SPICY PEPPER JACK MAC AND CHEESE



Spicy Pepper Jack Mac and Cheese image

Spicy Pepper Jack Mac and Cheese. A fun twist on the original made in less than 15 minutes!

Number Of Ingredients 14

2 cups Cavatappi pasta (uncooked)
1 tablespoon unsalted butter
1 tablespoon all purpose flour
1 cup milk
1/2 cup pepper jack cheese (shredded)
3/4 cup cherry tomatoes (quartered)
1 teaspoon jalapeno (minced)
1 teaspoon Tabasco
1/8 teaspoon cayenne pepper
1/2 tsp ground mustard
1/2 tsp Worcestershire sauce
1/2 tsp garlic powder
salt and pepper, to taste
fresh parsley chopped for garnish

Steps:

  • Boil pasta until al-dente.
  • Meanwhile add butter to a small saucepan. Heat until melted.
  • Stir in flour and whisk constantly for 1-2 minutes.
  • Add milk and simmer whisking constantly for another 3-4 minutes until thick.
  • Take off of the heat and whisk in cheese until fully melted.
  • Stir in tomatoes, jalapeno, Tabasco, cayenne pepper, ground mustard, Worcestershire sauce and garlic powder. Season with salt and pepper to taste.
  • Pour cheese sauce over the cooked noodles and toss to combine.
  • Serve with a sprinkle of parsley for garnish and serve immediately!

20 ounces Simply Macaroni & Cheese
1 lb ground turkey
2 cups corn and black bean salsa
1 -2 cup monterey jack pepper cheese, shredded
1 -2 teaspoon ground cumin

Steps:

  • Fix Simply Potatoes Mac and Cheese according to directions.
  • In a large skillet, brown ground turkey on medium high to high heat until no longer pink.
  • Lower heat to low/medium low, add salsa and ground cumin (add cumin to your own taste) and simmer for about 10 to 15 minutes.
  • Add Simply Potatoes Mac and Cheese to turkey mixture and stir.
  • Add in one cup of pepper jack cheese, stir until melted.
  • Once pepper jack is melted, if desired add remaining cheese in small amounts until desired consistency and all pepper jack is melted.
  • Optional: Salt to taste.

2 cups uncooked elbow macaroni
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/2 teaspoon pepper
1/2 teaspoon Worcestershire sauce
1-1/2 cups milk
1/2 cup heavy whipping cream
3 cups shredded pepper Jack cheese
1 package (8 ounces) cream cheese, cubed
1 cup shredded sharp cheddar cheese
1/2 cup shredded Asiago cheese
TOPPING:
3/4 cup panko bread crumbs
4 bacon strips, cooked and crumbled
1/4 cup grated Parmesan cheese
1 cup cheddar french-fried onions, crushed

Steps:

  • Cook macaroni according to package directions; drain and set aside., In a large saucepan, melt butter over medium heat. Stir in the flour, salt, mustard, pepper and Worcestershire sauce until smooth; gradually add milk and cream. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Stir in cheeses until melted. Stir macaroni into cheese mixture., Transfer to a greased 2-qt. baking dish. Sprinkle with bread crumbs, bacon, Parmesan cheese and onions. Bake, uncovered, at 350° for 20-25 minutes or until bubbly and golden brown.
