PEKING DUCK PIZZA WITH CARAMELIZED ONIONS & HOISIN SAUCE
An Asian-fusion style pizza with roast peking duck, caramelized onions and hoisin sauce baked on Baking Steel.

Steps:
- In a large mixing bowl, combine all the ingredients and knead until smooth and elastic. The dough will be slightly sticky. Add a little more flour as needed.
- Cover with plastic wrap and leave to sit for 30 minutes.
- After 30 minutes, knead the dough again, cover, and leave to proof for 2 hours in a warm spot.
- To the caramelized onion jam, add 1/2 tsp 5-spice powder and mix.
- In a food processor, add in the garlic and pulse until fine. Drizzle in the oil and continue to pulse until a smooth paste forms.
- Transfer garlic oil paste into a clean jar and store in the fridge for up to 2 weeks.
- Place the Baking Steel on the bottom rack of your oven.
- Preheat the oven to 500°F/260°C. (Do this about 1 hour before you plan to bake the pizzas off).
- Dust your work surface with some flour. Divide the pizza dough into 3 portions.
- Lay a piece of parchment paper and stretch out the pizza dough into a circle about 10-12" in diameter, leaving a perimeter for the crust.
- Spread 1 Tbsp garlic oil paste on the surface of the dough. Add the roast bbq duck slices, caramelized onions and green onions.
- Use a pizza paddle and place the pizza dough onto the Baking Steel and cook for 6-7 minutes, until golden brown. You can use the broiler for 2-3 minutes if you prefer a darker crust.
- Remove from oven. Garnish with extra green onions, cilantro, and red onions. Drizzle hoisin sauce on top.
- Slice the Peking Duck pizza and serve immediately. Repeat with the remaining pizzas.

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA
This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

- To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
- Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
- Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
- To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
- To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

- Heat a grill pan over high heat. Drizzle oil over chicken cutlets and season with grill seasoning blend or salt and pepper. Grill chicken 3 or 4 minutes on each side. Slice chicken into very thin strips.
- Sprinkle a pizza pan or baking stone with cornmeal or flour. Press dough into a pizza shell, working all the way to edges of the pan. Sprinkle the edges of your dough with sesame seeds. Cover the pie with 3 tablespoons each plum sauce or duck sauce and barbecue sauce. Cover pie with cheese. Top with sliced chicken and scallions and red pepper. Bake 12 to 15 minutes, until crisp and cheese is bubbly. Cut into 8 slices.

- Preheat the oven to 425 degrees F.
- Line a baking sheet with a silicone baking mat or parchment paper sprayed with cooking spray.
- Open up the pizza dough and pat out into an even 14-by-10-inch rectangle, with the longest side at the top. Cut into 32 rectangles by cutting 8 vertical strips, then cutting each strip 4 times horizontally.
- Place a teaspoon of pizza sauce into the center of each rectangle, then top with a piece of mozzarella. Sprinkle on a few crushed red pepper flakes and top each with a slice of pepperoni. Place a hot dog across the shorter side (so it sticks out). Roll up each rectangle, pressing the seam to secure. Place seam-side down on the prepared baking sheet. Repeat with the remaining dough and fillings.
- Beat the egg in a small bowl with 1 tablespoon water and brush over the top of the dough.
- Mix together the Parmesan and Italian seasoning and sprinkle over the prepared pigs in blankets.
- Bake until golden brown, about 15 minutes. Serve with the remaining pizza sauce.

- Place into a mixing bowl hoisin sauce, plum sauce, chili, salt, garlic, onion and sesame oil and combine set aside until needed.
- Preheat oven to 450°. Place a half size baking pan into the oven for 20 minutes.
- Place the roast duck onto a cutting broad and hand shredded into pieces.
- Place the pizza crust onto a flat surface. Brush some plum hoisin sauce onto the crust and top with cheese, parsley leaves, and shredded duck meat, sliced onion and tomatoes and lightly with cheese.
- Place onto the hot baking pan and into the oven. About 15 minutes or until the pizza is golden brown.
- Slice and serve hot.
