ORANGE PEAR JAM
Full of fruity flavor, this delightful jam is a great toast topper. Delores Ward of Decatur, Indiana came up with the recipe when a neighbor gave her an armload of pears. "Everyone really likes it," says Delores.

- In a Dutch oven, combine sugar, pears, pineapple and lemon juice. Bring to a full rolling boil over high heat, stirring constantly. Reduce heat; simmer 15 minutes, stirring frequently. Remove from heat; stir in gelatin until dissolved., Pour into jars or containers; cool to room temperature, about 1 hour. Cover and let stand overnight or until set, but no longer than 24 hours. Refrigerate up to 3 weeks.

I am so glad I found this recipe and finally got to make this jam. I did cut the sugar back from 7 cups to 3 cups of sugar. The next time I will try to go down to 2 1/2 or even 2 cups. This jam tastes so delicious with the fresh taste of sweet pears, pineapple and swirled with the tang of orange flavor. It is lighter in texture...

- 1. Gather you items to start your jam.
- 2. In a Dutch oven or large kettle, combine the sugar, pears drained pineapple and lemon juice.
- 3. Bring to a full rolling boil over high heat, stirring constantly. Reduce heat; simmer for 15 minutes, stirring frequently. I used a potato masher in the pan on the pears to get the texture I desired.
- 4. Remove from the heat; stir in gelatin until dissolved.
- 5. (Pour into jars or containers; cool to room temperature, about 1 hour. Cover and let stand overnight or until set, but not longer than 24 hours. Refrigerate for up to 3 weeks.) This is how I processed: Or you can give the jars a 15 minute water bath and then set the jars on the counter overnight. Mine jars took awhile to seal. I think it was about 2 hours till I heard the last jar pop/seal. I also did see the jam set up well till the next evening and then it was at a perfect thickness.

- In a Dutch oven, heat oil over medium heat. Add onion; cook and stir 6-8 minutes or until tender. Add pears, sugar, orange zest, orange juice and rosemary; bring to a boil. Reduce heat; simmer, uncovered, 40-45 minutes or until mixture is thickened, stirring occasionally. Stir in pine nuts. Return to a boil; cook and stir 5 minutes longer. , Carefully ladle hot mixture into 5 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. PEAR CONSERVE
Pear Conserve is essentially diced pears in pear syrup. It is best used as a topping for crepes, French toast, bread pudding, ice cream, etc. It is also good as an addition to cocktails and to marinades and sauces. This recipe is based on strawberry conserve, and the method can be applied to other fruits, as well. This recipe is high in sugar, but you're only meant to use a little bit at a time of the final product.

Steps:
- Peel, halve and core your pears.
- Dice the pears finely, but not as small as brunoise. I am not going to go into detail here, but one thing I must say is keep your peeled pears submerged in a bowl of water and lemon juice so that they do not oxidize (turn brown).
- In a large, non-reactive (glass, plastic, ceramic) container, layer the sugar and the diced pears. Start with a thin layer of sugar on the bottom and end with sugar covering the top.
- Drizzle the lemon juice over the top layer.
- Close this container tightly and refrigerate overnight (for at least 18 and up to 24 hours).
- Next day, pour out the pears and the syrup they have formed into a deep pot.
- Scrape out the bottom layer of sugar into your pot as well.
- Bring this mix to a boil over high heat, uncovered, stirring.
- When the conserve is quite hot but not boiling, add the pear brandy. It should boil all at once. Stir well.
- Boil the conserve to thicken it and expel alcohol. For true, syrupy conserve, do not overcook. Boil for a scant 3 - 5 minutes. The conserve is done.
- The conserve can be waterbath canned. Properly prepared 6 - 8 oz glass containers should be processed for 10 minutes.

- Sterilize jars and lids in boiling water for at least 10 minutes. Let simmer while making jam.
- In a large saucepan, combine pears, water, and lemon juice. Cover, and simmer for 10 minutes. Stir in pectin, and bring to a full boil. Stir in the white sugar, and continue boiling and stirring uncovered for 1 minute, until sugar is dissolved. Remove from heat, and stir in brown sugar, allspice, and nutmeg.
- Quickly fill jars to within 1/2 inch of the top. Wipe rims clean, and top with lids. Process jars in boiling water for 10 minutes to seal.

PEAR AND ORANGE JAM WITH WALNUTS
This recipe came from a sure-Jell pamphlet dated 1974. As a new bride then, I was inspired by my sister-in-law to try canning, and I've been "putting up" ever since. I had marked this recipe to make it, but never did. I wish I hadn't waited so long! It is a great "morning" jam---wakes up you taste buds, but without the astringency of marmalade. Great on bagels!

- Peel and core about 2 1/2 pouds pears.
- Peel oranges, remove seeds and any loose membrane. (I used "juice" oranges, not navels, for a more intense flavor.).
- Grind or chop pears and oranges very fine.
- Mix well.
- Measure 4 1/2 cups of the mixture into a very large saucepan.
- Add 1/2 cup chopped walnuts.
- Measure sugar and set aside.
- Mix pectin into fruits in saucepan.
- Place over high heat, stirring continually, until the mixture comes to a hard boil.
- Immediately add all the sugar and butter and stir well.
- Bring to a full rolling boil and boil hard 1 minute, stirring constantly.
- Remove from heat and skim off any foam with a metal spoon.
- Stir and skim for 5 minutes to cool slightly and prevent floating fruit.
- Ladle quickly into glass jars, wipe rims and apply lids & rings.
- Process in a water-bath canner for 10 minutes for half-pints, 15 minutes for pints.
- Remove from canner and place jars on a clean towel to cool.
