BRAISED LETTUCE WITH PEAS



Braised lettuce with peas image

Do try this - it's melting and nutty flavoured, with sweet peas and just a hint of cream

Number Of Ingredients 6

small knob butter
1 small onion , finely chopped
4 Little Gem lettuces
200ml fresh chicken stock
4 tbsp single cream or crème fraîche
500g bag frozen petits pois

Steps:

  • Melt the butter in a large sauté pan with a lid. Fry the onion gently for about 5 mins, until softened. Meanwhile, pull any damaged or coarse outer leaves from the lettuces and trim the bases. Cut the lettuces in half lengthways, through the base.
  • Place the lettuce cut-side up on top of the onions and cook for half a minute, then turn over and cook for another 30 secs. Pour over the stock and lightly season. Put the lid on the pan, reduce the heat to the minimum and cook for 10 mins.
  • With a slotted spoon, lift the lettuces out and put into a sieve over a bowl. Raise the heat under the pan and boil the juices until reduced by half. Add the cream or crème fraîche and petits pois and boil for 1 min until heated through. Arrange lettuces in a serving dish and pour over the pea-and-cream sauce.

Pan-Fried Partridge with a Delicate Pearl Barley, Pea and Lettuce Stew image

What a simple, beautiful dish. Partridge is mild-flavored, so it's a great introduction to game birds. Barley is an old-fashioned ingredient that isn't used so much these days, but it's fantastic in stews. Peas with lettuce is a French thing and they work so well together. And I love the pan-cooking method - not only is it quick but it's exciting too.

4 ounces pearl barley
Olive oil
1 red onion, peeled and finely chopped
Sea salt and freshly ground black pepper
8 ounces frozen peas
2 cups good chicken or vegetable stock
1 heaping tablespoon all-purpose flour
2 tablespoons butter
2 partridges, washed and patted dry, broken into legs and breasts
4 ounces thick bacon or pancetta, rind removed, cut into pieces
A few sprigs fresh thyme, leaves picked and chopped
A handful romaine lettuce leaves, washed and spun dry
A handful arugula, washed and spun dry

Steps:

  • Cook the pearl barley in boiling, salted water for about 50 minutes, or until tender but still with a little bite, then drain and leave to steam dry.
  • Next, heat a glug of olive oil in a frying pan and add the onion and a pinch of salt. Cook slowly on a low heat for about 10 minutes, without coloring too much. Add the barley and the peas. Cover with the stock and bring to the boil. Simmer for 10 minutes, stirring every now and then.
  • On a board, mash the flour and butter together with a fork until you have a paste. This is called a "beurre manie" and it's a great way of thickening stews or sauces without having to stir the flour in directly, which could give you lumps. Stir half of the paste into the peas and barley and continue to simmer until the liquid begins to thicken. If, after 5 minutes, it's not thick enough, add some more of your beurre manie. What you want to achieve is a silky smooth broth. Continue to simmer for another 10 minutes, adding a little extra stock if it gets too dry, while you cook your partridges.
  • Put some olive oil into another frying pan. Season the partridge legs with salt and pepper and add them to the pan. (The legs go in first because they're tougher than the breasts and need longer to cook.) Shake them about and, after a few minutes, when they're lightly golden, add the bacon bits and stir gently to stop them catching on the bottom. Meanwhile, lay the partridge breasts out, sprinkle over the chopped thyme and press onto both sides with a good pinch of seasoning. When the bacon is lightly golden, push it to 1 side of the pan with the partridge legs and lay the breasts in, skin side down. Cook for 4 minutes, then turn and cook on the other side for a minute to give you crispy skin and moist meat. You can cook them for longer if you like your meat well done.
  • When the breasts are done, taste the barley broth and adjust the seasoning, then stir in the lettuce and arugula - they only need a minute or so to cook. Serve the barley, peas and lettuce with the partridge breasts and legs on top and sprinkle with the bacon pieces. Spoon the broth juices over the top. Lovely homey cooking!

MINTY MUSHY PEAS

This is a fantastic recipe that is so quick and so simple and uses our reliable friends the frozen peas, which work really well here. Great with fish, meat or even as a vegetarian dish with a big dollop of butter on top.

2 tablespoons olive oil
1 bunch spring onions, chopped
1 handful fresh mint, leaves picked
1 pound (500 grams) frozen peas
2 large knobs butter
Sea salt and freshly ground black pepper

Steps:

  • Heat the oil in a pan and add the chopped onions, mint, and peas. Cover and leave for a few minutes to steam. Mash with a potato masher. You can do this with a food processor as well, just pulse it until smooth. Whether mashing or pulsing, when it's done add the butter and season very carefully, to taste.

This is a french recipe my mum copied from a library cook book. I make it a bit differently to the original recipe and have included the changes that I have made in brackets. Please let me know if it is confusing. Everone (so far!) loves my adaptation, it has a great flavour and is just so smooth and creamy. We usually eat this with baked vegetables and buttered green beans mixed with chopped fresh tomato. I hope you like this as much as we all do! Cooking time is only approximate as I haven't taken note of this and is for my adapted version.

30 g unsalted butter (I use reduced salt)
1 large onion, diced
3 cups chicken stock (I use water or vegetable stock)
1 kg baby peas (I use frozen and add them after the lettuce has wilted)
1 head romaine lettuce
1 cup milk (I use rice milk)
90 ml cream (I use natural yoghurt)
of fresh mint (I cook this with the lettuce)
salt and pepper

Steps:

  • Cook onion gently in butter.
  • Add stock and peas, simmer until peas are tender.
  • Add lettuce and cook until wilted.
  • Add milk and puree until smooth.
  • Reheat in pan, season with salt and pepper.
  • Serve with a swirl of cream and chopped mint.

BUTTER-BRAISED PEAS, LETTUCE & MINT

150ml vegetable stock
25g salted butter
140g fresh peas podded (about 75og/1lb 10 oz podded weight)
1 tbsp capers , rinsed
1 medium Baby Gem lettuce , outer leaves removed and halved lengthways
½ iceberg lettuce , thinly shredded
10 large mint leaves, finely shredded
small handful pea shoots
slices of bread or toast , to serve

Steps:

  • In a large frying pan, bring the stock to a simmer. Whisk in the butter, then add the peas and capers and cook for 1 min. Add the Gem leaves, iceberg and mint, then cook gently until just wilted. Season with salt and black pepper, remove from the heat, garnish with the pea shoots and serve with bread or toast.

1 1/2 tablespoons flour
1/2 pint chicken stock or 1/2 pint vegetable stock
6 spring onions, trimmed, outer leaves discarded, and finely chopped
14 ounces fresh peas
1 head romaine lettuce, green part only, sliced into strips
sea salt & fresh ground pepper
1 lemon, juice of
1 tablespoon olive oil

Steps:

  • Slowly heat the butter(he says a nob of butter not a TB) and a good glug of olive oil in a pan.
  • Add the flour and stir around.
  • Slowly add the stock.
  • Turn up the heat and add the spring onions, peas and lettuce with a pinch of salt and pepper.
  • Put the lid on and simmer for five minutes or until tender.
  • Salt and pepper to taste, squeeze in a bit of lemon juice, and drizzle with oil. Serve!
