1 14-ounce can reduced-sodium chicken broth or vegetable broth
1 cup quinoa (see Tips), rinsed if necessary
2 tablespoons walnut oil or canola oil
1 tablespoon fruity vinegar, such as pear, raspberry or pomegranate
1/4 cup snipped fresh chives
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 ripe but firm pears, diced
1/2 cup coarsely chopped walnuts or pecans, toasted

Steps:

  • 1) Bring broth to a boil in a large saucepan. 2) Stir in quinoa, reduce heat to maintain a simmer, cover and cook until the liquid is absorbed and the quinoa has popped, about 15 minutes. 3) Meanwhile, whisk oil, vinegar, chives, salt and pepper in a large bowl. Add pears and toss to coat. 4) Drain any excess liquid from the cooked quinoa, if necessary. Add the quinoa to the pear mixture; toss to combine. 5) Transfer to the refrigerator to cool for about 15 minutes or serve warm. Serve topped with nuts.

3/4 cup cooked quinoa
1 avocado, chopped
1 pear, chopped
1/4 cup gorgonzola
1 teaspoon basil
1 tablespoon olive oil

Steps:

  • First cook the quinoa as directed, while it is cooking chop the pears and avocado into small bite size pieces and then add the olive oil, basil and cheese crumbles. Mix together well, you can also add it to a spinach salad.

  • Toss squash in a large bowl with 1 tablespoon oil, 1/4 teaspoon each salt and pepper and crushed red pepper. Spread on a large rimmed baking sheet. Roast for 15 minutes. Stir the squash, add pear and roast until browned and tender, about 15 minutes more.
  • Meanwhile, heat 1 tablespoon oil in a large saucepan over medium heat and add ginger, garlic and turmeric; cook until sizzling, about 1 minute. Add quinoa and cook, stirring, for 30 seconds. Add broth and bring to a boil over high heat. Reduce heat to a simmer, cover and cook until the broth is absorbed, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Stir in scallion and the remaining 1/4 teaspoon each salt and pepper and let cool.
  • Whisk vinegar, onion, mustard, rosemary and chile in a large bowl. Slowly whisk in the remaining 3 tablespoons oil. Stir half the dressing into the quinoa. Add the pears and squash to the bowl with the remaining dressing; gently stir to coat. Let stand, stirring occasionally, for 15 minutes or refrigerate separately for up to 1 day.

  • Cut the bottoms straight across so that the pears can stand up. Carefully place the pears in a saucepan. Add water if necessary so that the pears are submerged about half way up. Cover the pot and turn to medium-low. Poach until the pears are soft, about 35 minutes. (They should be easy to cut but still hold their shape.) Allow to cool and slice, discarding core.
  • Meanwhile, Make the dressing by combining the vinegar, shallot, garlic, salt and pepper in a blender. Add in olive oil in a steady stream.
  • Put salad together by combining the greens, quinoa, goat cheese and pears. Toss with desired amount of dressing. Top with walnuts and serve.
