This is a very old recipe from a very old and wonderful Grange Cookbook from some of the best cooks and bakers in Pennsylvania. My Grandmother was a fantastic baker, but I like this recipe even more than hers----sorry Grandma... The buttermilk adds such richness. My family loves this toasted for breakfast.

Number Of Ingredients 10

2 1/2 cups white sugar
1 cup shortening
3 eggs
1 1/2 cups mashed bananas
3 cups unbleached flour
1 1/4 cups buttermilk
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon vanilla
1/2 cup pecan pieces or 1/2 cup walnut pieces

Steps:

  • Cream sugar and shortening.
  • Add eggs one at a time and then add the mashed bananas and vanilla.
  • Add dry ingredients alternately with the buttermilk and chopped nuts.
  • Put batter in 2 greased and floured 9x5 inch loaf pans and bake at 350 degrees for 45 - 50 min., or until a wooden toothpick comes out clean when inserted.
  • Cool for 10 min., then remove from pans.
  • Slice when cold.
  • Keeps moist when tightly wrapped.
  • Freezes well.
  • Delicious toasted!

Banana Nut Bread image

The very best recipe for an easy, moist loaf of homemade Banana Nut Bread!

Number Of Ingredients 11

1 ½ cups all-purpose flour
Pinch of nutmeg
Pinch of cinnamon
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups mashed banana ((about 3 large or 4 medium very ripe bananas))
6 tablespoons salted butter, melted and slightly cooled
¾ cup sugar
1 egg
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°F. Grease an 8½ x 4½-inch loaf pan and set aside.
  • In a medium bowl, sift or whisk together flour, nutmeg, cinnamon, baking soda and salt. Set aside.
  • In a separate large bowl, whisk together mashed banana, melted butter, sugar, egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the walnuts.
  • Pour batter into prepared loaf pan. Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, about 50-60 minutes. Do not overbake.
  • Remove from the oven, unmold from the pan, and cool completely on a wire rack before slicing and serving.
