12 ounces penne
2 pounds leeks
1 red bell pepper, cut into strips
1/4 cup chicken broth
2 tablespoons lemon juice
1 tablespoon olive oil
2 teaspoons dried thyme, crushed
1/4 teaspoon freshly ground black pepper
1 yellow summer squash, halved and cut into 1/4" slices
1/4 cup pitted kalamata olives
1 salmon fillet (1/2 pound, skinned)

Steps:

  • Preheat the oven to 400°F. Prepare the pasta according to package directions.
  • Meanwhile, cut the leeks into 2" lengths and quarter them lengthwise. Rinse the leeks completely. Place the leeks and bell pepper in a 13" x 9" baking dish. Add the broth, lemon juice, 2 teaspoons of the oil, thyme, and black pepper. Cover with foil and bake for 15 minutes.
  • Add the squash, olives, and salmon to the baking dish and drizzle with the remaining 1 teaspoon oil. Cover and bake for 30 minutes, or until the salmon is opaque and the vegetables are tender.
  • Place the penne in a large serving bowl. Break the salmon into bite-size pieces and add to the penne with the vegetables.

4 salmon fillets
extra virgin olive oil, for rubbing
juice from 1 lemon
1 teaspoon red pepper flakes
1 teaspoon paprika
kosher salt and pepper
1 large head of broccoli, cut into florets
1 cup cherry tomatoes
2 cloves garlic, minced or grated
2 tablespoons chopped fresh oregano
zest from 1 lemon
splash of white wine
1/2 cup pitted kalamata olives

Steps:

  • 1. Heat a drizzle of olive oil in a large skillet over medium high heat. 2. Rub the salmon all over with olive oil and lemon juice. Sprinkle with chili flakes, paprika, salt, and pepper. Place flesh side down in the skillet and sear until crisp and just beginning to caramelize, about 2-3 minutes. Flip and cook 1 minute more or until your desired doneness is reached. Remove the salmon from the skillet. 3. Add another drizzle of oil to the pan, add the broccoli and cook until tender, about 5 minutes. Add the tomatoes, garlic, oregano, lemon zest, salt and pepper and cook until the tomatoes begin to burst, about 5 minutes. Remove from the heat and add a splash of wine to create a sauce. Add the olives and slide the salmon back into the skillet to warm throughout. 4. Serve the salmon with a side of veggies and any sauce left in the skillet. Garnish with fresh oregano.

Shake yourself out of a pasta rut with this simple, supremely flavorful recipe for penne with salmon. While the noodles cook in their own pot, you'll sauté juicy cherry tomatoes with garlic and then steam the salmon right in the same pan. The result is a fresh and flavorful seafood dinner that comes together in under 30 minutes.

12 ounces penne or other short pasta
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon red-pepper flakes, plus more for serving
1 pound yellow cherry or Sungold tomatoes, halved
1/2 cup dry white wine, such as Sauvignon Blanc
4 skinless wild-salmon fillets (1 pound), preferably Alaskan
1/2 cup grated Pecorino Romano
Chopped fresh parsley, for serving

Steps:

  • Cook pasta in a pot of salted boiling water 1 minute less than per package directions. Reserve 1 cup pasta water; drain. In a large straight-sided skillet over medium-high heat, melt 2 tablespoons butter.
  • Add garlic and red-pepper flakes; cook 30 seconds. Add tomatoes and wine; bring to a boil. Cook until tomatoes burst and liquid is slightly reduced, 6 to 7 minutes. Season fish with salt and pepper; nestle into skillet. Cover, reduce heat to medium, and cook until just opaque, 4 to 5 minutes. Transfer fish to a plate.
  • Add pasta, cheese, and remaining 1 tablespoon butter to skillet with tomatoes; stir over low heat, adding reserved pasta water as needed to create a sauce. Season to taste. Serve with fish, parsley, and more red-pepper flakes.

3/4 lb penne rigate or 3/4 lb other ridged tubular pasta
1/4 cup extra virgin olive oil
1 lb skinless center-cut salmon fillet
salt & freshly ground black pepper
2 garlic cloves, thinly sliced
1/2 teaspoon crushed red pepper flakes
1 pint grape tomatoes
1/4 cup kalamata olive, pitted and coarsely chopped
1 tablespoon drained capers, rinsed and coarsely chopped
1/4 cup finely shredded basil leaves

Steps:

  • In a large pot of salted boiling water, cook the pasta until it's barely al dente.
  • Drain, reserving 1 1/4 cups of the cooking water.
  • Meanwhile, in a very large skillet, heat 2 tablespoons of the olive oil.
  • Season the salmon with salt and pepper, add it to the skillet and cook over high heat until browned on both sides but not cooked through, about 6 minutes.
  • Transfer the salmon to a plate and pour off the oil in the skillet.
  • Add the remaining 2 tablespoons of oil to the skillet along with the garlic and crushed red pepper.
  • Cook over moderate heat until the garlic is lightly browned in spots, about 30 seconds.
  • Add the tomatoes and cook until just softened, 2 to 3 minutes.
  • Add 1 cup of the reserved pasta cooking water and bring to a boil, gently crushing the tomatoes.
  • Add the pasta, olives and capers and cook over moderate heat, stirring, until the liquid is slightly absorbed, about 2 minutes.
  • Add the salmon to the skillet and break it up into chunks.
  • Cook, tossing, until the salmon is nearly cooked through and the pasta is al dente, about 2 minutes; add more of the pasta cooking water if the sauce is dry.
  • Stir in the basil, transfer the pasta to bowls and serve.

This recipe was inspired after I ordered the delicious Salmon at Hard Rock Cafe. I was so impressed that I created a recipe of my own!

1/2 cup butter
3 minced garlic cloves
1/2 teaspoon olive oil
1/4 teaspoon black pepper
1/2 teaspoon minced parsley
1/4 teaspoon oregano
1/2 cup butter
1/2 cup light cream
1 egg yolk
1 cup parmesan cheese, grated
1 tablespoon minced parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 lb penne pasta
12 leaves fresh spinach
1/2 small tomatoes
1 lb salmon

Steps:

  • Garlic Butter (steps 1 - 6):.
  • Completely soften 1/2 cup of butter (1 stick).
  • Melt butter and olive oil in a small saucepan.
  • Sauté minced garlic approximately three minutes until just cooked.
  • Combine garlic/butter mixture with the rest of the garlic butter ingredients.
  • Refrigerate while salmon in prepared, so that butter is somewhat soft but still holds its shape.
  • Fettuccine Sauce: (steps 7 - 10):.
  • Melt butter in saucepan and add cream and egg yolk, well beaten.
  • Heat, stirring until well thickened.
  • Add Parmesan cheese, parsley, salt, and pepper.
  • Main recipe: (steps 11 - 19):.
  • Preheat oven to 350 degrees F.
  • Bake salmon until done (allow approx 20 minutes). Alternatively, salmon may be grilled if you prefer.
  • Boil penne pasta per package instructions or to desired doneness.
  • Add washed spinach to the pasta during the last minute of cooking.
  • Pour Alfredo sauce over drained pasta and spinach, toss to coat.
  • Top pasta with diced tomatoes.
  • Top each serving with a salmon fillet.
  • Top each salmon fillet with a dollop of garlic butter.

GARLICKY PESTO SALMON WITH PENNE



Garlicky Pesto Salmon with Penne image

This is my own rendition of one of my favorite garlic salmon pasta dishes at a downtown seafood restaurant. It is sure to become a favorite of yours, as well.

1 pound penne pasta
1 ½ pounds boneless, skinless salmon fillets
4 tablespoons salted butter
1 cup fresh asparagus tips
1 cup quartered artichoke hearts
½ cup chopped green onions
2 tablespoons minced garlic
¼ teaspoon salt
¼ teaspoon pepper
1 ½ cups heavy whipping cream
¼ cup pesto
1 ½ cups grated Parmesan cheese
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and rinse with cold water; set aside.
  • Meanwhile, cut salmon into small pieces.
  • Melt butter in a nonstick pan over medium heat. Add salmon and stir a few times. Add asparagus tips, artichoke hearts, green onions, garlic, salt, and pepper. Saute until salmon is almost cooked, garlic is golden, and asparagus is tender, about 5 minutes.
  • Add cream and bring to a boil. Stir in pesto. Boil until sauce is reduced by at least 1/4 to 1/2. Add penne and toss thoroughly to coat.
  • Sprinkle with Parmesan cheese and parsley and serve hot.
