Number Of Ingredients 7

2 cups butter, softened
1 cup confectioners' sugar
2 tablespoons water
4 teaspoons vanilla extract
4 cups all-purpose flour
2 cups chopped pecans
Additional confectioners' sugar

Steps:

  • Preheat oven to 300°. In a large bowl, cream butter and sugar. Add water and vanilla; mix well. Gradually add flour; fold in pecans. , Roll dough into 1-in. balls. Place on ungreased baking sheets and flatten with fingers. , Bake 20-25 minutes or until bottom edges are golden brown. Cool on a wire rack. When cool, dust with confectioners' sugar.

1 cup butter (no substitutes)
1 cup sugar
1 cup powdered sugar
1 cup canola oil (or another oil that's liquid at room temperature)
2 large eggs
1 tsp almond extract
3 1/2 cups all purpose flour
1 cup whole wheat flour (freshly ground)
1 tsp baking soda
1 tsp cream of tartar
1 tsp salt
1 1/2 cups chopped pecans
1 1/2 cups toffee bits
6 Tbsp granulated sugar (for rolling cookies)

Steps:

  • Cream butter and sugars in a large mixing bowl. Beat in oil, eggs, and almond extract. Stir in the flours, soda, cream of tartar, and salt. Add the pecans and toffee bits and stir till just combined.
  • Roll in balls, then roll in sugar. Place on lightly greased or silpat lined cookie sheets. Flatten with a fork.
  • Bake at 350° for about 12-14 minutes.

Steps:

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup unsalted butter, at room temperature
1 cup brown sugar, firmly packed
2 large egg whites
1 teaspoon vanilla extract
¾ cup coarsely chopped pecans
¾ cup chocolate-covered toffee bits (such as Heath®), or to taste

Steps:

  • Combine flour, baking soda, and salt in a medium bowl; whisk until well combined.
  • Place butter and brown sugar in a large bowl and beat with an electric mixer until light and fluffy, about 3 minutes. Add egg whites and vanilla extract, and beat for 1 more minute. Gradually add flour mixture to the bowl and mix until completely combined. Fold in pecans and toffee bits until all ingredients are well incorporated.
  • Move the bowl to the refrigerator and chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 large baking sheets with parchment paper and set aside.
  • Scoop dough into heaping tablespoon-sized balls with a spoon or cookie scoop. Place dough balls about 2 inches apart on the prepared baking sheet and flatten just slightly with the palm of your hand.

I had a bag of Heath candy pieces that my husband had bought for me because he thought I could make something with it, and he loves Heath candy bars. It's not a very sweet cookie. For those who want a little more sweetness, you can sprinkle powdered sugar over them after removing them from the parchment paper before they are completely cool. My family loves them without it. I put the prep time at 4 hours due to the fact that the dough has to chill for a good long time. Hope you enjoy!

1 cup(s) butter
1/2 cup(s) sugar
2 1/2 cup(s) flour
1 teaspoon(s) vanilla
1/2 cup(s) chopped pecans
1 bag(s) heath candy pieces

Steps:

  • Preheat oven to 325 degrees. Cream butter and sugar together until light and fluffy. Add in vanilla. Mix in flour a half cup at a time until all added. Stir in pecans and candy pieces. Dough will be fairly firm.
  • Divide dough in half. Roll each half into a log and wrap in plastic wrap. Place in fridge and chill until firm. I usually leave it in there over night or at least 4 hours.
  • Cover cookie sheet with parchment paper. Remove one log from the fridge. Unwrap and slice into 1/2 inch slices and place on cookie tray. Press down slightly with palm of your hand. You can place them fairly close together as this cookie does not spread much as it bakes. Refrigerate any unsliced dough until ready to slice.
  • Bake in the oven 18 to 20 minutes. You want the cookie to be firm but not hard. They will not brown up like some cookies. Remove when the cookie is firm. Allow to cool for a few minutes on the parchment paper before removing to let the toffee firm up. Then let cool completely before storing in airtight container.

¾ cup pecans
1 cup butter
¾ cup white sugar
1 large egg yolk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spread pecans out on a baking sheet.
  • Bake pecans in the preheated oven until fragrant and lightly toasted, 5 to 10 minutes. Cool completely and chop in a food processor.
  • Beat butter in a large bowl with an electric mixer until creamy. Add sugar and beat until light and fluffy; beat in egg yolk, vanilla extract, and salt. Slowly mix pecans into butter mixture. Stir flour into pecan mixture until dough begins to come together.

2 eggs

2 cups chopped pecans
½ cup white sugar for decoration

Steps:
