Penne With Chorizo and Kale image

I created this recipe to suit the veggies I happened to have in my fridge at the time. It was pretty slim pickings but if I'd had onions or fresh lemon I might have added those too. As it was, I was pretty pleased with this. If you don't have chorizo, you could use your favourite sausage.

225 g penne
1 head broccoli, chopped into florets
2 chorizo sausages, thickly sliced
2 teaspoons olive oil
3 -4 cloves garlic, minced
2 cups kale leaves, washed and finely chopped
1 teaspoon hot sauce
1/2 cup grated cheddar cheese
salt and pepper, to taste

Steps:

  • Steam the broccoli and set aside.
  • Boil some water in a large saucepot and cook the pasta according to package directions.
  • Meanwhile, fry the chorizo in a frying pan on a high heat, turning so both sides get nice and crispy.
  • Remove the chorizo from the pan and leave to drain on paper towel.
  • Use a little more paper towel to clean out most of the fat from the chorizo from the frying pan, then add the olive oil.
  • Set the pan over a medium heat and lightly saute the garlic for 30 seconds.
  • Add the kale and cook for 1-2 minutes until wilted.
  • Stir in the broccoli and chorizo and set aside.
  • Drain the pasta and mix in the hot sauce, salt and pepper.
  • Stir in the cheddar cheese, then toss with the chorizo mixture and serve.

11 ounces penne
8 ounces mascarpone
2 teaspoons mustard (whole wheat)
4 scallions, thickly sliced
1/2 lb chorizo sausage, diced
1 cup taleggio, diced
salt & fresh ground pepper

Steps:

  • Preheat the oven to 400°F.
  • Boil pasta to almost al dente. Drain the pasta well and return to the pan.
  • Stir in the mascarpone until it melts and coats the penne.
  • Stir in the scallions, chorizo and Taleggio. Season, and turn the mixture into an ovenproof dish.
  • Bake for about 20 minutes until the top is crisp and golden brown.

3 tablespoons olive oil
1/2 lb hot Italian turkey sausage, casings discarded and sausage crumbled
1 garlic clove, minced
1 small onion, diced
1 lb kale, tough stems and center ribs discarded and leaves coarsely chopped
1/2 lb penne
2/3 cup reduced-sodium chicken broth
1/2 cup parmesan cheese, grated

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Add garlic, onion and sausage, breaking up any lumps with a spoon, until browned, 5 to 7 minutes.
  • Meanwhile, blanch kale in a 6-quart pot of boiling salted water, uncovered, 5 minutes. Remove kale with a large sieve and drain. Return cooking water in pot to a boil, then cook pasta in boiling water, uncovered, until al dente. Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
  • While pasta cooks, add kale to sausage in skillet and sauté, stirring frequently, until just tender, about 5 minutes. Add broth, stirring and scraping up any brown bits from bottom of skillet, then add pasta and 1/2 cup reserved cooking water to skillet, tossing until combined. Stir in cheese and thin with additional cooking water if desired.
  • Serve immediately, with additional cheese on the side.

1 tablespoon olive oil
1/4 red onion, finely chopped
1/2 teaspoon dried chili pepper flakes
2 chorizo sausages, raw, cut into bite-sized pieces
2 ounces tomato paste
2 ounces sun-blushed tomatoes, chopped
3/4 cup red wine
2 garlic cloves, roasted for 20 minutes
9 ounces penne pasta, cooked according to packet instructions
sea salt & freshly ground black pepper
fresh basil, to garnish

Steps:

  • Heat the oil in a frying pan over a medium to high heat. Add the onion and chili and cook for two minutes.
  • Add the chorizo and cook for a further five minutes, or until golden brown all over.
  • Add the remaining ingredients to the pan, apart from the pasta. Bring the to the boil, then reduce the heat and simmer for 15 minutes. Season, to taste, with salt and freshly ground black pepper.
  • To serve, stir the pasta into the sausage mixture, then pour onto a serving plate and garnish with fresh basil.

Add the chorizo and cook, stirring frequently, for 5 minutes, or until the chorizo is cooked and the onion is nicely browned.
