Pecans With a Kick (Crock Pot) image

Diabetic spicy pecans with a little kick! This is just enough cayenne to give that kick. If you like hot and spicy, add more. NOTE: Newer crockpots tend to run at a higher temperature, so you may need to adjust cooking time accordingly!

3 cups pecan halves
1 egg white, slightly beaten
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon cayenne (or more)
1 cup Splenda granular, sugar substitute

Steps:

  • Put the pecans in crock pot. Add the egg white and stir until the pecans are evenly coated.
  • In a bowl, stir together the cinnamon, salt, cayenne, and Splenda. Pour the mixture over the pecans and stir until they're evenly coated.
  • Cover the crock pot; set on low, and let it cook for 3 hours, stirring every hour or so.
  • If the nuts aren't dry by the end of the 3 hours, uncover the crock pot, stir, and cook for another 30 minutes until dry.
  • Store in an airtight container.

1 lb pecan halves
1/2 cup butter, melted
1/2 cup Splenda granular, sugar substitute
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice

Steps:

  • Place pecans in crock pot and stir in the melted butter, coating the pecans thoroughly.
  • Sprinkle the Splenda, cinnamon, ginger, and allspice over the pecans and stir again to coat.
  • Cover the crock pot; set on high. Cook for 30 minutes; uncover, turn to low, and let cook for 1 1/2 to 2 hours.

  • In a large bowl whisk together egg whites and vanilla until foamy. In another bowl combine sugars, cinnamon, and salt and stir until all ingredients are mixed well.
  • Add pecans to the egg mixture and toss to coat. Next, add cinnamon sugar mixture to the bowl of pecans and toss to coat. Transfer coated nuts to a greased slow cooker.
  • Cook nuts on low for 3 1/2 hours, stirring every 20-30 minutes. After they're done cooking, add water and stir. Transfer to a lightly greased baking sheet and allow to cool completely (It could take up to an hour or two for all of the sugar to crystalize - don't be afraid to sneak a few!) Store in airtight container.
