- Chop graham crackers; place in a bowl. Add butter and sugar; mix well. Press crumb mixture onto flat bottom of springform pan. In a classic batter bowl, whisk sour cream and milk until blended. Add pudding mix; whisk until pudding is dissolved. Add whipped topping, mixing until well blended. Spread half of filling over crust. Slice bananas; arrange over filling. Spread remaining filling over bananas. Grate pecans over top. Garnish as desired with fresh fruit/mint leaves. To serve, remove collar from pan; cut into 12 wedges.

- 1. FOR CRUST: Mix all ingredients together and press mixture into pie plate. Bake in a 375 degree oven for 10 minutes, or until brown, Allow to cool down to room temperature.
- 2. FOR FILLING: Beat cream cheese and powdered sugar until smooth. Fold in the cool whip and chill. If you are using a smaller pie pan, make sure you get around a 1/2 inch layer of the cream cheese layer (use the rest for a fruit dip.)
- 3. FOR BANANAS AND CREAM: Mix sugar,salt and starch in a pot. In a bowl,whisk egg yolks and cream slightly. To the pot, slowly add the milk, then the egg yolk and cream mixture. Heat over medium, whisking frequently until thick and bubbling(but not rapidly boiling,) Once the cream is bubbling continue to cook and whisk for 30 more seconds. Finally, add the butter and vanilla and mix until the cream is smooth. Set aside.
- 4. Cut bananas into even pieces. Place a layer of bananas on the cream-cheese layer. Try to cover as much as possible,as this acts as an insulator and keeps the heat away from the cream cheese. Add a layer of hot cream,a layer of bananas, and then top off the bannas with as much of the cream as possible. Place a plastic sheet over the cream in order to prevent a skin from forming on the cream filling.
- 5. Place in refrigerator until completely chilled.
- 6. FOR THE TOPPING: Top with your favorite whipped topping. Drizzle with room temperture caramel sauce and top with nuts. Keep cold (THE COLDER THE BETTER)

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack., In a large saucepan, combine sugar, cornstarch, salt and milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat. Stir a small amount of hot filling into eggs; return all to pan. Bring to a gentle boil; cook and stir 2 minutes longer., Remove from heat. Gently stir in butter and vanilla. Press plastic wrap onto surface of custard; refrigerate, covered, 30 minutes., Spread half of the custard into crust. Slice bananas; arrange over filling. Pour remaining custard over bananas. Spread with whipped cream. Refrigerate 6 hours or overnight.

- In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
- Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
- Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
- Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Chill for an hour.

SUGAR FREE BANANA CREAM PIE
This is a recipe for a banana cream pie with the least amount of sugar in it that I could possibly think of without taking away the taste. It's quick and easy, and can even be made with kids. Just for reference the brand name of the listed ingredients do not have to be the same brand. Please use whatever brand you would prefer to use.

- Beat both boxes of pudding mix into 2 3/4 cups milk, adding any amount of vanilla extract you want, in a large bowl with a wire whisk for 1 - 2 minutes.
- Using a large spoon spread a little bit of the pudding mixture on the bottom of the pie crust for the first layer of pudding, followed by adding a layer of sliced bananas on top of the pudding layer. Continue doing this until you run out of pudding mix and banana slices. You may use more or less bananas according to your preference.
- Using a small icing spatula or a spoon apply some whip cream to the top of the pie, covering it all the way around.
- Sprinkle some cinnamon powder into the palm of your hand and then gently dust the cinnamon powder lightly over the top of the pie by gently using your hand/fingers.
- You may serve the pie now or place it in the refrigerator for an hour to chill (my recommendation). Leftovers should be placed back into the refrigerator to keep cool.
