostly melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.
- Once butter and cream cheese are mixed well together, add the cup of milk, Pepperjack cheese, garlic powder, and then shake pepper, Italian seasoning, and basil on top. Stir all together until well mixed.
- Put it on low heat and stir regularly. If you're going to be serving this dish with chicken, put the chicken in the sauce and stir it inches.

- In a medium bowl or large measuring cup, whisk the cream and egg yolk together until combined; set aside.
- In a medium saucepan, heat the butter over medium-high. Add the garlic and sauté until fragrant and sizzling, about 2 minutes. Pour the cream mixture into the garlic butter, reduce heat to medium and cook, stirring frequently, until mixture is hot but not boiling, about 5 minutes.
- Whisk in the Parmesan little by little, and cook over medium, whisking frequently, until creamy and thickened, 3 to 5 minutes. Season to taste with pepper.
