½ cup mayonnaise
½ cup sour cream
¼ cup white sugar
1 (16 ounce) package frozen green peas, thawed
½ red onion, diced
½ cup sweetened dried cranberries
1 cup unsalted peanuts

Steps:

  • In a large bowl, whisk together the mayonnaise, sour cream and white sugar.
  • Add peas, onion, cranberries and peanuts and stir until evenly coated. Chill for 30 minutes before serving.

A Dijon-soy sauce vinaigrette dresses a tasty combo of greens, pears, peanuts and raisins.

2 tablespoons olive or vegetable oil
1 tablespoon lemon juice
2 teaspoons sugar
2 teaspoons soy sauce
1 teaspoon Dijon mustard
6 cups bite-size pieces mixed salad greens
2 large or 3 medium unpeeled ripe pears, sliced
1/3 cup dry-roasted peanuts
1/3 cup golden raisins

Steps:

  • In tightly covered container, shake vinaigrette ingredients.
  • Divide salad greens among 6 plates. Top each with pears, peanuts and raisins. Drizzle with vinaigrette. Serve immediately.

2-1/2 cups frozen peas (about 10 ounces), thawed
1 cup dry roasted peanuts
1 cup chopped celery
6 bacon strips, cooked and crumbled
1/4 cup chopped red onion
1/2 cup mayonnaise
1/4 cup prepared zesty Italian salad dressing

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, mix mayonnaise and salad dressing; stir into salad. Refrigerate, covered, until serving.

1 (8 ounce) can crushed pineapple
1 cup peeled shredded carrot
1/2 cup chopped apple
1/2 cup chopped pear
1/2 cup peanuts
1/4 cup raisins
1/3 cup low-fat vanilla yogurt (or use your favorite)
2 tablespoons peanut butter

Steps:

  • In a medium bowl, stir together the first 6 ingredients.
  • In another bowl, blend together the yogurt and peanut butter.
  • Add the yogurt "dressing" to the salad just before serving and stir to coat.
