Steps:
- Preheat the oven to 450˚ F. Put the potatoes on a microwave-safe plate and microwave, turning the potatoes halfway through, until just tender, 6 to 8 minutes. Meanwhile, heat 1 tablespoon olive oil in a medium ovenproof skillet over medium-high heat. Add the onion, thyme, a pinch of salt and a few grinds of pepper. Cook, stirring occasionally, until the onion is browned, 3 to 4 minutes. Remove from the heat and stir in 2 tablespoons water.
- Slice the potatoes and tomatoes into 1/4-inch-thick rounds. Gently toss together in a bowl with 2 tablespoons olive oil; season with salt and pepper. Place in overlapping layers on top of the onion (it doesn't have to be neat). Transfer the skillet to the oven and bake until the potatoes are soft and the tomatoes are wrinkled and dry, about 25 minutes.
- Meanwhile, season the steaks on both sides with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the steaks and cook 5 to 6 minutes per side for medium rare. Remove to a cutting board and let rest, 5 minutes.
- Finely chop the olives and parsley; toss with the remaining 1 tablespoon olive oil, the vinegar, orange zest and a pinch of salt. Slice the steak against the grain and divide among plates; top with the olive-parsley relish and serve with the roasted vegetables.

PEPPER STEAK AND POTATOES
This is a nice all-in-one meal that uses the microwave to help get it on the table quickly. If you can't find garlic pepper, use 1 1/2 teaspoon each garlic powder and pepper.

ONE-PAN POTATOES AND PEPPER STEAK
I found this recipe a long time ago in a magazine in a laundry mat and tore it out. The page is so old and creased and faded that I can't hardly read it anymore. It is a delicious and easy one pan meal for a fast dinner.

PEPPER STEAK WITH POTATOES
Often, I read my collection of cookbooks and try something new when I'm not trying something new from Zaar that is. This is from the 2003 Quick Cooking Annual Cookbook and I had to try it only for the fact that pepper steak with potatoes sounded interesting. It is pretty good. I think any cut of steak you could thinly slice will do here. It's a nice family meal.

POTATOES AND PEPPERS
This dish is a classic: Easy, filling, and very tasty! I served it as a side with grilled shrimp and corn on the cob and it was a huge hit. Would also be good at breakfast instead of hash browns.

- Freeze steak for 15 to 20 minutes, just until the outside is chilled but the steak is not frozen solid. This will make it easier to slice the steak thinly.
- Meanwhile, in a medium bowl, combine honey, brown sugar, vinegar, soy sauce, black pepper, and sesame oil. Measure out 1/4 cup of this sauce and pour it into a large zipper-top plastic bag or glass bowl for marinating the meat. Reserve the remaining sauce for the stir-fry.
- Remove the steak from the freezer and slice thinly against the grain. Add the steak to the large plastic bag or bowl with the marinade and marinate at room temperature at least 10 minutes or up to 1 hour.
- Remove the steak from the plastic bag, discarding the marinade, and pat dry with paper towels. Heat 1 Tablespoon oil in a large skillet over medium-high heat until shimmering. Season half the meat with ¼ tsp salt, add to the skillet in a single layer, and cook for 1 minute without stirring, until browned on one side.
