An easy way to update your peas. *Can be made vegetarian using vegetable stock granules in place of chicken bouillon.*

Number Of Ingredients 8

2 cups water
1/2 teaspoon salt
1 1/3 cups peas, frozen (6 ounces)
1 tablespoon butter
1/2 teaspoon instant chicken bouillon granules
1/2 teaspoon orange peel, freshly grated
1/4 teaspoon tarragon
1/16 teaspoon sugar

Steps:

  • Combine water and salt in a medium saucepan. Bring to a full boil. Add peas. Return to a boil. Reduce heat to a simmer. Cover and cook 1 minute.
  • Drain peas in a colander.
  • Combine remaining ingredients in saucepan. Warm over low heat. Stir in drained peas.
  • Cover and keep warm over very low heat 2 minutes to blend flavors.

2 c water
1/2 tsp salt
1 1/3 c peas, frozen (6 ounces)
1 Tbsp butter
1/2 tsp instant chicken bouillon granules
1/2 tsp orange peel, freshly grated
1/2 tsp tarragon
1/16 tsp sugar

Steps:

  • 1. Combine water and salt in a medium saucepan. Bring to a full boil. Add peas. Return to a boil. Reduce heat to a simmer. Cover and cook 1 minute. Drain peas in a colander.
  • 2. Combine remaining ingredients in saucepan. Warm over low heat. Stir in drained peas. Cover and keep warm over very low heat 2 minutes to blend flavors.

1 Tbsp olive oil, plus more for drizzling
1 small onion, diced
1 lb (450 grams) peas, fresh or frozen
2 cups vegetable broth or hot water
½ lb (220 grams) short shaped pasta
salt & pepper to taste
½ cup freshly grated parmesan, plus more to serve

Steps:

  • Warm the olive oil in a large pot over medium heat. Add the diced onion and cook until the onion has softened and is turning translucent, about 5 minutes.
  • Add the peas and cook stirring frequently about 1 minute.
  • Then add vegetable broth (or water), raise the heat, bring to a boil and stir in pasta and salt (I use 1 tsp of salt and then I adjust the seasoning at the end). You might need to add or to reduce the amount of water according to the type of pasta.
  • Cover with a lid, reduce the heat and cook your pasta in the starchy water. During the cooking time, you need to stir often until the water is absorbed, otherwise, it will stick to the bottom. The water should barely cover the pasta, but it's fine, add extra water gradually only if needed.
  • Cook until ready but firm to the bite. Turn off the heat and stir in freshly grated parmesan cheese until melted. Taste and adjust the seasoning.
  • Serve immediately with a drizzle of olive oil, black pepper, and extra parmesan cheese if you like. Enjoy!

SNAP PEA, ORANGE AND RADISH SALAD



Snap Pea, Orange and Radish Salad image

Kosher salt and freshly ground black pepper
1 pound sugar snap peas, ends trimmed
3 tablespoons extra-virgin olive oil
1 1/2 ounces sliced prosciutto (about 3 slices)
1/2 cup crumbled fresh goat cheese (about 4 ounces)
1 shallot, sliced into thin (1/8-inch) rings
2 medium navel oranges, supremed (peel and pith removed, cut into segments with a paring knife)
1/4 cup fresh orange juice, squeezed from the leftover orange membranes
5 or 6 small red radishes, sliced into very thin rounds, preferably on a mandoline
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh tarragon

Steps:

  • Fill a large pot halfway with water and bring to a boil; season generously with salt. Prepare an ice bath in a large bowl. Blanch the sugar snap peas in the boiling water for 2 minutes, or until they turn bright green and soften slightly. Strain, then immediately plunge into the ice bath to cool completely. Drain well. Spread out the snap peas on a baking sheet and dry with paper towels.
  • Heat 1 tablespoon of the olive oil in a large cast-iron skillet over medium-high heat. When the oil is hot, add the prosciutto slices; cook for 1 to 2 minutes per side, until crispy. Transfer to a paper-towel-lined baking sheet to cool and drain of excess oil.
  • Add the dried sugar snap peas to a large bowl, and crumble the prosciutto over the peas. Drizzle with the remaining 2 tablespoons olive oil. Add the goat cheese, shallots, orange supremes, orange juice, radishes, mint and tarragon; gently toss together. Season with salt and pepper, and serve immediately.

For duck
2 4 to 5 pound ducks
2 carrots, sliced
2 onions, sliced
Thyme, bay leaf
1/4 cup white wine
1/2 cup chicken consommé
2 tablespoons and 1/4 cup sugar
1 tablespoon vinegar
Juice of two oranges
Juice of 1/2 lemon
1-2 tablespoons flour
1 teaspoon Kitchen Bouquet
2 oranges, sectioned
2 ounces Curaçao, or Grand Marnier
1 ounce cognac
For potatoes
8 large potatoes
6 tablespoons butter
2 tablespoons light cream
4 egg yolks
Flour, beaten eggs, bread crumbs
Finely grated orange peel
Fat for deep frying

Steps:

  • Make duck:
  • Prepare ducks for roasting. Place in pan with carrots, onions, a little thyme, and a bay leaf. Roast at 325°F. for 50 minutes to one hour, so the meat still shows a little blood when pricked with a toothpick and skewer. Remove and keep hot. Place roasting pan on heat and cook for a few minutes. Skim off excess fat and rinse pan with white wine and consommé. Cook for 5 minutes. Stain mixture through a fine sieve. Melt 2 tablespoons sugar in a heavy pan over low heat and just as it begins to carmelize, add vinegar and fruit juices. Add strained pan juices. Bring to a boil. Skim off excess fat. Mix flour with a little water and blend with sauce; cook until thickened to a syrupy consistency. Correct seasoning. Add Kitchen Bouquet to give rich color. Carve meat of one duck and arrange slices overlapping on top of second duck. Garnish with sections of orange. Add liqueur, 1/4 cup sugar, and cognac to sauce and carefully pour sauce over and around duck. Garnish the platter with potatoes. Serve peas separately.
  • Make potatoes:
  • Cook potatoes in boiling, salted water until tender. Drain and peel. Put through food mill or ricer. Blend in 6 tablespoons butter, cream and one by one, egg yolks, beating well after each addition. Flavor with finely grated orange peel. Roll into long cork shapes, dip in flour, beaten egg, and fine bread crumbs and quickly deep fry in hot fat until golden brown.
  • With this, drink a light Bordeaux.
