CRISP MUSTARD-GLAZED CHICKEN BREASTS



Crisp Mustard-Glazed Chicken Breasts image

Chicken breasts are givencontrasting flavor and texturewith the addition of a tangy mustard sauce and a crisp breadcrumbcoating.

4 boneless chicken breasts, skin on
2 tablespoons olive oil, plus more for breasts
Coarse salt and freshly ground pepper
4 tablespoons unsalted butter, softened
2 1/2 tablespoons Dijon mustard
3/4 cup coarse breadcrumbs
2 tablespoons chopped fresh thyme, plus more for garnish
3/4 cup homemade or low-sodium canned chicken stock
1/2 cup heavy cream

Steps:

  • Preheat oven to 375 degrees. Rub chicken breasts lightly with olive oil, and season with salt and pepper.
  • Combine 2 tablespoons butter with the mustard; reserve 2 teaspoons for sauce. Melt remaining 2 tablespoons butter; mix with breadcrumbs and thyme, and season with salt and pepper.
  • In a large skillet, heat oil over medium-high heat. Sear chicken skin side down until crispy, about 5 minutes. Remove from heat. Smear with mustard mixture, and sprinkle with breadcrumbs. Turn skin side up; apply mustard mixture and breadcrumbs.
  • Transfer skillet to oven, and roast until chicken is cooked through and top is golden brown, 15 to 20 minutes.
  • Transfer chicken to serving platter. Add stock and cream to skillet over medium heat, and stir with wooden spoon until creamy and reduced to 3/4 cup, about 3 minutes. Remove from heat, and stir in reserved mustard mixture. Strain through a fine sieve, and serve with chicken. Garnish with thyme.

1 (16 ounce) can pear halves in natural juice, reserving syrup
2 teaspoons cornstarch
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup water
1/4 teaspoon lemon, zest of, finely grated
2 tablespoons fresh lemon juice
2 teaspoons soy sauce
4 bone-in skinless chicken breast halves
1 -2 tablespoon canola oil, as needed

Steps:

  • Drain pears, saving liquid.
  • Whisk together the pear liquid, cornstarch,mustard,salt, pepper, water, lemon zest,lemon juice, and soy sauce.
  • Heat enough oil (over medium-high heat) in a large skillet to keep the chicken from sticking (use less if you have a nonstick skillet)- no more than 2 tablespoons.
  • Brown chicken on all sides,then add pear liquid mixture.
  • Cover pan with lid, lower heat, and simmer on low 45 minutes.
  • Remove chicken from the pan, reserving pan drippings; keep chicken in a covered dish to keep warm.
  • Add pears to the pan and cook, stirring often, over medium-high heat until liquid has reduced by half.
  • Serve sauce spooned over chicken.

1 pork tenderloin (1 pound)
1 tablespoon herbes de Provence
1/2 teaspoon salt
1/4 teaspoon pepper
4 tablespoons butter, divided
4 medium pears, peeled and sliced
1 tablespoon sugar
4 shallots, chopped
1-1/4 teaspoons dried thyme
1/4 cup pear brandy or pear nectar
1 cup heavy whipping cream
1/3 cup pear nectar

Steps:

  • Preheat oven to 425°. Sprinkle pork with the herbes de Provence, salt and pepper. In a large ovenproof skillet, brown pork in 1 tablespoon butter on all sides. Bake 18-22 minutes or until a thermometer reads 145°. Remove pork from skillet and keep warm. Let meat stand for 5 minutes before slicing. , Meanwhile, in a large skillet, saute pears and sugar in 2 tablespoons butter until golden brown. Remove from pan and keep warm. In the same pan, melt remaining butter. Add shallots; saute until tender. Stir in thyme. , Remove from heat. Add brandy; cook over medium heat until liquid is almost evaporated, stirring to loosen browned bits from pan. Add cream and nectar; cook and stir until slightly thickened. Slice pork; serve with pears and cream sauce.,
